  • sugar - 80 g;
  • salt - 80 g.

Method of preparation:

  • Prepare jars with a total capacity of 2 liters - approximately as much sauce will be released from the number of ingredients specified in the recipe.
  • Wash the tomatoes, remove the stalks and make a cross-shaped incision on each and lower into boiling water for 2-3 minutes.
  • Put the tomatoes in cool water, then peel them off and cut them into small pieces, put in a saucepan and boil for half an hour on low heat.

Composition:

  • tomatoes - 5 kg;
  • hot peppers - 0, 25 kg;
  • hops-suneli - 20 g;
  • garlic - 2 heads;
  • coriander (ground) - 10 g;
  • salt - 120 g;
  • sugar - 180 g.

Method of preparation:

  • Put the washed tomatoes in boiling water, boil in it for a couple of minutes, rinse in cold water and remove the skin.
  • Cut the tomatoes into slices and put them in the pan, put them in the refrigerator overnight.
  • The next day, drain the juice from the tomato slices, but do not pour it.
  • Tomato slices in a saucepan, boil for half an hour, then cool and rub through a sieve.
  • Return the tomato mass to the pan, pour in the previously drained juice, add salt, sugar, hop-suneli and coriander. Cook together until the sauce has the desired thickness.

  • black ground pepper - 1 g;
  • garlic - 1 clove;
  • Table vinegar (9%) - 10 ml.

Method of preparation:

  • Pour the boiled water over the washed tomatoes and remove the skin.

  • Wash the apples, remove the cores from them, cut them into slices and bake or boil until soft.

Composition:

  • tomatoes - 3 kg;
  • garlic - 8 cloves;
  • onions - 0, 25 kg;
  • cloves - 8 pcs .;
  • allspice peas - 14 pcs .;
  • black pepper peas - 10 pcs .;
  • ground cinnamon - 3 g;
  • apple cider vinegar (6%) - 40 ml;
  • salt - 15 g;
  • sugar - 60 g.

Method of preparation:

  • Peel tomatoes from the skin, cut into small slices, fold into a saucepan with a thick bottom.
  • Put on the fire and boil, not forgetting to stir, 15 minutes.
  • While stewing tomatoes, cook the onions by cutting it into half rings.
  • Put the onions to the tomatoes and cook with them for another 10 minutes.
  • Chop garlic through a press. Put to the tomatoes, cook for another 2 minutes.
  • Remove tomato paste from heat, cool. Shifting it in parts into the bowl of a blender, chop to a state of mashed potatoes, transfer to the same pan in which it was prepared first.
  • Put it back on the fire and simmer until it thickens. All this time, the paste must be mixed so that it does not burn.
  • Put the spices in a thin cloth bag and place the tomato paste on the bottom of the pan. Put salt and sugar in it.
  • Boil, stirring, for another 10 minutes.
  • Pour in the vinegar and, after boiling for a few more minutes, spread it over the sterilized jars.
  • Roll the jars and put the lids down. Wrap a blanket for a day. In a day you can put it in a storage room for winter storage.

Mexican Tomato Sauce

Composition:

  • tomatoes - 1 kg;
  • onions - 0, 2 kg;
  • Chilean pepper - 0, 2 kg;
  • sweet pepper - 0, 4 kg;
  • oregano - 5 g;
  • garlic - 6 cloves;
  • table vinegar (9%) - 50 ml;
  • sugar - 20 g;
  • salt - 2 g;
  • vegetable oil - 100 ml.

Method of preparation:

  • Wash chili peppers, cut them in half, remove the seeds, bake for 10 minutes, cool and peel off the skins.
  • Wash Bulgarian pepper, remove seeds from it, cut it into small pieces.
  • Finely chop the peeled onions.
  • Peppers, onions and garlic mince.
  • Wash the tomatoes and blanch for three minutes, cool them and remove the skin. Use a knife to remove the hard part near the stem.
  • Cut the tomato flesh into pieces of about two centimeters.
  • Mix with other vegetables and put in a saucepan with a thick bottom over a fire.
  • Cook over low heat until the sauce has a uniform consistency. Pour in the oil with vinegar, add sugar, salt and oregano. Boil 5 minutes, you can lay out the banks. They must first be sterilized.

Composition:

  • tomatoes - 3 kg;
  • carrots - 0, 5 kg;
  • sweet pepper - 1 kg;
  • garlic - 2 cloves;
  • parsley (fresh) - 100 g;
  • vegetable oil - 200 ml;
  • table vinegar - 40 ml;
  • sugar - 0, 25 kg;
  • salt - 40 g.

Method of preparation:

  • Wash, scrape vegetables from seeds, chop, mince or use a blender.
  • Finely chop the washed and dried parsley.
  • Place vegetables in a saucepan and simmer for 25 minutes after boiling.
  • Add butter to vegetables, add chopped parsley, add sugar and salt, boil for another five minutes.
  • Pour in the vinegar, cook for 2 minutes and spread the sauce over the jars. Banks before it needs to be sterilized.
