Cod is an ocean fish and is not found in any lake or pond. Therefore, it gets on the table most often in the form of canned fish. But if you manage to buy fresh-frozen cod, then, having shown imagination, you can cook from it a lot of tasty and unusual dishes.

If bony fish is most often fried, then cod can be boiled, stewed, but in baked form it turns out to be especially appetizing.

Small cod can be baked whole. Large individuals will need to cut into steaks.

The subtleties of cooking baked cod

  • It is customary to gut fish less than 1 kg without cutting the abdomen. To do this, cut off the fish from the scale of the head, and then gut through the hole. Do not forget to remove the black film that covers the inside of the abdomen. When slicing such fish, neat, rounded pieces are obtained.
  • Before cooking, cod must be thawed. Immerse the whole carcass in cold water, in which pre-dissolve 5-7 g of salt. Due to salt water, the loss of minerals will be minimal. Thaw fish cut into pieces in the open air, otherwise the fillet will become watery and less tasty.
  • Cod, like any marine fish, has a peculiar smell. Therefore, it is recommended to marinate before baking. For this, lemon juice, white wine, and spicy herbs are well suited.
  • Cod can be spiked in a small amount of liquid with the addition of various herbs, roots and spices. In this case, sometimes some vinegar or cucumber pickle is added to the water, which also helps to remove the specific odor.
  • Bake raw cod stewed or roasted. To make it juicy, it is prepared under the sauce: milk, sour cream, tomato. If you put the cod in the oven with vegetables, it will become fragrant, juicy and very tasty.
  • Cod can be baked in foil or sleeve. With this method of heat treatment, the fish will be cooked in its own juice.
  • To get a golden crust, it is enough to open the foil or cut the sleeve, and then bake the fish at a higher temperature, while trying not to overdry it.
  • Cod has very small and thin scales. If you do not want to mess with it, remove it with the skin, and bake the fish, sprinkled with grated cheese on top.

Cod baked in oven in foil

Ingredients:

  • fresh-frozen cod - 1 pc. (1-1, 2 kg);
  • eggs - 2 pcs .;
  • onions - 200 g;
  • butter - 50 g;
  • cheese - 150 g;
  • chopped parsley - 2 tbsp. l .;
  • vinegar 3% - 30 ml;
  • water - 200 ml;
  • sunflower oil - 1 tsp;
  • salt;
  • black pepper.

Method of preparation

  • Thaw the fish. Remove the skin, cut the fillet from the ridge. Cut in portions (there should be an even number).
  • Prepare the marinade by mixing the vegetable oil, salt, pepper and vinegar with water.
  • Fill them with fish, put them in the cold for 20-25 minutes.
  • Boil eggs for mincemeat, cool, peel, chop finely. Dice onions, fry in butter. Put onions, eggs and greens in a bowl. Stir.
  • Cover the baking sheet with foil, leaving 20 cm free edges. Lubricate the middle one with butter. Put half the pieces of fish, sprinkle with grated cheese, put an even layer of minced meat. Sprinkle with cheese again, cover with a second piece of cod.
  • Wrap the stuffed cod into a foil envelope.
  • Put the baking tray in the oven, heated to 200 ° C, for 20-25 minutes.
  • Serve hot on the table, sprinkle with herbs.

Cod baked in the oven with vegetables

Ingredients:

  • cod fillets - 700 g;
  • onions - 100 g;
  • tomatoes - 200 g;
  • paprika - 50 g;
  • garlic - 1 tooth;
  • lemon juice - 20 ml;
  • sunflower oil - 20 g;
  • salt;
  • dry seasoning for fish - 5 g.

Method of preparation

  • Thaw the fillets in the air, cut them into portions.
  • Chop onions. Pepper seeds, cut into small pieces. Cut the tomatoes into thin slices. Chop garlic with a knife.
  • Prepare the marinade by mixing salt, pepper, garlic, fish dressing, lemon juice and oil in a bowl. Dip the pieces of fish in it and leave for 15 minutes.
  • In another bowl, fold the onions, peppers, and tomatoes. Stir.
  • Grease a lot of oil or cover it with foil. Lay out an even layer of vegetables. Put pieces of fish on them. Pour the remaining marinade. Cover with a sheet of foil.
  • Put the mold in the oven. Bake cod with vegetables for half an hour, setting the temperature to 180-200 ° C. Then remove the foil and bake the fish pieces. Sprinkle the finished dish with herbs.

