Thanks to Italian cuisine, lovers of gastronomic delights have learned a huge number of pizza recipes.

Some people think that in order to cook pizza, it’s enough to knead the dough, roll it out, fill it with stuffing and bake it.

Of course, kneading dough is a serious matter, as is the selection of ingredients for the filling. But in fact, a special role in the preparation of pizza is not assigned to the dough and the contents of the cake, and sauce. It is he who gives the whole baking a unique taste and aroma, makes the pizza juicy and piquant.


Italians are sensitive to the preparation of sauces. But this does not mean that you need to carefully follow the recipe, not daring to add these or other herbs or, conversely, replace one ingredient with another.

In the process of making sauces, you need to listen to your intuition, to imagine what taste the pizza will turn out, whether the products that you used for the filling will be combined with the selected sauce.

Most often, the sauce is prepared on a tomato base. These can be fresh or canned tomatoes, tomato juice or tomato paste, ketchup or ready-made sauce.

The taste of the sauce depends on the spices and herbs. Tomato sauce goes well with basil, paprika, marjoram, thyme, red pepper. The onion, garlic, cumin, pepper add a spicy sauce.

Tomato sauce must add sugar. It softens the acid of tomatoes, makes the sauce more delicious.

In addition to tomato, they often use white sauce cooked in milk or cream - a type of bechamel.

Of course, the Italians consider this an unheard of liberty, but if there is demand, there will always be supply. Therefore, in many pizzerias in the assortment there is pizza not only with a standard tomato sauce, but also with white, as well as mixed.

White sauce goes well with white meat or fish, with mushrooms. Because of its delicate taste, it is not worth much to flavor with fragrant herbs. Black and white pepper, nutmeg and garlic are well suited to this sauce. Cooking white sauce requires care, especially when brewing flour with milk. In accordance with many recipes, the flour that is browned in butter is diluted with hot milk, so the sauce is often made with lumps.

But you can do differently: gradually dilute the flour with cold milk, then with constant stirring over low heat bring to a boil. In this case there will be no lumps. To completely eliminate the occurrence of heterogeneous mass, the sauce must be filtered through a strainer.

But still the sauce is very popular as in a pizzeria. It is so versatile that it is suitable not only for pizza, but also for pasta (rice), rice, potatoes. It can be added to the soup, as well as served with meatballs.

In the preparation of the sauce in the pizzeria is nothing complicated. In fact, they are grated and boiled tomatoes with onions, garlic and herbs.   • tomatoes - 1 kg;
  • onions - 3 pcs .;
  • garlic - 1 head;
  • red bell pepper - 1 pc .;
  • paprika - 1 tsp;
  • oregano, basil, marjoram - 0, 5 tsp;
  • salt;
  • sugar - 1 tsp;
  • olive oil - 50 ml;
  • chili - to taste.

Preparation Method

  • For this sauce, pick ripe red fleshy tomatoes. Wash, pour boiling water and leave for 2-3 minutes. Drain the water, and remove the peel of tomatoes. Cut hard places near the stem. Cut into several pieces, put in the pan.
  • Peel onion and garlic, rinse. Chop onions with large half rings, chop the garlic with a knife.
  • Pepper wash, clean seed, cut into slices, combine with other vegetables.
  • Place the pot on the stove, bring its contents to a boil. Put spices, herbs, chopped garlic, pour oil. Cook over low heat until soft, about 25-30 minutes.
  • Grind the resulting sauce to a homogeneous mass with an immersion blender, bring to a boil again. Cool it down.

Pizza Sauce with Tomatoes in Own Juice: As in Pizzeria

  • tomatoes in own juice - 300 g;
  • garlic - 2 cloves;
  • sugar - 0, 5 tsp;
  • salt to taste;
  • dried basil and dried oregano - pinch;

Preparation Method

  • Free the tomatoes in their own juice from the skin, fold into a blender and chop to a smooth mass.
  • Heat the oil in a skillet and fry whole garlic cloves on it. Remove them, and add the prepared tomato paste to the butter.
  • Put oregano and basil, salt, sugar, mix. Simmer on low heat, stirring with a wooden spoon, until you need the thickness. Remove from heat, cool.

Pizza Sauce with Canned Tomatoes and Carrots

  • canned tomatoes - 500 g;
  • carrots - 50 g;
  • bulb onion - 50 g;
  • olive oil - 40 g;
  • sugar - 1 tsp;
  • salt;

Preparation Method

  • Peel the onions and carrots, chop finely. Fry in butter until golden brown.
  • Peel tomatoes, put them in thick-walled dishes, add onions and carrots, bring to a boil. Put dried herbs. Boil 30-60 minutes. Add sugar and salt (if it is not enough). When using fresh herbs, chop them finely and add them at the very end of cooking.
  • Remove the sauce from the heat, cool slightly, chop with a dipping blender until smooth.

Tomato pizza sauce with red wine

  • fresh tomatoes - 1 kg;
  • onions - 1 pc .;
  • hot red pepper - small pod;
  • red wine - 100 ml;
  • parsley and celery - a few twigs;
  • salt;
  • sugar - 1 tsp;
  • cloves and nutmeg - to taste.

Preparation Method

  • Wash ripe red tomatoes, pour boiling water for 2 minutes. Remove the skin, remove the firm flesh near the stem. Cut into pieces, put in a blender. Put peeled and chopped peppers in this place. Grind vegetables to puree.
  • Finely chop the greens and onions, put them in the pan. Add spices. Pour wine and simmer on low heat until soft. Connect with the tomato mass, cook to the thickness you need. Cool it down. Crush the remaining pieces of vegetables and herbs with an immersion blender.

Pizza Sauce with Tomato Paste

  • onions - 1 pc .;
  • garlic - 2 cloves;
  • sugar - 1 tsp;
  • salt;
  • olive oil - 40 g;

Preparation Method

  • Peel onion and garlic, rinse, chop finely into straws.

Preparation Method

  • Spread flour on butter. Gradually add warm broth. Remember: if you cook a pizza with meat, use beef broth, and if with fish, then you need to take fish broth.
  • While stirring, bring to a boil.
  • Put salt and pepper to taste.
  • Cook to the thickness you want.

Preparation Method

  • Bring to a boil in a water bath.
