Beets lie well raw, but not all have a cellar in which it is possible to store fresh vegetables. For many city dwellers, preservation is the only affordable way of harvesting the gifts of the garden. Beets are usually closed for the winter in the composition of salads. One of the most popular among them is Korean beets. This savory snack like many. It can be used as an independent dish or be used to prepare other dishes.

Cooking Features

Korean beet recipes, which can close the snack for the winter, are varied. The technology of making these foods can have significant differences. But there are several points that remain relevant regardless of the recipe selected. Knowing these features, even an inexperienced cook will cope with cooking beets in Korean for the winter.

  • For the preparation of Korean beet in the winter, vegetables of any variety and size will do, but from the beet salad varieties the snack is brighter, tastier and healthier.
  • Korean salad for the winter can be made from raw, boiled or roasted beets. The choice depends on the specific recipe.
  • The appetizer will acquire the taste of Korean salad only if it is included in the composition of garlic, coriander and pepper. Spices can be supplemented with cloves, nutmeg, turmeric and other spices. The ratio and the number of seasonings can be adjusted based on your taste, but it will be easier to purchase a ready-made set and use it according to the recommendations on the package or in the selected recipe.
  • If Korean-style beets are not sterilized or boiled, it can only be stored in a refrigerator or in a cellar, if the temperature in it does not rise above 12 degrees. For storage at room temperature or even in a cool room, the snack must be sterilized or heat treated before being placed in a jar.
  • Banks for Korean beets, regardless of their storage conditions, are washed with soda and sterilized. The lids are also sterilized by boiling. Use better metal, providing tightness. Under plastic covers Korean-style beets can only be stored in the refrigerator, and then no more than 3-4 months.

The conditions and periods of storage of Korean beet depend on the specific recipe. Usually the snack does not spoil for 6 months, sometimes it can stand longer.

The classic Korean beetroot recipe for winter

Composition (1 l):

  • beets - 1 kg;
  • garlic - 6 cloves;
  • table vinegar (9 percent) - 60 ml;
  • salt - 10 g;
  • sugar - 20 g;
  • ground coriander - 5 g;
  • a mixture of ground peppers - 5 g;
  • refined vegetable oil - 60 ml.

Method of preparation:

  • Wash the beets, cover with water, bring to a boil, cook for 15-25 minutes, depending on the size of the roots.
  • Cool the vegetables, peel. Grind grated for cooking Korean salads. In the absence of such a device, beets can be cut into thin straws, but this takes more time and effort.
  • Sprinkle beets with salt and sugar, ground spices, pour vinegar, mix.
  • Leave to pickle for 2 hours. During this time, the beets put juice.
  • Wash, sterilize jars and lids that fit them. Banks are encouraged to choose small, having the same size, so that they are easier to sterilize with a snack.
  • Fill the jars with beetroot, tamp it with a spoon, pour the marinade.
  • Finely chop the garlic.
  • Heat the oil, put the garlic in it, fry it for 10 seconds.
  • Pour the hot oil with garlic over the cans, cover them with prepared lids.
  • Lay a towel on the bottom of the pan. Put the banks on it. Pour water into the pan so that its level reaches the shoulders of the cans.
  • Put the pan on the stove, bring the water to a boil over low heat.
  • Sterilize jars for 10-20 minutes. Sterilization time depends on the volume of cans: 10 minutes is enough for half-liter containers, 20 minutes for one-liter containers.
  • Carefully remove the jars from the pan, roll up. Turning over the jars, cover them with a warm blanket and leave to cool in this form for additional preservation.

Korean-style beets, cooked for the winter according to the above recipe, are well worth it even at room temperature.

Korean Beets with Onions

Composition (1 l):

  • beets - 1 kg;
  • onions - 0, 2 kg;
  • seasoning for Korean carrots - 7-8 g;
  • garlic - 3-4 cloves;
  • salt - 20 g;
  • sugar - 40 g;
  • vegetable oil (refined) - 80 ml;
  • Table vinegar (9%) - 60 ml.

Method of preparation:

  • Wash raw beets, peel, chop on a special grater.
  • Free onion from the husk, cut into thin half-rings or quarters of rings.
  • Heat the oil in a skillet, put onion in it, brown it.
  • Add the beets. Fry it with onions for 10 minutes.
  • Sprinkle with sugar and salt, mix. Keep cooking for another 1-2 minutes.
  • Add seasoning, press garlic and vinegar through a press. Stir.
  • Wait until the contents of the saucepan boil again, remove it from the heat.
  • Spread the beets in sterilized jars, cork tightly. Turn the jars, wrap, let them cool in a steam bath.

It is advisable to keep the snack in a cool place, but it will not spoil for a long time at room temperature.

Korean beets with carrots in tomato juice

The composition (1, 5 l):

  • beets - 0, 5 kg;
  • carrots - 0, 5 kg;
  • Bulgarian pepper - 0, 25 kg;
  • sugar - 60 g;
  • table vinegar (9 percent) - 60 ml;
  • salt - 15 g;
  • garlic - 8 cloves;
  • hot peppers - 0, 5 pcs .;
  • seasoning for Korean carrots - 7-8 g;
  • Tomato juice - 0, 4 l.

Method of preparation:

  • Beets and carrots, peeled, chop on a special grater.
  • Sweet pepper, freed from the seeds, cut into strips.
  • Cut the hot pepper into thin ringlets, remove the seeds from them.
  • Finely chop the garlic with a knife.
  • Mix vegetables, add salt, sugar, seasoning. Stir.
  • Fill the vegetable mixture with tomato juice, put on a slow fire and simmer until the vegetables are soft.
  • Add vinegar, stir, remove from heat.
  • Spread the appetizer over the prepared jars, pour the sauce in which they were stewed.
  • Roll up the jars, leave to cool in a steam bath.

Although the appetizer was prepared without sterilization, it can be stored at room temperature. It is convenient to use beets made according to this recipe as a dressing for borsch, although it is also tasty as an independent dish.

Korean beet is not only a delicious salad, but also a convenient preparation for the winter. It can be served as a stand-alone snack or used to prepare other dishes.
