It often happens that fermented milk products remain unfinished in the house. On the 2-3rd day, they become too sour, and the hostess has to figure out what to do with them so as not to throw it away. The use of such products is always possible to find. Yummy pancakes on yogurt are delicious and lush. They prepare quickly and easily. Even an inexperienced cook can bake them.

Experienced housewives make pancakes on kefir often. To feed the family with this tasty and hearty breakfast, a quick-cook will need 20-30 minutes. Knowing some of the moments allows you to make pancakes not only quickly, but also tasty. Magnificent products with bubbles inside are especially appreciated, and such without knowledge of certain subtleties is very difficult to make.

  • Kefir is suitable for making pancakes any, but experienced cooks prefer to take yesterday or even the day before yesterday: it is more sour, baking powder reacts better with it. As a result, the pancakes are more lush.
  • Flour for making pancakes on kefir is better to use wheat, but it can be mixed with any other, including rye, corn, buckwheat and even rice.
  • The classic recipe for kefir pancakes includes eggs, soda, sugar and salt. You can do without all of these ingredients, but some require adequate replacement. For example, instead of soda, you can take baking powder or yeast. Excluding eggs, you can add starch to the composition, but this is not necessary. The amount of sugar and salt can be reduced without fear that the pancakes will not come out. On the contrary, the more sugar you put in the dough, the higher the risk that the pancakes will start to burn, not having time to bake.
  • It is recommended to sift the flour before adding to the dough, then the pancakes will be more tender and fluffy.
  • Flour the dough in portions until it reaches the desired consistency. This is due to the fact that both flour and kefir can be of different quality. The optimum consistency is reminiscent of 20% fat sour cream, but if you want to make very thick pancakes, the dough doesn’t hurt to make it a little thicker.
  • Soda is added last, after which you can put only pieces of fruit, berries, and similar additives. If you immerse the soda in kefir immediately, the neutralization reaction, which allows you to cook lush and bubble fritters, will end quickly and they will immediately settle after cooking.
  • Fry fritters in a hot pan, greased with butter. It is not necessary to pour a lot of oil, but you should constantly monitor the pan to not turn out, as fritters will absorb fat when frying. A cast iron pan is best, but you can also use another one, only with a thick bottom.
  • It is time to turn the pancakes when holes appear on the other side. The underside by this time has time to brown.
  • To prevent the dough from sticking to the spoon, it is moistened with water. If the dough is very thick, it may take two spoons to put it in the pan.
  • If the dough is lowered into the pan from the narrow side, the pancakes will have a round shape. Spreading the dough through the side of the spoon, you will print oval shaped pancakes.
  • Fritters on kefir can be prepared without additives, with berries or fruit, raisins. If you do not like sweets, you can bake pancakes with greens, cheese. Additional products are either added to the dough, or spread on pancakes when baking them. In the latter case, pancakes are obtained with pripek.

Served with kefir fritters with sour cream, condensed milk, syrup, jam. They are tasty on their own, but are often offered to coffee, cocoa or tea.

A classic recipe for pancakes on kefir

Composition:

  • kefir - 0, 25 l;
  • wheat flour - 0, 2-0, 24 kg;
  • chicken egg - 1 pc .;
  • soda - 3 g;
  • salt - 3 g;
  • sugar - 20 g;
  • vegetable oil - as required.

Preparation Method:

  • Break eggs into a bowl, add sugar to it, rub with a fork or a whisk.
  • Add kefir and salt, whisk until a homogeneous composition is obtained.
  • Sift flour. Add 5-7 spoons to the cooked mixture. Stir to get a homogeneous mass, without lumps. Rate the consistency: it should be like a thick cream. If the dough is too thin, add flour. If it seemed too thick to you, pour in some kefir. Stir.
  • Add soda and mix again.
  • Preheat pan. Lubricate with oil. Put a spoonful of dough, fry the muffin on both sides, evaluate its taste. If necessary, adjust the composition of the test, adding the missing products. If the dough spreads too quickly, it makes sense to thicken it with flour. If you prefer sweeter pancakes, add some sugar.
  • Grease the pan again, put the dough on it with spoons, keeping a small interval between its portions. Fry on one side, turn the blade over, overcook.
  • In the same way, fry the pancakes from the remaining dough.

Fritters on kefir make all hostesses in their own way, but the above recipe is considered one of the most common, it can be called a classic.

Fritters on kefir without soda and eggs

Composition:

  • kefir - 0, 5 l;
  • flour - 0, 4 kg;
  • sugar - 30 g;
  • pressed yeast - 20 g;
  • salt - 5 g;
  • vegetable oil - as needed.

