Cutlets are a magic wand for any hostess. They do not cost too much, they are tasty and nourishing, and you can also fry them beforehand, and then just warm them up, which will save you a lot of energy and allow you to cook dinner in a matter of minutes. Even more useful in all respects the dish - Greek. These are the same burgers, but with the addition of buckwheat. They are often prepared in Ukraine and Belarus, as well as in neighboring countries. The recipe for this wonderful dish is not bad for any hostess.

Make Greekans no more difficult than regular meatballs. But they turn out much tastier and healthier. The main thing - to know the features of cooking this dish.

  • Grechanik can be cooked with or without minced meat. In the latter case, it’s good to add mushrooms instead of minced meat. There are also sweet Greekies, for them buckwheat can be boiled with milk, although this is not necessary.
  • Grechanik will be delicious only if high-quality minced meat was used for them. It is best to do it yourself, in this case, you can be sure that low-grade meat products do not fall into it. Buying ready stuffing in the store, you can hardly be sure of its excellent quality.
  • Buckwheat for Greek residents should be boiled in advance until cooked. If you have buckwheat from the side dish, you can use it - the Greek will not make it any worse, and you will gain the glory of an economical hostess.
  • The fastening element of the minced meat in the preparation of Greek people is the egg. If the meatballs are falling apart, add another egg, even if the lower number is indicated in the recipe.
  • Grechanik can be completely fried in a frying pan, like regular meatballs, and you can only brown and then bring to readiness by stewing in a sauce. In this case, they will be gentler and healthier. Another cooking option for Greekians is roasting in the oven. You can bake them both in sauce and without it.

Grechanik can be served with a side dish and without it, because their composition has everything necessary to make this dish considered complete.

Grechaik with meat

Composition:

  • beef - 0, 3 kg;
  • pork - 0, 2 kg;
  • onions - 150 g;
  • buckwheat - 150 g;
  • chicken egg - 2 pcs .;
  • tomato paste - 100 ml;
  • water - 0, 25 l;
  • vegetable oil - how much will leave;
  • breading flour - how much will leave;
  • salt, seasonings - to taste.

Method of preparation:

  • Pick and rinse the buckwheat. Fill with water and boil until cooked, not forgetting to add salt to it.
  • Wash meat, pat dry with paper napkins. Slice and turn through the meat grinder, alternating between pork and beef.
  • Add the minced eggs, salt, spices. Mix thoroughly.
  • Peel the onions and chop them into small pieces. Fry them in vegetable oil until golden brown.
  • Mix ground beef with buckwheat and make small patties of it, shaped like meatballs, only slightly flatter.
  • Heat the butter in a clean pan and fry the cutlets in it until they are covered with a golden crust on both sides.
  • Dissolve the tomato paste with water and pour over the greaves with the mixture.
  • Cover the pan with a lid, reduce heat under it. Cook Greekans for another 15 minutes.

When serving to the table, the Greek inhabitants can be poured over the sauce in which they were stewed, sprinkled with chopped greens.

Grechanik with chicken fillet

Composition:

  • chicken breast fillet - 0.5 kg;
  • buckwheat - 150 g;
  • chicken egg - 3 pcs .;
  • onions - 150 g;
  • vegetable oil - how much will leave;
  • breadcrumbs - how much will go;
  • salt, spices - to taste.

Method of preparation:

  • Wash chicken fillet, blot with a towel and chop finely with a knife or chop with a meat grinder.
  • Peel and finely chop the onion. Fry it in oil on low heat so that it becomes soft and transparent.
  • Put onion to the meat, add salt and spices there, mix.
  • Beat in minced eggs one by one.
  • Boiled washed and well-treated buckwheat in salted water until soft. Mix buckwheat porridge with minced meat.
  • From the resulting mixture, form small cutlets, roll them in breadcrumbs and fry on both sides until golden brown.
  • Reduce heat and sweat for another 5-10 minutes under the hood.

You can serve Greek chicken from sweet and sour sauce, curry, sour cream or mushroom sauce.

Grechanik with mushrooms

Composition:

  • buckwheat - 100 g;
  • fresh champignons - 0, 2 kg;
  • onions - 100 g;
  • chicken egg - 2 pcs .;
  • wheat flour - how much will leave;
  • vegetable oil - how much will leave;
  • fresh parsley - 50 g;
  • fresh dill - 50 g;
  • salt, seasonings - to taste.

Method of preparation:

  • Pick and wash buckwheat. Boil it until soft in salted water and leave to stew under the lid for another 15 minutes to make the buckwheat even softer.
  • Peel and finely chop the onion.
  • Wash, dry champignons with napkins. Cut them into small pieces.
  • Heat the oil in a pan, place the onion in it.
  • After 3 minutes, add the champignons to the onions. Fry the mushrooms until the juice released from them has completely evaporated from the pan.
  • Cool down some mushrooms and buckwheat, mix them and add eggs, salt and spices.
  • From the resulting mass, form small oblong patties, breaded them in flour and fry in a clean frying pan in boiling oil.

Grechanik with mushrooms are cooked without meat from already almost completely finished products. Therefore, they do not need to be stewed and fry for a long time, it is enough just to browse well on all sides, so that the eggs can be fried in minced meat, and the Greek women can have a delicious look. Mushroom sauce will be the best addition to the dish prepared according to this recipe. This sauce can be made from 50 g of champignons, small onions, spoons of butter and the same amount of flour, a glass of sour cream. Prepare mushrooms and onions in the same way as for the Greek. After you fry them in a pan, add flour, fry for a couple of minutes with it, then add sour cream, whisk and whisk and simmer for a few minutes until the sauce thickens.

Sweet Greeks with curd

Composition:

  • buckwheat - 100 g;
  • water - 0, 2 l;
  • milk - 100 ml;
  • cottage cheese - 0, 2 kg;
  • sugar - 50 g;
  • walnut kernels - 50 g;
  • apples - 0, 4 kg;
  • chicken egg - 2 pcs .;
  • wheat flour - how much will leave;
  • vegetable oil - how much will leave.

Method of preparation:

  • After going through and washing with buckwheat, cover it with water and boil until soft. There is no need to salt water.
  • Rub the cottage cheese through a sieve, mix it with sugar and milk.
  • Mix cottage cheese with buckwheat, add two eggs to this mass and stir to make the consistency homogeneous.
  • Wash the apples. Cut out the cores. Clean up. Grate and mix with the rest of the ingredients.
  • Calk nuts, add to other products, mix.
  • If the mass is too thin, thicken it with flour. But note that too dense the workpiece should not be.
  • Heat vegetable oil in a pan. Form chops from buckwheat-curd mass and roll them in flour. Put in a pan with boiling oil, fry on both sides until cooked. To do this, each side is enough to devote 5 minutes.
