One of the popular dishes that is often ordered in a cafe and prepared at home is Caesar salad. A simple set of ingredients: chicken breast, salad, cheese and crackers - allows you to get a unique taste. Wanting to give it a new shade, some are trying to change the composition of the snack, including shrimp or other seafood instead of poultry meat. But it has a much stronger effect on the organoleptic properties of the sauce. Caesar salad dressing is very rarely prepared according to the classic recipe, its many variations are much more often used. The taste of the usual snack is transformed, and she never gets bored.

Cooking Features

Recipes for dressing "Caesar" salad are so little similar to each other, that the general technology of its preparation is not. However, you can list a few points that need to be taken into account regardless of the choice of sauce.

  • Olive oil is most often a part of a dressing. This product has a unique taste and smell, its useful properties are also unique. Replacing it with another type of vegetable oil is highly undesirable.
  • Oil quality is critical. Preference should be given to the product obtained by cold pressing. The fresher it is, the better. Starchy butter will not add any taste or flavor to the snack, it will make it irreparably spoiled.
  • Sauces containing anchovies or other seafood are more suitable for Caesar salad with shrimps. The remaining refills are universal.
  • According to the traditional recipe, Caesar salad dressing is made from slightly boiled eggs. To do this, the shell is pierced from the blunt side, then the eggs are dipped in boiling water for just a few seconds and immediately removed with a skimmer. If the eggs digest, dressing them out will not work.
  • A classic dressing for Caesar includes Worcester sauce. In other versions of the sauce for this dish, too, often include hot ingredients. This does not mean that the sauce should be spicy. Burning ingredients are added a little so that they give a spicy note to the gas station, but they do not beat the taste of the main ingredients.
  • The sauce for Caesar salad should be thick enough. If the dressing turned out too thin for you, you can improve its consistency by adding yolk of boiled eggs or finely grated cheese.

Classic Caesar salad dressing recipe

Composition:

  • chicken egg - 2 pcs .;
  • olive oil - 100 ml;
  • Worcestershire sauce - 10 ml;
  • garlic - 2 cloves;
  • lemon - 0, 5 pcs .;
  • salt, pepper - to taste.

Method of preparation:

  • Wash eggs thoroughly, pierce the shell from the blunt side, boil the eggs in boiling water for 30-40 seconds, not longer. If the quality of the eggs you are in doubt, it is better to choose a different recipe for the sauce, for which the eggs need to cook for longer.
  • Free the eggs from the shell, pour them into a bowl, carefully rub with a fork.
  • Pass the garlic through the press, add to the egg mass, stir until smooth.
  • From half a lemon squeeze the juice, pour it into the bowl with the rest of the ingredients.
  • Pour olive oil there.
  • Add the Worcester sauce, salt and black pepper. Beat with a whisk or mixer to turn the sauce into a thick fluffy mass.

Given that eggs for the traditional Caesar sauce are almost not thermally processed, and Worcester sauce is not always available, this dressing option is not among the most popular. Often used sauce prepared on the basis of boiled hard-boiled eggs, or rather their yolks, and mustard.

Salad "Caesar" from boiled yolks with mustard

Composition:

  • chicken egg - 2-3 pcs .;
  • table mustard - 10 ml;
  • lemon juice - 50 ml;
  • olive oil - 120 ml;
  • spices - to taste.

Method of preparation:

  • Two hard-boiled or three small chicken eggs. Cool, peel, cut in half. Remove the yolks. Proteins for cooking dressing will not be required.
  • Place the yolks in a bowl and carefully mash with a fork.
  • Add mustard, lemon juice. Spread until smooth.
  • Gradually add the butter, whipping the sauce with a mixer or a whisk.
  • Add spices, whisk again.

This variant of Caesar salad dressing is the simplest and most popular.

Yogurt-based Caesar salad dressing

Composition:

  • unsweetened yogurt - 150 ml;
  • hard cheese - 30 g;
  • olive oil - 60 ml;
  • lemon - 0, 5 pcs .;
  • garlic - 2 cloves;
  • table mustard - 5 ml;
  • salt, black pepper powder - to taste.

