This effect creates solanine - a substance that can be derived using salt and water. Starting to prepare an eggplant dish, first of all, peel the fruits (in the case of young fruits of this stage can be avoided), cut into pieces, sprinkle them with salt and leave for 30-40 minutes, then rinse with running water.
