Bean lobio is a traditional Georgian dish.

It can be served as a separate dish, as well as a cold or hot snack, a side dish and a base for sandwiches.

White Bean Lobio - Basic Cooking Principles

For the preparation of this dish using the most simple products that can be purchased at any store.

“Lobio” in Georgian means “bean”. This is the name of the dishes made from these legumes. They differ in the type of beans, which are used for cooking, its size, color, degree of cooking, as well as the addition of various spices and herbs.

Traditional lobio is made from red beans. But no less tasty dish is obtained from white or spotty. Often use several varieties of legumes, but in this case they are boiled separately.

To cook the beans faster, it is soaked in water for at least six hours. It is recommended to replace the water several times. When the beans swell, it is sorted out.

Then swollen beans poured with fresh water, and boiled over low heat for one and a half hours. In this case, it is necessary to ensure that the liquid does not boil off completely, so that the beans do not burn.

In addition to the beans you need onions and carrots. Vegetables are peeled, minced and fried until soft. Then they are transferred to the pot with the beans.

To make the dish spicy and spicy, it is added to the minced hot pepper and garlic.

Lobio is stirred, if necessary, topped up with some drinking water, seasoned with spices, salted and stewed over low heat for an hour.

half a kilogram of white beans;

Method of preparation

1. Wash basil and tomatoes. Wash the beans and soak in the evening. Peel the garlic and bulbs. In the morning, fold the beans into a colander and rinse again. Put in a saucepan, cover with water and boil until soft.

2. Put the peeled walnut kernels into a blender container and grind. In a minute you should have a fine crumb. Put it aside for a while.

3. Chop the whole onion not too finely, because the onion slices should be felt in the finished dish. Heat the vegetable oil in a deep frying pan. Fry the onions in it until transparent.

4. Crumble the tomatoes into pieces and add them to the fried onions. Then send the boiled beans and chopped nuts.

5. Season with ground red pepper and salt. Add finely chopped basil and cilantro. Squeeze the chives through the garlic press. Pour into the pan half a glass of broth from the beans. Keep on low heat for ten minutes.

Recipe 2. White beans lobio with vegetables

200 g white beans;

Method of preparation

a glass of white beans;



spring onions;

three cloves of garlic;

hazelnut - 100 g;

a third cup of vegetable oil;

300 g dried mushrooms.

Method of preparation

1. Sort the beans and rinse. Soak in cold water and leave for a couple of hours. Then change the water and send to boil for minimum heat for about an hour and a half. Beans should not be completely boiled soft. Salt beans at the end.

2. Rinse the mushrooms, cover with warm water and leave for a couple of hours. Boil the pre-soaked mushrooms until half cooked in lightly salted water. Throw back on a sieve and fry in hot oil with onions.

3. Drain the water from the beans, add to it fried with onions mushrooms and crushed garlic. Put the nuts in the bowl of the blender and smash it all into a crumb. Rinse the cilantro, shake and crumble. Chopped nuts and finely chopped cilantro, add to the rest of the ingredients.

4. Pour in vegetable oil. Add a pinch of turmeric, red, black pepper and coriander. Mix well.

Recipe 4. White beans lobio in tomato sauce


half a kilo of white beans;

250 ml of tomato juice;

200 g of sweet pepper;

two bay leaves;

two cloves of garlic;


onions - 100 g;

black pepper;

10 g basil;

100 g carrots;

vegetable oil;

100 g cilantro.

Method of preparation

1. Sort out the beans, put them in a colander and rinse. Soak in the water in the evening. The next day, throw the beans in a colander and wash it again. Boil until soft. Approximately a quarter of an hour before the end of cooking salt and add the leaves of laurel.

white beans - 250 g;

ten celery stalks;

a large bunch of parsley;

fresh tomatoes - 130 g;

cilantro leaves - 50 g;

garlic - four teeth;

celery (leaves) - 60 g;

red pepper - a small piece;

four onions;

lilac basil - 50 g.

Method of preparation

1. Reassemble the beans, removing all the split and spoiled grains. Rinse the beans, changing the water several times. Then fill with water and leave for about eight hours.

2. After the allotted time, wash the beans once again and rinse well again with cold water. Place the container with the beans on the stove and bring to boil, not covering the lid.

3. As soon as the contents of the pan begin to boil, put the celery stalk, lavrushka, and the whole bulb, and then wrap the fire to the minimum to prevent boiling. Stir with a wooden spatula from time to time to prevent the beans from burning.

4. Cut the remaining onion into small pieces. Chop garlic and grind in a mortar with coarse salt and hot pepper to a slurry.

5. At the end, remove the celery stalk and bulb. Next, gently stir the broth, add the chopped onion and about half the garlic mixture.

6. Continuing to stir the broth, bring the beans to full softness. Remove the saucepan from the stove and add fresh tomato tomato mash, adding the remaining greens to it.

250 grams of white beans;