Method of preparation:

  • Finely grate the cheese.
  • Crush the garlic with the flat side of the knife blade, cover with oil and leave it for at least 30 minutes. The longer the garlic cloves remain in the oil, the more aromatic the salad dressing will be.
  • Squeeze juice out of a lemon, should turn out around a tablespoon.
  • Cheese finely grate.
  • Remove the garlic from the oil.
  • Put salt and spices in butter, add lemon juice, add mustard, stir.
  • Combine the resulting mixture with yogurt, whisk well. For this it is better to use a blender or mixer.
  • Add chopped cheese, whisk again.

If the sauce seemed too thin, you can increase the amount of cheese.

Caesar salad dressing based on mayonnaise

Composition:

  • mayonnaise (homemade is better) - 0, 2 l;
  • lemon - 0, 5 pcs .;
  • garlic - 2 cloves;
  • soy sauce - 20 ml;
  • red and black ground pepper, Provencal herbs - to taste.

Method of preparation:

  • Crush garlic with a special press, mix with mayonnaise.
  • Squeeze the juice from half a lemon into this mixture, pour in soy sauce, add spices and dried Provencal herbs.
  • Whip the sauce with a whisk.

It is simpler to prepare such a sauce than all other options for refueling, but it is not among the most useful ones, therefore it is not so often used.

Caesar salad dressing with anchovies

Composition:

  • anchovy fillets - 100 g;
  • olive oil - 180 ml;
  • hard cheese - 90 g;
  • capers - 50 g;
  • garlic - 3 cloves;
  • table mustard - 5 ml;
  • lemon - 1 pc.

Method of preparation:

  • Squeeze juice out of lemon, grate zest from it. Do not forget to wash and dry the fruit.
  • Chop garlic and mash with a pinch of salt.
  • Separate the anchovy fillets, cut them.
  • Fold anchovy pieces, garlic, mustard into the blender bowl. Add lemon juice and zest. Pour capers.
  • Grind until smooth.
  • Fill with oil and whisk.
  • Finely rub the cheese, add to the sauce and whisk it again.

This refueling option is ideal for a Caesar salad made from shrimp.

Salad for Caesar salad based on sour cream

Composition:

  • sour cream - 0, 2 l;
  • gherkins - 60 g;
  • garlic - 2 cloves;
  • red ground pepper - 5 g;
  • honey - 2 ml;
  • spicy herbs - 5 g.

Method of preparation:

  • Gherkins cut into small pieces.
  • Chop garlic with a special press.
  • Melt the honey to a liquid state.
  • Combine spices, garlic, gherkins, honey in a bowl.
  • Add sour cream, whisk with a mixer or blender.

The preparation of this option of refueling will not cause difficulties even for a novice chef. At the same time, the salad with it is tasty and healthy.

Caesar salad dressing with nuts

Composition:

  • walnut kernels - 50 g;
  • white yogurt - 0, 25 l;
  • soy sauce - 40 ml;
  • lemon juice - 20 ml;
  • garlic - 3 cloves.

Method of preparation:

  • Pound the kernels of walnuts in a mortar.
  • Crush garlic with a hand press.
  • Mix nuts with garlic, add lemon juice to them, grind to obtain a homogeneous mass.
  • Combine the resulting mass with yogurt, whisk with a mixer.

This dressing will give the Caesar salad a subtle nutty note, making it taste even more refined.

Caesar salad dressing with olives

Composition:

  • chicken egg - 2 pcs .;
  • mayonnaise - 100 ml;
  • sour cream - 100 ml;
  • balsamic vinegar - 20 ml;
  • pitted olives - 100 g;
  • salt, pepper - to taste.

Method of preparation:

  • Mix sour cream with mayonnaise.
  • Boil eggs, peel, remove yolks from them.
  • Pound boiled yolks with a fork, adding salt, pepper and balsamic vinegar to them.
  • Add sour cream mixed with mayonnaise to the resulting mixture. Beat the mixture until a homogeneous consistency.
  • Cut the olives into thin ringlets, add to the sauce and mix well.

If you want to add a more savory taste to the dressing, you can add a clove of garlic that has been passed through a press and a small spoon of table mustard. These ingredients are introduced by rubbing other foods with boiled yolks.

Caesar salad dressing can be made from olive oil, yogurt, sour cream, mayonnaise. To give it a piquant flavor, garlic, pepper, mustard, and Worcester sauce are put into it. Unusual notes of sauce add capers, olives, gherkins, anchovies. Dressing can significantly change the taste of the usual snack.
