This wild berry contains a lot of vitamins and other elements necessary for the human body. If you managed to collect it in large quantities, you should think about how to prepare it for the winter. A good choice would be blueberries in their own juice. It is prepared without sugar or with a relatively small amount of it, the preparation technology of this dessert allows you to do without the long cooking of berries. As a result, the blueberry delicacy remains tasty and useful, they can be treated even to those who follow the figure.

Cooking Features

The process of harvesting blueberries in its own juice for the winter is not complicated, but it still requires knowledge of a few points.

  • Wash blueberries should be careful not to damage the berries and not allow valuable juice to flow out of them. One of the ways is to collect pure water in the basin, lower the berry into it and rinse it in small portions. So that you do not have to catch the berries individually, you can immerse them in water in a sieve or a colander.
  • After washing, the berry should be dried so that no water gets from the tap. Bilberry dries faster if it is poured on a towel that absorbs moisture well.
  • The technology of cooking blueberries in its own juice is based on the ability of the berry to release juice during prolonged heat treatment. Therefore, most often the berries are placed in jars and sterilized in them until they are completely covered with juice. Sterilize conveniently in banks of small volume, up to 1 l, of the same size You can do without sterilization, if you then blueberries in a slow cooker, and then decompose them into prepared banks. In a slow cooker, it is better to cook the berry without sugar, because when cooking blueberries with sugar, sweet foam can form, which “sticks” the cover of the unit. When sugar is added, the berries are boiled with the lid open or in a small amount, filling the bowl of the multicooker with them by no more than half.
  • Regardless of how blueberries are prepared in their own juice for the winter, the banks for it must be washed with soda and sterilized. The lids are also sterilized, usually by boiling. Close blueberries need metal lids to ensure tightness. Plastic with this task can not cope.

The classic recipe for blueberries in their own juice without sugar

The composition (1, 5 l):

  • blueberries - 2-2, 5 kg.

Method of preparation:

  • Enumerate the blueberries, rinse, removing sticky leaves and another litter. Pour the berries on a towel and wait for them to dry.
  • Wash with soda and sterilize the jars. Boil metal lids suitable for them.
  • Fill jars with blueberries, cover with prepared lids. All the berries at this stage will not enter - you will report it later.
  • Put a towel in a large pot. Put a jar of berries on it.
  • Pour water into the pan - its level should reach the hangers of the cans.
  • Put the pan on the stove, bring the water to a boil over low heat.
  • Sterilize until blueberries settle. Lightly squeeze the berries with a spoon, report a new batch of berries.
  • Wait for the berries to sit again. Again tamp them down and report the berries.
  • The procedure should be repeated until the berries run out.
  • After that, continue sterilizing blueberry jars for 10-20 minutes depending on their volume.
  • Carefully, in order not to burn yourself and not to move the lids, remove the jars from the pan, roll them up.
  • Turn over the jars, wrap a blanket, leave to cool in this form.

Blueberries in their own juice, closed according to this recipe, should be stored in a cool place, ideally in the refrigerator.

Blueberries in their own juice without sterilization (in a multi-cooker)

The composition (1, 5 l):

  • blueberries - 2 kg;
  • water - 0, 36 l.

Method of preparation:

  • Pick and wash the blueberries.
  • Place the berry in the multicooker bowl.
  • Pour in two multi-glasses of water.
  • Turn on the unit by selecting the “Quenching” program, setting the timer to 40 minutes.
  • Spread the berries in prepared jars, pour blueberry juice from the bottom of the multicooker.
  • Hermetically seal the cans, turn them over, allow them to cool in the conditions of a steam bath.

Store the blank made according to this recipe in the refrigerator or cellar.

Blueberries in their own juice with sugar

The composition (1, 5 l):

  • blueberries - 2 kg;
  • citric acid - 2 g;
  • sugar - 0, 2 kg.

Method of preparation:

  • Sterilize the jars.
  • At the bottom of each can add some citric acid and a tablespoon of sugar.
  • Fill the jars with prepared blueberries, each layer sprinkled with sugar.
  • Put a towel on the bottom of the pot, put the jars in it, with their covers covered.
  • Sterilize until berries have settled. Slightly touch them, dosypite remaining blueberries. Continue to sterilize until the blueberries are almost completely covered with juice.
  • Cool the jars in a steam bath.

It is possible to store blueberries, preserved in its own juice with sugar and citric acid, at room temperature.
