Chokeberry, or black chokeberry, is very similar in appearance to mountain ash, but has black or black-purple fruits. In scientific circles, it has a very specific name - chokeberry black chokeberry.

This vitamin has other beneficial properties. It helps the rapid restoration of bone and muscle tissue, improves the functioning of the thyroid gland, adrenal glands, improves mental performance and immunity in viral diseases.

But it is necessary to take into account the fact that this vitamin is destroyed during heat treatment, therefore, making preparations for the winter from a black chokeberry, you should not expose the berry to long boiling.

Black Chokeberry Compote: Preparation Details

  • The black chokeberry ripens in September - early October. She has a small shelf life - no more than three days in a cool place. Therefore, it needs to be processed immediately after harvesting or buying on the market. In extreme cases, the berries can be placed in the refrigerator for several days.
  • Berries have a more tart taste, which are not ripe enough yet. The amount of sugar used for cooking compote depends on this.
  • In order to soften the tart flavor of the compote, other berries and fruits are added to the wolfberry: apples, raspberries, pears, plums, strawberries. Rowan goes well with mint.

Chokeberry Compote with Sterilization

Ingredients for two 3-liter jars:

  • chokeberry - 1 kg;
  • sugar - 150 g per 1 l of water.

Preparation Method

  • Fruits of mountain ash free from stalks, twigs and other debris. Wash well in cold water.
  • Prepare one liter or half liter sterile jars. To do this, you can use the oven, a large saucepan with boiling water or a regular kettle, putting the jar upside down on it. Cover also wash and boil for 5 minutes in water.
  • Fruits of mountain ash fill the banks.
  • Pour sugar into a saucepan, pour water. Cook the syrup. Fill them with rowan.
  • Cover the jars with lids, put them in a pan with hot water. Sterilize half-liter jars for 8-10 minutes, liter - 13-15 minutes.
  • Hermetically seal. Turn upside down, cover with a blanket and cool as it is.

Chokeberry Compote Without Sterilization

Ingredients for two 3-liter jars:

  • chokeberry - 1 kg;
  • sugar - 150 g per 1 l of water.

Preparation Method

  • Fruits of mountain ash free from stalks, twigs and leaves. Rinse in cold water.
  • Prepare sterilized three-liter or two-liter jars with lids.
  • Fill the jars for 2/3 of the volume with berries of chokeberry. Fill with boiling water, cover with lids and leave for 7-10 minutes. During this time, the berries are steamed and the water, on the contrary, cools down.
  • With the help of a special lid, pour this water into the pan, not forgetting to measure its volume. Add at the rate of sugar. Cook the syrup.
  • Refill them with berries. Immediately seal the caps. Turn upside down, wrap a blanket. Leave to cool.

Chokeberry Compote with Apples

Ingredients (per three-liter jar):

  • chokeberry - 200 g;
  • apples - 800 g;
  • sugar - 125 g;
  • water.

Preparation Method

  • Go through the Rowan, remove the spoiled berries. Cut the stalk. Rinse the berries in cold water.
  • Wash apples. Peel off. Cut in half, remove the seed pods. Cut into slices. So that they do not darken, put for 15 minutes in acidified water.
  • In a saucepan, bring the water to a boil and dip a colander with apple slices into it. Blanch for 1-2 minutes. Cool quickly under running cold water.
  • Prepare sterile jars with lids. Sterilization spend the way you want.
  • Fold the berries and apples in the jars. Fill with boiling water, cover with lids and soak for 20 minutes.
  • Through the lid with holes pour the water into the pan. Put the sugar in the norm. Cook the syrup. Pour them berries, filling the jars to the top.
  • Roll up the caps immediately. Turn upside down, cover with a blanket, leave to cool completely.

Chokeberry Compote with Raspberries

Ingredients for three liter jars

  • chokeberry - 400 g;
  • raspberry - 300-350 g;
  • sugar - 150 g per 1 l of water.

Preparation Method

  • Separate the berries of mountain ash from the twigs, sort, removing the spoiled fruit. Wash under running cold water.
  • Fold the ripe unwashed raspberry berries into a colander and rinse by dipping several times into a container of cold water. If the raspberry is infected with the larvae of a raspberry bug, fill it with salted water (take 10 g of salt for 1 l of water) and let stand for 15 minutes. Then gently rinse the berries again.
  • Prepare sterile jars and lids.
  • Cook the syrup from water and sugar.
  • Fill the jars with 1/3 volume or half berries. Pour syrup.
  • Cover the jars with lids and put in a pan with hot water so that it reaches the hangers of the jars. Sterilize one-liter jars for 15 minutes from the moment of boiling water.
  • Then close the cans with the compote tightly.
  • Turn it upside down, cover it with a blanket and cool it.

Note: this compote can be prepared without sterilization. In this case, it is better to use three-liter cans, since the compote in them does not cool for a long time, and at this time pasteurization occurs. Berries spread in jars and pour boiling water. Then pour this water into a saucepan, put sugar at a normal rate, and stir it. Bring to a boil. Pour berries with this syrup to the top of the jar. Immediately seal hermetically. Turn the lids down, cover with a blanket. In this form, the banks should cool down completely.

It must be remembered that chokeberry, or chokeberry, is a medicinal plant. It lowers blood pressure well, so products from it should not be eaten by people with pronounced signs of hypotension (with reduced pressure).
