A few years ago, rolls and sushi were unusual, and they could be eaten only in some country in Southeast Asia, most often in Japan or Korea. Or in a restaurant specializing in Asian cuisine. Now rolls or sushi can not only be ordered in a cafe, but also cooked at home.

But many still do not understand how the sushi differs from rolls.

In fact, everything is very simple and quite understandable.

Sushi is a national dish of Japanese cuisine. The main and almost only components are rice and fish. Well, or other seafood: squid, oysters, caviar.

Make sushi at home - a couple of trivia. The main thing is to know how to cook the rice and soak it with vinegar so that the rice does not crumble when squeezed in the hand, but gather in a ball. After all, sushi is something like a patty or high patty, which is made from cooked rice in a special way. And then put fish on this cake.

In Japan, use almost raw fish. And in order to kill pathogens and worms, sushi is flavored with spicy sauce - most often wasabi.

Of course, in European countries they try not to use raw fish, as the stomach of a European is not adapted to such a delicacy. Therefore, such fish is replaced with salted or smoked, as well as other seafood. Sometimes rice and fish are fastened together with a ribbon of seaweed.

What is the difference between sushi and rolls?

And what about rolls? What is this dish?

Rolls are different from sushi in the first place, appearance. Rolls are much richer in composition. In them, too, the main place is occupied by rice and fish. But they still add a lot of goodies. It all depends on the imagination of the cook and the desires of the eater. It can be a variety of vegetables: cucumbers, carrots, bell peppers. Also in rolls add cheese, eggs, meat, various greens. All the ingredients are laid out on a sheet of pressed seaweed (nori) in the following sequence: boiled rice, fish, and other products in a special way. Then wrapped in the form of a tight narrow roll. Hence the name of the dish. By the way, this leaf from seaweed does not have any pronounced taste, but in combination with other products it is he who gives the savory and pleasant taste to the rolls.

To roll not collapsed, when it is wrapped using a bamboo mat - Makis. Although many hostesses completely dispense with this device, replacing the mat with a conventional polyethylene film.

Then cut a tight roll with a sharp knife across into several pieces, trying to make them narrower. After all, the rolls already, the easier they are. Rolls are served on a plate, separately served with soy sauce or wasabi sauce.

And now the most interesting. Despite the difference between rolls and sushi, it turns out that the former are a type of the latter. And rolls are not the only option for sushi.

The name of other sushi for people far from Japanese cuisine is very difficult to remember. For example, nigiridzusi are ordinary sushi that everyone is used to seeing. Gunkan-maki is sushi made from rice and fish in the shape of a ship. There are pressed sushi - osizushi, in which the filling is compressed under a press into a rectangle, and then cut into portions. And makizushi are sushi rolls. This is the rolls in the performance in which everyone is accustomed to see and eat them.

So it turns out that sushi is not always rolls, but rolls are sushi.

But along with this you can notice one thing in common. Both are made with the addition of rice with a large amount of gluten, which is cooked in the same way. In either dish is used fish, preferably expensive (and in Japan - raw). In rolls and sushi, the essential ingredients are vinegar, sugar, salt, soy sauce, and wasabi sauce, which is served on the already prepared dish. And in order not to be completely confused, you need to summarize, in which to determine what is the difference between sushi and rolls?

  • Classic sushi is made only from rice and fish (seafood). In the rolls add to taste vegetables, cheese, various other products, and even fruit.
  • Sushi is made in the form of patties, meatballs, bars, without folding them into a roll. Rolls are rolls wrapped in a nori leaf. Sometimes rolls can be turned inside out, that is, the main filling inside is wrapped in a nori leaf, and that, in turn, is covered with boiled rice.
  • In sushi, the fish is placed on top of rice meatballs, and in rolls, the fish, along with the rice, are hidden inside a roll wrapped in a nori leaf. And the amount of rice in sushi and rolls is different. There is a lot of rice in sushi, and the main place in rolls is filled with fish and other products.
  • Each sushi is made individually, that is, in portions. Rolls are first rolled up, which is then cut into portions.
  • Sushi is served cold, and rolls are eaten by some gourmets in a heated one.

So ​​it turns out that when people in a restaurant order sushi-assorted, they can bring classic sushi along with rolls on a plate. And they will be right.
