In folk medicine, raspberry is used to treat colds. This is understandable: this berry contains substances that lower the temperature, and vitamins that strengthen the immune system. However, after heat treatment, not all vitamins are preserved, so raspberries, ground with sugar for the winter, are more beneficial than regular jam. The only disadvantage of this dessert is that it can only be stored in the cold.

Cooking Features

Raspberries, ground with sugar, will turn out tasty and will not sour for a long time if you know a few secrets of its preparation.

  • It is best to pick raspberries in the afternoon, in sunny weather. This berry is the sweetest and most useful.
  • It is necessary to grind the collected raspberries on the same day when it was harvested, the best - immediately after the harvest. The fact is that raspberries quickly turn sour.
  • Before cooking “cold jam” raspberries, pour lightly salted water (one liter or two teaspoons of salt per liter) and leave for a quarter of an hour. During this time, all the bugs will pop up, and the raspberries will only have to be washed and bruised, in order to prevent spoiled berries from getting into the workpiece.
  • The washed berries should be given time to dry - getting into the water harvest will reduce its shelf life.
  • The ready “cold jam” should be laid out in absolutely clean sterilized jars, closed with the same lids. They can be polyethylene - such covers should be boiled for 5 minutes.

You can choose any recipe, taking into account that the preservation of the berry depends on the amount of sugar: the more it is, the longer the “jam” will be stored.

The classic recipe of raspberries, grated with sugar

Composition:

  • raspberry - 1 kg;
  • icing sugar - 100 g;
  • granulated sugar - 1, 5 kg.

Method of preparation:

  • Immerse the collected raspberries for a quarter of an hour in cool water, dissolving some salt in it (10 g per liter).
  • Remove the emerged bugs, blade of grass.
  • Rinse the berry by dipping it several times in clean water in a colander.
  • Go through the berry, removing the spoiled one, clearing the sticking leaves and all kinds of litter. Rinse again in the same way and allow to drain.
  • Fill the berry with sugar and mash with a wooden pestle. If desired, you can use a blender, making sure that it is clean.
  • Leave the berry for a couple of hours to melt the sugar and dissolve in the berry juice.
  • Sterilize small jars. This can be done in any way: steamed, in the oven or just boiling them.
  • When the jars are dry, spread the raspberries, ground with sugar, on them, leaving some space for creating a “sugar cork”.
  • Pour the icing sugar over the raspberries.
  • Close the cans with boiled lids. When the jars are warm, put them in the fridge, in which the raspberries, ground with sugar, and should be stored.

The basement or unheated pantry can become the storage place for the raspberry cooked according to this recipe, but in this case it will have to be eaten in 2 months. In the refrigerator, it will quietly stand until the summer.

Delicate raspberry, ground with sugar

Composition:

  • raspberry - 1 kg;
  • sugar - 1 kg.

Method of preparation:

  • Prepared raspberries, well washed and dried, add sugar, mix.
  • Mash “tolkushkoy” or grind in any other way.
  • Fold a large piece of gauze into 4 layers, put the berry mass in it. Tie the corners of the gauze and hang over the enamelware for 10 hours.
  • Syrup, which is stacked through cheesecloth during this time, is poured into small jars, which need to be sterilized shortly.

In fact, this is not even a berry, and the syrup is very tender and tasty. It can be given in small spoons to children as medicine. It is also suitable for preparing tasty drinks - it is enough just to dilute with water.

Frozen raspberries, ground with sugar

Composition:

  • raspberry (fresh) - 1 kg;
  • sugar - 0.5 kg.

Method of preparation:

  • Carefully sort and wash the raspberries, removing the spoiled berries, insects, leaves and other debris.
  • Chop the berry by crushing it with a stainless steel spoon or a wooden pestle.
  • Mix with sugar and place in a clean, plastic container of small volume.
  • Cover with clean lids and place in the freezer.

In order for the raspberry not to lose its beneficial properties, it must be thawed gradually, without warming it up. Container with thawed berries can be stored in the refrigerator for two days. It can no longer be frozen again. If you do not have time to eat - use for cooking desserts.

Raspberry jam, ground with sugar without cooking

Composition:

  • raspberry - 2 kg;
  • sugar - 3 kg;
  • gelatin - 15 g;
  • water - 0, 25 l.

Method of preparation:

  • Go through the raspberries. Rinse a good berry.
  • Put some sugar in the raspberries and put them in the refrigerator for 4 hours. During this time, raspberries will give juice.
  • Grind raspberries with a spoon or “tolkushki.” You can use the blender. If you grind a berry with a wooden pestle through a sieve, then the jam from it will turn out as gentle as possible.
  • Fill the gelatin with cool water, let it swell for half an hour.
  • Put gelatin in a water bath and, stirring, achieve its complete dissolution.
  • Pour gelatin into raspberry puree, mix well.
  • Sterilize small jars, spread jam on them, roll up.

Jam from raspberries, mashed with sugar, is stored under the same conditions as “cold jam”, but its shelf life is shorter. However, it is much more difficult to keep from eating it without waiting for the winter. I must say that jam is as useful as fresh raspberry with sugar, as it is not necessary to cook the berry for its preparation.

Raspberries, ground with sugar, is harvested for the winter, not only because it is a very tasty delicacy. During a cold, it can be eaten to help the body fight infection. After all, it is prepared without cooking, that is, it retains all the vitamins and helps strengthen the immune system. In addition, it helps to reduce the temperature without medication, which during a cold is also not bad.
