Berry Pie - tips from experienced chefs
How to freeze berries
Before freezing the berries must be carefully picked and rinsed. Let the water run off and put on a sheet of paper in a single layer, put in the freezer. As soon as they froze, pour into a container or bag and leave in the refrigerator. The storage container should be tightly closed so that the berries do not absorb smells, such as meat or fish. Different types of berries are stored separately.
Strawberries: spread out in one layer, sprinkle with sugar. Collect in a container and close.
Raspberry: dark varieties are taken for freezing. Crimson beetle larvae can be destroyed by immersing the peeled berries for a few minutes in saline solution, then removing the floating larvae and rinsing twice in a colander under running water. Drain the raspberries and sprinkle with sugar to freeze in one layer.
Currant: put washed and sifted currants in a bag or make mashed potatoes with sugar. Store in small containers in the freezer.
Gooseberry: remove the stem and seed. Rinse and place in a plastic bag.
Cranberries: This berry is the most unpretentious, it is well kept until the frost and freezer. Whole berries do not lose their beneficial properties until the spring, in this respect, it can only compete with lingonberries, which is stored without freezing until the spring.
Freezer capacity is used more efficiently if storage containers are rectangular. You can also remove the frozen briquettes from the container and store them, packed in several plastic bags.
