Salmon fish, not so long ago considered a rare delicacy, are now confidently located in the everyday menu.

Even without trying to invent fantastic recipes, many housewives began to cook quite familiar dishes from the pink salmon and, I must say, did not lose.

Still, it was not for nothing that in Soviet times, in restaurants of the first class, salmon served as a separate category, and a roasted pink salmon was perhaps the most affordable dish of them.

Pink salmon baked in the oven with cheese - general principles of cooking

• Pink salmon in the oven can be baked on a pan or broiler, in pots or packed in foil.

• For baking, use fish fillets, which are prepared or prepared independently. To separate the fillets, the whole carcass of pink salmon is well thawed. Then they cut off all the fins from the fish and take out the insides, be sure to scrape the skin from the scales with a knife. The carcass treated in this way is washed with water and wiped dry. The dried pink salmon is put on a cutting board and cut along the ridge, starting from the side of the head. In the same way, the second fillet is also separated, only the fish is turned over onto a ridge. Harvested fillets are carefully inspected for the presence of small bones and removed. Then the fish meat is cut according to the recipe.

• To prepare fish steaks, cut the carcass cut across, in chunks about 2 cm thick.

• When baking in the oven, pink salmon is often dryish and therefore vegetables are often added to dishes with such fish.

• To prevent moisture from evaporating when baking, fish dishes are sprinkled with grated cheese of any solid kind. Under the influence of temperature, it melts and forms a dense crust, it is she who keeps all the juice in fish pieces.

Ingredients:

• two small carcasses of pink salmon;

• 100 ml of non-aromatic vegetable oil;

• fresh mushrooms (champignons or oyster mushrooms) - 2 gr .; • one and a half glasses of 15% sour cream;

• a spoon of wheat flour;

• two large onions;

• hard sharp cheese - 100 gr .;

• two spoons of bread crumbs (white).

Cooking Method:

1. Cut the fillet from the processed carcasses and place it on a greased metal baking tray. Put the fish in a heated oven and bake until half cooked at 180 degrees.

2. Peel the champignon caps, rinse and cut into small slices.

3. Place the chopped mushrooms in a thick-walled pot or pan, add the finely chopped onions, pour in 0.25 cups of water and put the stew on low heat until tender. Be sure to salt and slightly pepper mushrooms.

4. Mix sour cream with flour and lightly salt it.

5. Rub cheese on a large grater, add crackers and mix thoroughly.

6. Put the stewed mushrooms in a uniform layer on the fish fillet and fill with cream sauce.

7. Top with plenty of cheese chips, mixed with breadcrumbs, moisten well with vegetable oil and put in a heated oven.

8. When the cheese layer is melted deliciously and covered with a crust, the dish will be ready.

Pink salmon baked in the oven with cheese - “Surprise”

Ingredients:

• 1.2 kg salmon fillet;

• two boiled eggs;

• 70 gr. cheese;

• 40 gr. butter, sweet cream;

• three medium onions;

• a glass of drinking water;

• one and a half large spoons of vinegar 9%;

• two spoons of finely chopped fresh parsley;

• a teaspoon of refined oil.

Cooking Method:

1. Cut fish fillets into arbitrary slices.

2. Mix the water with vegetable oil, add salt, table vinegar and freshly ground pepper. Pour the mixture of fish pieces in an enamel bowl. Cover and clean to marinate for half an hour in the cold.

3. Cut the eggs into small pieces and chop the onion as finely as possible.

4. Melt half the butter in a frying pan with a little heat and put the onion in it. When the pieces become transparent and soften well, move the onion to a separate bowl and cool well. 5. Then add chopped eggs, parsley and mix immediately.

6. Cut the foil into rectangular sheets. Take one such sheet, grease it with a piece of butter and put one piece of fillet. Be sure to blot the fish from the remains of the marinade with a disposable towel.

7. Sprinkle a piece of fish with hard-grained cheese, and put mince from onions and eggs on it. Sprinkle cheese again and place another piece of fillet on it.

8. Roll the foil into an envelope and place it on a baking sheet. Pack the remaining fish in the same way.

9. Bake the dish for 20 minutes in the oven, at a heating temperature of 180 degrees.

10. Then carefully, so as not to burn yourself, unfold the foil and, gently prying the fish with a wide spatula, place it on the plates. Serve boiled potatoes or rice as a side dish.

Ingredients:

• kilogram of fresh frozen pink salmon;

• one glass of fat sour cream;

• white onion - 400 gr .;

• 150-200 gr. “Kostroma” cheese;

• wheat bread crumbs;

• unsalted butter;

• one chicken egg;

• A spoonful of pounded pepper in a mortar;

• ready dumplings dough - a small piece.

Cooking Method:

1. Cut the treated, washed fish into portions of any shape and size and dry each well with a towel.

2. At the bottom of the pots, put a little butter and one spoon of sour cream.

3. Put a few pieces of fish on top. The amount depends on the calculation for one portion.

4. Sprinkle with ground pepper, lightly salt and put the grated cheese on top, but do not put too much of it.

5. Put the cheese layer on top with thin onion rings.

6. The remaining sour cream mixed with cold melted butter (about 70 grams.). Add crackers and the remaining grated cheese.

7. In each filled pot pour at least three tablespoons of water. Then pour the sour cream sauce over the contents of the containers and close the pots on top with dough lids.