Cod baked in the oven in white wine

Ingredients:

  • cod - 1 pc .;
  • garlic - 2 cloves;
  • sunflower oil - 20 g;
  • white wine - 70 ml;
  • parsley - 3 sprigs;
  • black pepper to taste;
  • lemon juice - 25 ml.

Method of preparation

  • Skip the garlic through the garlic press, add salt, pepper and lemon juice. Stir.
  • Lubricate the prepared cod carcass inside and out with this compound. For better impregnation of the marinade along the entire length of the carcass, several transverse shallow cuts can be made. Leave the fish for a few minutes so that it is well soaked.
  • Cover the baking sheet with foil, pour the butter. Lay the cod. Collect the foil around the fish in the form of bumpers. Sprinkle with greens. Pour wine.
  • Place in the oven and bake at 200 degrees for 25 minutes, periodically sprinkling with the released juice so that the fish do not dry. Serve ready cod immediately.

Cod baked in the oven with onions and carrots

Ingredients:

  • cod - 1 pc .;
  • onions - 100 g;
  • carrots - 100 g;
  • tomatoes - 100 g;
  • sunflower oil - 20 g;
  • white pepper - pinch;
  • salt;
  • lemon juice - 20 ml.

Method of preparation

  • Clean the fish, cut off the head, gut without cutting the abdomen. Rub the outside and inside with salt and pepper, sprinkle with lemon juice. Put in the fridge for 20 minutes.
  • Cut onions and carrots into thin strips. Slice the tomatoes.
  • Cover the baking sheet with foil, place the fish. Stuff it tightly with vegetables. Lay the rest of the vegetables around. Sprinkle everything with vegetable oil.
  • Cover with foil. Put in preheated to 190-200 ° C oven. Bake 25 minutes. Then open the foil and leave the dish in the oven for another 15 minutes. Sprinkle greens with baked fish.

Ingredients:

  • cod - 1 pc. (1-1, 2 kg);
  • onions - 2 pcs .;
  • garlic - 5 cloves;
  • soy sauce - 2 tbsp. l .;
  • salt;
  • ground red pepper;
  • sunflower oil - 100 g;
  • flour - 70 g;
  • vodka - 20 ml.

Method of preparation

  • Clear cod, gut, wash, cut into large chunks.
  • Peel the onions and garlic, chop in a blender.
  • Mix with soy sauce, pepper, salt and vodka.
  • Spread the pieces of fish on all sides with this marinade. Put in the fridge for half an hour.
  • Breast the fish in flour. Fry on high heat on both sides until light crust.
  • Put on a baking sheet. Put in preheated oven to 200 degrees. Bake until fully cooked. Sprinkle with chopped greens.

Ingredients:

  • cod - 1 pc .;
  • mayonnaise - 40 g;
  • tomato paste - 40 g;
  • cheese - 150 g;
  • sunflower oil - 1 tsp;
  • salt.

Method of preparation

  • Clean the cod from scales, gut, wash. Cut into portions.
  • In a bowl, mix mayonnaise, tomato paste, salt and pepper. Coat the fish well with this mixture. Leave to marinate for 40 minutes.
  • Cover the form with foil, brush with oil. Put the pieces of fish, cover with the remaining marinade.
  • Place in an oven preheated to 190 ° C. Bake for 15 minutes.
  • Remove the pan. Sprinkle the fish with grated cheese. Again, send to the oven and cook another 15 minutes. During this time, the cheese will melt and lightly browned.

Cod is very helpful. It contains a lot of phosphorus, magnesium, calcium, copper, zinc, manganese, selenium and other trace elements. It is rich in vitamins A, C, D, E, K, and also vitamins of group B. In cod meat there is a lot of protein, valuable amino acids.
