Savoy cabbage gratin is a vegetarian recipe for a tasty and healthy meat-free dish that can be cooked in fasting, as no animal products are used in its preparation. Savoy cabbage is a close relative of the white cabbage, but it surpasses the “relative” in taste, so the dishes with this vegetable are always successful.
If for some reason you do not like soy milk, then replace it with plain water.

Ingredients for Savory Cabbage Gratin
- 200 g savoy cabbage;
- 130 g arborio rice;
- 100 g tomatoes;
- 120 g of bell pepper;
- 150 g onions;
- 100 g carrots;
- 25 grams of wheat flour;
- 200 ml of soy milk;
- 50 g of lean mayonnaise;
- salt, pepper, olive oil, chili pepper to taste.
Method of cooking vegetarian gratin from savoy cabbage
Remove from the head of damaged leaves. By the way, I advise you to leave the top, largest leaves of cabbage for cooking stuffed cabbage - you can wrap a lot of stuffing in such leaves! We cut cabbage leaves into strips 1 cm wide or a little thinner.
In a saucepan, heat the water to a boil, add salt. We throw Savoy cabbage into boiling water, blanch it for 2-3 minutes, put it on a sieve. In such a short time, the heat treatment of chlorophyll in the leaves will remain, the cabbage will remain bright green.
Put the chopped vegetables in a pan, smeared with olive oil: first chopped onions, then grated carrot, diced tomatoes and sweet Bulgarian pepper. Stew vegetables on moderate heat for 15 minutes. To taste, you can add chili pepper, if you like spicy food.
Boil the arborio rice until done. Mix boiled rice with vegetables, sprinkle with ground pepper, salt to taste, mix thoroughly.
Before cooking, thoroughly wash the rice until the water is clear, pour water in a 1 to 1 ratio, cook for 10-12 minutes without salt.
Pour wheat flour into a bowl, add a pinch of fine salt, pour soy milk. Mix the ingredients with a whisk so that no flour lumps remain.
We grease the refractory form with oil, put half of blanched Savoy cabbage on the bottom of the form. On cabbage leaves put half a mixture of vegetables and rice.
Then put the remaining cabbage, press the ingredients with your hand or a spoon to make an even layer.
Spread the remaining vegetables with rice, distribute evenly, make frequent punctures with a stick or knife, pour out the soy dough.
We grease gratin with mayonnaise. Meanwhile, heat the oven to a temperature of 175 degrees Celsius.
Put the form with gratin on the middle level of the oven, cook 40 minutes until golden brown.
Serving savory cabbage gratin on a table hot or cold, tasty anyway. Enjoy your meal!