8. Grease the "lids" with a beaten egg and lightly sprinkle them with cheese. 9. Put the pots on the wire rack in the preheated oven and bake. To make the fish bake well, it is enough to hold the pots at 200 degrees for 20 minutes.

Pink salmon, baked in the oven with cheese, with garlic-tomato dressing

Ingredients:

• pink salmon fillet - 1.2 kg;

• one processed cheese;

• five medium tomatoes;

• garlic;

• 150 gr. 72% mayonnaise;

• two bulbs;

• 200 gr. non-hard hard cheese;

• refined vegetable oil - 4 tbsp. l

Cooking Method:

1. In thawed fillets, clean the skin of residual scales with a knife or a special scraper. Wash the fish, dry it with a towel and put it on the cutting board with skin down. Examine the flesh for the presence of small bones and remove, if any, with tweezers. Cut the fish into pieces, determine the size yourself.

2. Put in a bowl, sprinkle with salt, pepper and mix, so that the pieces are well salted. Set the bowl aside for 20 minutes.

3. In another deep bowl, rub the melted cheese and combine it with tomatoes, cut into centimeter cubes. Slightly salt and squeeze garlic. Add a small pinch of ground pepper and mix well until smooth with a spoon.

4. Liberally grease the broiler with vegetable oil and put on it pieces of fish, skin down.

5. On each piece, carefully lay out the onion cut into quarters of rings and set for 20 minutes. in the oven.

6. Then take the baking sheet, put on the baked onion garlic dressing from melted cheese with tomatoes and put back to bake.

7. After 10 minutes, open the door, sprinkle the dish with cheese and return the pan back. After 5 minutes, when the cheese layer is melted, turn off the oven, and do not reach the baking sheet for another five minutes.

A simple recipe for pink salmon baked in the oven with cheese and mayonnaise

Ingredients:

• a pound of pink salmon (fillet);

• 100 gr. 45% mayonnaise;

• hard sharp cheese - 200 gr .;

• two large onions;

• vegetable oil for lubrication of the roaster.

Cooking Method:

1. Gently cut the skin off the thawed fillet. Then wash and blot dry with a towel. Cut the flesh into small pieces. 2. Grease the prepared small brazier with oil and spread the fish over it. Spread the pieces tightly to each other so that there are no gaps left.

3. Lightly salt the fish layer, sprinkle with ground pepper and wait 10 minutes.

4. Then, from the top, gently lay out the thin half-rings of the onion and brush it with a not too thick layer of mayonnaise.

5. On the mayonnaise layer, rub all the cheese and put the roaster in the oven.

6. After half an hour, remove, carefully with a spatula, divide the dish into portions and place them on a wide dish.

7. For a side dish, boil rice or serve mashed potatoes.

Ingredients:

• large carcass of fresh-frozen pink salmon;

• one big tomato;

• eight potatoes;

• two bulbs;

• two eggs;

• one large carrot;

• three spoons of 15% sour cream;

• garlic;

• half a large lemon;

• low-fat mayonnaise - to taste;

• 30 gr. thick, better frozen, cream;

• refined sunflower oil;

• to taste - spices “For fish dishes”;

• 150 gr. non-sharp cheese, hard.

Cooking Method:

1. Scrape off the defrosted carcass with scales. Remove the entrails, cut off the fins and chop off the head. Rinse with water, and, after wiping, cut into 2 cm thick steaks.

2. Arrange the fish pieces on a large chopping board. Sprinkle with spices and salt, sprinkle with fresh lemon juice and leave. Do not use a lot of spices, so as not to kill the main taste of the dish.

3. Shred the onion in small semi-rings and lightly fry, literally 2 minutes, in vegetable oil.

4. Add coarsely grated carrot and continue frying vegetables for another 3 minutes. Do not fry much, they will reach the readiness in the oven.

5. Slice the potatoes into thin rings. The thinner the pieces, the better they will bake.

6. Cover the roaster with a double layer of foil and be sure to grease it, not sparing it, with vegetable oil.

7. Place fish steaks in the grill, leaving gaps between them.

8. Between the pieces of fish, spread out half the potatoes in a thin layer and lightly salt them. Smear the potato layer with mayonnaise and put onion fried with carrots on it. Do not cover the fish with vegetables, but put a thin circle of tomato on it. 9. Spread the remaining potatoes over the roasted vegetables.

10. Put sour cream in a bowl, add eggs, add salt to your taste, and whisk well. Squeeze the garlic here and rub it in large cheese, mix.

11. Pour the steaks in a rich sauce, and spread the remaining sauce evenly over the potato layer.

12. Close the broiler with sheet foil and bake. After half an hour, remove and remove the sheet of foil. Sprinkle the dish with finely chopped fresh dill, and bring to readiness, without changing the heating of the oven.

• Pink salmon, prepared according to any recipe, can be seasoned with your favorite spices that are suitable for fish dishes. However, do not forget that their excessive amount can kill the taste of the fish itself.

• Thaw carcasses only in air. An excessively dryish fish, when thawed in water, will lose its juice, which is not enough for it.

• If the processed cheese is not well rubbed, moisten the surface with water or lightly freeze the cheese in the freezer.

• Be sure to grease the baking sheet or roasting pan with grease or cover it with foil, which can also be greased with oil. This will help avoid burning and sticking of the fish.
