The taste of such an appetizing vegetable snack is very bright, it is prepared for a short time and perfectly nourishes the body. For 1 serving of vegetable fan, you will need:
- 1 large eggplant;
- 2-3 tomatoes;
- 100 g of hard cheese;
- 0.5 tsp. salts;
- 2-3 pinches of dried basil;
- 10 ml of vegetable oil.
If you are going to cook several servings for relatives or friends, respectively, multiply the indicated product by the number of people. Eggplant pick ripe and dense.
Cut the eggplant, washed in water, flat, lightly, without cutting to the end, into plates. The tail while cutting the vegetable is not necessary. Rub each of the plates with salt, trying to completely cover the flesh, and set aside for 5-6 minutes. Thanks to this procedure, eggplant will release all its bitterness with salt.
While the vegetable is settling - take up other products: hard cheese is also cut into plates, and washed tomatoes - into slices, cutting out of them in the process of cutting green hearts.
You should not use soft cheese of the following type for the recipe: mozzarella, feta, etc., as it melts and burns when baking, releasing excess liquid. Hard cheese is required: Dutch, Russian, Okhtyrsky.
Wash the eggplant in water, washing it off with salt and bitterness, and then put it into a mold, greased with vegetable oil, gently pressing and opening the vegetable in the form of a fan.
Place slices of tomatoes in the cuts. You should not thrust them deeply - they should be practically on the surface.
Then put slices of hard cheese in the cuts on the tomatoes.
Pour over the remaining vegetable oil and sprinkle with salt and dried basil.
Send the form with a vegetable fan to the oven for 20-25 minutes at 180 ° C and watch the surface, as it should not be burnt. Perfectly prepared fan - with baked cheese, soft eggplant and tomatoes, from which comes a stunning aroma.
