It would be desirable, that bird cherry jam turned out tasty and fragrant, it was well kept all winter, saving at the same time useful properties. Such a dessert can be obtained only by following certain recommendations.

  • Usually, the bird cherry is collected black, that is, fully ripe, as in this case it is not so tart. Jam from it turns out quite delicate and pleasant to the taste. However, some housewives prefer to make red cherry jam, because there is more vitamin A in it. It is up to you to decide which preference, benefit or taste.
  • Before washing, the bird cherry should be well sorted and dried. Twigs and leaves to get into the jam should not.
  • It is extremely undesirable to wash it under a strong stream of water, because of this, its thin skin can be damaged. Wash it, dropping it in clean water in a colander. Do it repeatedly (3-4 times). However, for making jam, which is called seedless jam, you can wash the bird cherry in running water.
  • After washing, the bird cherry is dried again, spreading it on a towel. The less water gets into the jam, the better it will be stored.
  • Put ready-made jam on sterilized jars - just clean them up is not enough. Covers are also needed sterilized.
  • It is possible to store jam from a bird cherry no more than 8 months, it is even better to eat it in half a year. The reason is that in its pits contains prussic acid, albeit in microscopic quantities. The longer the jam is stored, the more dangerous it becomes. For the same reason you can not eat a lot of jam. It is best to use it as a medicine - a spoon or two a day.

Simple recipe for winter cherry jam

Composition (for 2, 5 l):

  • black cherry - 1 kg;
  • granulated sugar - 1, 25 kg;
  • water - 0, 75 l.

Method of preparation:

  • Rinse the bird cherry and dry it.
  • Boil water, dissolve 0.5 kg of sugar in it.
  • Place the bird cherry in a colander and dip it into the boiling syrup. Keep the berry in it for 3-4 minutes.
  • Take the colander out of the syrup and hold it over it for a while so that the syrup stack from the berry into the saucepan.
  • Put the bird cherry in a clean pan or enamel basin.
  • Add a little sugar to the syrup. When it is completely dissolved, pour boiling cherry with boiling syrup, put the container with it on low heat.
  • Boil, stirring and removing the resulting foam, for 15 minutes.
  • Spread the jam over the prepared jars, close them with boiled metal lids. As soon as the jars of bird-cherry jam have cooled, put them in the fridge - keep the bird-cherry jam prepared according to this simple recipe, which is considered classic, recommended in the winter in a cool place.

Despite the fact that the traditional way of making bird-cherry jam for the winter is quite simple, it turns out to be very tasty, the bones give it an extraordinary flavor.

Red Cherry Jam

Composition (for 2, 5 l):

  • red cherry - 1, 5 kg;
  • sugar - 1, 5 kg.

Method of preparation:

  • Iterate, rinse and dry the bird cherry.
  • Turn it three times through the meat grinder. Blender for its grinding can not be used, because it can fail due to this.
  • Mix the ground cherry with sugar until smooth.
  • Put on low heat and cook for an hour, not boiling. So that the jam does not boil, the basin with him will have to be periodically removed from the heat, and when it cools a little, put it back.
  • Pour the prepared jam into sterilized jars, roll up carefully. After cooling, remove for the winter.

This simple recipe can also be used to make black-cherry “seedless” jam. It should be borne in mind that the bones in it are still there, albeit crushed. This means that jam is not subject to long-term storage, although it stands well at room temperature.

Cherry jam with lemon juice

Composition (for 2, 5 l):

  • bird cherry - 1, 5 kg;
  • lemon juice - 50 ml;
  • sugar - 1, 5 kg.

Method of preparation:

  • Prepared cherry (whole) pour sugar and pour lemon juice. Leave overnight in a cool place.
  • In the morning, drain the formed juice into a small container and place it on the stove. Boil the syrup until the sugar in it is completely dissolved, but not less than 5 minutes.
  • Pour syrup over the berry and set it on fire. Cook, stirring, for half an hour.
  • Pour the jam into sterilized jars. Cover them tightly with metal lids, let cool.

This jam can be stored at room temperature. It has a sweet-sour, slightly tart taste, as well as a delicious aroma.

Fragrant bird cherry jam for the winter

Composition (2 liters):

  • bird cherry - 1 kg;
  • sugar - 1 kg;
  • water - 0, 75 l;
  • ground cinnamon - 5 g.

Method of preparation:

  • Rinse the fruit of the bird cherry, dip them in a colander in boiling water for 5 minutes, remove and dry the berries, pour on a towel.
  • From the pan where the bird cherry was blanched, pour 3 glasses of water, bring to a boil. Dissolve sugar in water, add cinnamon and boil syrup for 5 minutes.
  • Put the bird cherry in the syrup and cook, stirring, for 30 minutes.
  • Wait until the jam has cooled, place it in sterilized jars, close with plastic covers. Store in the refrigerator.

If you boil the bird cherry for 10 minutes longer, pour it into jars without cooling it, and roll it tightly with metal lids, you can store it in the storeroom in the winter. However, this jam looks less appetizing.

Preparing jam from bird cherry for the winter according to any of the above recipes is not difficult. Having a jar or two in the house of such a delicacy does not hurt. The main thing is to remember that everything is good in moderation, and not to eat bird-cherry jam in large portions.
