Cooking Features

The degree of difficulty of making puff pastries with cottage cheese filler depends on what kind of dough you use. From the purchased semi-finished product you can cook pastries in literally half an hour. If you decide to make the dough for the puffs yourself, it can take half a day. Regardless of which recipe you use to make puff pastry filled with curd, you will need to know a few things.

  • The use of purchased puff pastry greatly simplifies the baking process, but manufacturers rarely add butter to such semi-finished products, preferring to replace it with cheaper margarine, which is not considered a useful product. It is not always possible to find out what quality other ingredients were. Homemade dough is almost always more tasty and healthy.
  • If you decide to make the dough for puffs with your own hands, knead it in more than the recipe requires. You can freeze excess dough and use it later, thereby significantly reducing the time to prepare the dessert the next time.
  • For puffs with curd filling, you can use both yeast and yeast-free puff. The dough mixed with yeast contains less fat than fresh and rises better, but it has a specific flavor and exfoliates worse. More often, for the preparation of puff pastries, yeast-free puff pastry is used.
  • The better the products used to make the flour base and the filling, the tastier the finished products will be. Puff pastry flour is used in top grade, a second-rate product gives baking a grayish color and an unpleasant aftertaste. Butter is used fat, as it is considered more useful. For the filling, it is best to take natural cottage cheese, and not a cottage cheese product containing significant amounts of vegetable fat.
  • If you are preparing the dough yourself, be sure to sift the flour to save it from small litter and saturate it with oxygen. Follow the recommendations regarding the temperature of the products used. Do not reduce the multiplicity of rolling, otherwise the dough will come out not too layered.
  • To obtain a filling with a delicate texture, it is recommended to wipe the curd with a sieve before use.
  • To make the puffs rosy, they are smeared with egg or yolk before being placed in the oven. You can also sprinkle buns with poppy seeds, flax seeds or sesame seeds. If you forgot to smear the patties with an egg, and they came out pale, you can sprinkle them with powdered sugar or its mixture with ground cinnamon before serving - this sprinkling is not suitable only for snack puffs with unsweetened filling.
  • To make the patties come out lush and layered, they are placed in an oven that has already been heated to 200-220 degrees and baked at this temperature for 15-20 minutes. It is not recommended to open the oven door at this time.

When preparing the filling for cottage cheese puffs, the main ingredient can be supplemented with fresh or dried fruits, nuts, herbs and other products. The composition of the filling can affect the cooking technology and the products themselves. To avoid mistakes and get the expected result, you must follow the recommendations that accompany the selected recipe.
