Tartlets are called small baskets of dough with a filling. The filler can be very different: pate, salad, fruit. In preparation for the holiday, many buy ready-made baskets in the store, but they are not cheap and their taste often leaves much to be desired. It’s a good idea to make tartlets yourself. Dough for them is easy to prepare at home.

Cooking Features

Tartlets are most often baked from shortbread dough, but it can be curd, sour cream, flaky or otherwise. There is no single recipe for dough tartlets. However, some of the recommendations of the cook, first took up the preparation of dough for tartlets at home, will be useful.

  • It is better to warm up the oven for baking tartlets in advance. Usually they are put in the oven, the temperature of which reached 180-200 degrees, and baked at this temperature for half an hour.   • When baking tartlets at the bottom of the molds, you need to put some dry beans or other grains. If this is not done, the dough at the bottom can swell, it will be inconvenient to use ready-made baskets with such a bottom.
  • To prevent dough from sticking to hands, it is necessary to powder them more often with flour or to lubricate with vegetable oil.

A simple recipe for shortcrust pastry for tartlets

Composition:

  • wheat flour - 160 g;
  • salt - a pinch;
  • sugar - 5-10 g;
  • butter or margarine - 100 g.

Method of preparation:

  • Remove butter or margarine from the refrigerator beforehand. The product should soften, but not melt.
  • Sift flour, mix with salt and sugar.
  • Gradually add flour, mix it with butter, until it ends. As a result, you get a mass resembling crumbs.
  • Put the dough in the refrigerator for 15-20 minutes.
  • Remove the dough from the fridge, roll small balls out of it (1, 5-2 cm in diameter). From the resulting volume of dough should go 10-12 of these balls.
  • Place the balls on the bottom of the greased baking tins. Hands knead the dough, spreading it along the bottom and edges of the containers. The thickness of the dough should be from 3 to 5 mm.
  • Preheat oven to 200 degrees.
  • Place several beans on the bottom of the molds.
  • Send the molds to the oven. Bake until the tartlets have a golden hue.

Adjust the amount of sugar in the recipe depending on the filling of the tartlets. For a sweet filling, the dough requires a sweeter, for a sharp filling, a less sweet version will do. In addition, a little paprika or turmeric can be added to the dough. Thanks to this, tartlets will not only become more tasty, but will also get an even more appetizing shade.

Unsweetened shortbread dough for tartlets

Composition:

  • flour - 0, 5 kg;
  • chicken egg - 2 pcs .;
  • milk - 100 ml;
  • margarine or butter - 0, 2 kg;
  • baking powder for the dough - a pinch;
  • salt - a pinch.

Method of preparation:

  • Flour, sift, mix with baking powder and salt.
  • Hold the margarine or butter at room temperature for an hour.
  • Put in a bowl, chop with a knife.
  • Add flour, mix.
  • Separate the whites from the yolks.
  • Add the yolks to the rest of the ingredients, mix.
  • Pour in chilled milk, knead the dough.
  • Place the dough in a bowl, cover with cling film, and place in the refrigerator for half an hour.
  • Make small balls out of dough, crush them with your palm to make flat circles.
  • Spread the dough in molds, press it to the bottom and edges. Put the beans on the bottom.
  • Place the dough pan with the oven preheated to 200 g. Bake until the dough has an appealing shade.

From the specified number of ingredients you get so many tartlets that you have enough of them to cover the festive table for a large enough company. You can start them with different snacks.

Yeast dough for tartlets

Composition:

  • flour - 0, 6 kg;
  • milk - 0, 2 l;
  • sugar - 5-100 g (depending on whether you want to make sweet or snack tartlets);
  • dry baker's yeast - 5 g;
  • salt - a pinch;
  • chicken egg - 2 pcs.

Method of preparation:

  • Heat the milk to a temperature slightly above room temperature. Add yeast and sugar to it. Even if you make unsweetened tartlets, at least you need to put a teaspoon of sugar.
  • Keep the milk in a warm place for 15-20 minutes to ferment the yeast.
  • One by one, put eggs into the milk.
  • Sift flour. Add it in parts, stirring thoroughly until you have an elastic dough.
  • Roll the dough into a ball, cover with foil and set aside for half an hour.
  • When pinching pieces from the dough, roll it into balls, then spread it out over the forms, spread it with your fingers along the bottom and walls.

Tartlets are baked from yeast dough in an oven preheated to 200 degrees for 20-30 minutes.

Puff pastry for tartlets

Composition:

  • flour - 0, 6 kg;
  • water - 0, 3 l;
  • chicken egg - 1 pc .;
  • salt - a pinch;
  • table vinegar (9 percent) - 10 ml;
  • butter or margarine - 0, 2 kg.

Method of preparation:

  • Add vinegar and salt to cold water, stir well.
  • Break an egg into a container with water, whisk until the mixture has a uniform consistency.
  • When adding flour, knead the elastic dough. As a result, you should have a little less glass of flour.
  • Chop the butter with the remaining flour to make a crumb.
  • Remove the dough for half an hour in the refrigerator, then roll it into a rectangular layer.
  • Spread the flour and butter chips on the dough. Fold the dough in an envelope, roll it. Put in the refrigerator for a quarter of an hour, then roll it again, roll it up with an envelope and roll it again.
  • Repeat the procedure another 2-3 times.
  • Divide the dough into 2 parts, roll each part.
  • Put one piece on the other. Cut into squares. Inside each square along the perimeter, make cuts, cutting only one layer.
  • Spread the dough on a baking sheet, send for 20 minutes to an oven heated to 200-220 degrees. Do not open the oven during baking.
  • After removing the pastry from the oven, remove the middle.

After the tartlets have cooled, you can fill them with a snack and cover with the extracted part of the dough. By the same principle, it is possible to make round-shaped tartlets by cutting circles out of dough with a glass.
