Do you like pancakes? You know, these American pancakes are very well established in our family menu. I cook them often enough and I love to try new tastes. We have already tried pancakes with pumpkin, apples, chocolate, it was the turn to try pancakes with cornmeal.
Besides the fact that they are bright in spring, they are also tasty. The structure of the dough is not usual, but it is no less tasty. The slide of pancakes disappeared from the table in a matter of minutes. And this, I tell you, an excellent result means that the recipe was a success. Inspired by this success, I hasten to share with you a recipe.
Ingredients:
Kefir - 1 tbsp .;
Eggs - 2 pcs .;
Sugar - 600 g;
Baking Powder - 10 g;
Wheat flour - 100 g;
Corn flour - 120 g;
Vegetable oil - 15 ml.
Recipe:
To make a magnificent dough, combine eggs and sugar in a bowl. Beat them using a mixer or whisk.
Now you can add kefir and two kinds of flour to the dough. Do not forget baking powder. What to do if baking powder is over in the house? Replace it with soda. If a baking powder requires a teaspoon, then half a teaspoon will be enough soda. It does not need to be quenched separately, as fermented milk products do a good job with it.
Stir the dough thoroughly so that there are no lumps and leave for 5-10 minutes. The dough should rest. Cornmeal will swell a little, and wheat flour will highlight gluten and your pancakes will be a great success.
In a frying pan, preheat just a bit of vegetable oil, add the rest to the dough. We’ll scoop the dough with a small ladle and pour it into the pan. Fry the second and subsequent pancakes in a dry frying pan.
After 2-3 minutes, flip the pancakes over to the other side and fry for another 2-3 minutes. If you have a large frying pan, grill several pancakes at once.
We make ready pancakes with a pile, you can put a piece of butter on top. Any jam or jam, and maybe sour cream or condensed milk, is just the perfect complement to this baking.