Preparation Method:

  • Remove the kefir from the refrigerator in advance or slightly heat it in a water bath (not higher than 40 degrees).
  • Dissolve yeast with kefir, add sugar, mix. Temporarily set aside until foam starts to protrude.
  • Sift flour. Gradually pouring flour into kefir, make a dough that resembles village sour cream in its density.
  • Add salt, mix well. Leave for half an hour in a warm place, covered with a towel.
  • Preheat pan, brush with oil.
  • Put spoons of dough into the pan. Fry over medium heat until the pancakes are browned. Turn over, fry until ready. Remove the pancakes from the pan, one break to make sure that the products are completely baked in the middle. If inside pancakes seem wet, slightly reduce the heat.
  • Fry the pancakes from the remaining dough.

From yeast dough on kefir pancakes are especially lush. Serve them well with confiture or condensed milk. If you do not like sweets, you can eat these pancakes with sour cream, it will also turn out delicious.

Banana pancakes on kefir

Composition:

  • flour - 0, 35 kg;
  • bananas - 0, 3 kg;
  • sugar - 40 g;
  • soda - 3-4 g;
  • salt - a pinch;
  • vanillin - on the tip of a knife;
  • vegetable oil - as required.

Preparation Method:

  • Mix the kefir with salt, vanilla and sugar.
  • In portions, enter the flour, making a dough that is similar in texture to sour cream.
  • Add soda, mix.
  • Peel bananas, cut into small cubes, put banana slices in the dough. Stir.
  • Fry fritters to a ruddy hue in a greased and hot pan.

Flavored pancakes made according to this recipe are especially popular with children. Serve them well with banana or vanilla cream, yogurt.

Pancakes on kefir with herbs

Composition:

  • kefir - 0, 5 kg;
  • flour - 0, 35-0, 4 kg;
  • chicken egg - 2 pcs .;
  • soda - 5 g;
  • salt - 5 g;
  • sugar - 10-20 g;
  • green onions - 50 g;
  • fresh dill - 50 g.

Preparation Method:

  • Eggs break into a bowl, add sugar and salt to them, beat with a whisk.
  • Continuing to beat, pour kefir.
  • Pour the sifted flour in small portions until the dough has the consistency of sour cream.
  • Wash, dry greens.
  • Chop onion finely. Dill remove the stems, finely chop the rest with a knife.
  • Pour soda into the dough, mix.
  • Add greens, stir again.
  • Fry fritters.

Serve pancakes made according to this recipe should be served with sour cream or unsweetened yogurt.

Fritters on kefir with raisins

Composition:

  • kefir - 0, 25 l;
  • sour cream - 50 ml;
  • chicken egg - 1 pc .;
  • flour - 0, 3-0, 35 kg;
  • sugar - 20 g;
  • raisins - 150 g;
  • salt - a pinch;
  • baking powder for dough - according to package directions;
  • vegetable oil - as needed.

Preparation Method:

  • Kefir at room temperature, mix with sugar and salt.
  • Combine the egg with kefir, whisk with a whisk to get a uniform composition.
  • Add sour cream, mix thoroughly.
  • Gradually add flour. The finished dough should be reminiscent of the consistency of thick cream.
  • Sprinkle baking powder, mix.
  • Pour boiled water over raisins, leave for 10 minutes. Drain, squeeze the raisins and put in the dough, mix.
  • Heat the butter in a frying pan and fry the pancakes in it, spreading the dough in the pan with a spoon.

Fritters with raisins are good in themselves, without any additions, but if you offer them sour cream or condensed milk, guests and members of the household will not be offended at you.

Honey pancakes on kefir

Composition:

  • kefir - 0, 5 l;
  • flour - 0, 3 kg;
  • honey - 40 ml;
  • chicken egg - 2 pcs .;
  • salt - a pinch;
  • soda - 3 g;
  • vegetable oil - as required.

Preparation Method:

  • Beat the eggs, separating the yolks from the proteins.
  • Spread the yolks with salt, add honey and kefir melted to a liquid state, beat with a whisk.
  • Pour the flour and make the dough.
  • Add soda, mix well.
  • Beat whites, enter into the dough.
  • Heat the pan, generously grease it with butter, put the dough with a spoon.
  • After frying pancakes, place them on a napkin to remove excess fat, then put them on a platter and serve them to the table.

Honey will be the best addition to honey pancakes. It can be served separately or water them with pancakes.
