  • Dough products should not be cold. It is enough to warm them to room temperature. To do this, it is enough to put them out of the refrigerator in advance. If time is short, you can reheat the kefir in a water bath. This should be done carefully, since with intensive heating the fermented milk product can be divided into cottage cheese and whey, becoming unsuitable for preparing dough.
  • The dough for fritters should resemble thick sour cream in consistency. Then it will not spread on the pan, but will be quickly and well cooked.
  • Fritters are fried in a well-heated pan, greased with butter. Spread the dough with a spoon, moistening it with water if necessary. Pancakes are cooked under the lid until they are fluffy and covered with holes on the upper side. After that, they need to turn and fry on the other side.
