Liver cake is a great option for a festive table, although if you are not too lazy to fry pancakes, then it is perfectly possible to prepare it for a family dinner. This version of the cake can be taken as a basis and each time it is complemented with various fillings and sauces. You can use any liver, at your discretion. The liver of the bird is more tender, therefore the cake is more tender, although it is up to you to decide.
List of ingredients:
- 500 g chicken liver
- 3 chicken eggs,
- 4 tbsp. l flour,
- 350 ml of milk,
- 4 tbsp. l vegetable oil,
- 1, 5 tsp. salt,
- 0, 5 tsp. spices,
- 100 ml of mayonnaise,
- fresh greens (5-6 twigs or more).
Cooking
1. Soak chicken (or any other) liver soak in cool water, free from films and veins.
2. Transfer the pieces of the liver to the bowl of the combine and hammer in the same 3 eggs. Grind at medium speed for a couple of minutes.
3. Pour flour, spices, and salt into the bowl of the combine. Mix again at medium speed for a couple of minutes.
4. Pour milk of any fat content and some vegetable oil into the bowl, turn on the combine for a couple of minutes. Thus, the dough for liver pancakes will be homogeneous. Let the dough stand for 10 minutes.
5. Since the vegetable oil is added to the dough, it is not necessary to lubricate the pan additionally. Heat a good frying pan and pour a small amount of liver dough, spread over the entire surface. Fry the pancake on low heat for about 3-4 minutes.
6. Then turn the pancake over and fry it for another 2-3 minutes. Put the finished pancakes on a large dish in a pile, simultaneously lubricating each of them with mayonnaise. Convenient to use culinary brush.
7. When the cake is ready, spread the top pancake with a lot of mayonnaise and put it in a cool place for a couple of hours to soak it. Before serving, decorate the classic liver cake with chopped fresh herbs, such as parsley.
