The technique of making sweets “Raffaello” is quite simple with their own hands: they make a pasty cream, make balls into it that hide almonds, roll them in coconut chips and cool them. However, there are many variations of the cream. According to some recipes, it is made easy, on the other - a little more complicated. There are even recipes that allow you to make candies crispy, almost identical shopping. The technology of their preparation will be a little more difficult than usual. Regardless of the option of cooking home “Raffaello”, the result will meet the expectations, given the number of points.

  • Pay attention to the quality of the products. If the condensed milk turns out to contain vegetable fats, and instead of butter you take a cheaper spread, the cream may exfoliate, which makes it difficult to form balls of it, and they will not taste too pleasant or heterogeneous.
  • Coconut chips are better stocked up in larger quantities than indicated in the recipe. If the condensed milk is not thick enough, to thicken the cream will have to use more chips than indicated in the recipe. Sometimes breading this candy is also more breading than expected.
  • Almonds, before hiding inside the candy, must be peeled. To do this, you need to pour boiling water twice or three times, each time leaving for 5-10 minutes. After that, the husk will go away easily. Peeled nuts are dried in a dry frying pan or in the oven at a low temperature (120-130 degrees). This process takes only 10 minutes.
  • Before starting to form candies, it is advisable to cool the cream in the fridge a little, then it will become more dense and plastic.
  • “Raffaello” sweets are cooled before serving. If sweets remain after tea drinking, they should be put back in the refrigerator - they will melt at room temperature, they will become too soft and sticky.

The shelf life of “Raffaello” homemade candies is small - only three days, and then only when stored in the refrigerator.

The classic “Raffaello” recipe from condensed milk and butter

Composition:

  • sweetened condensed milk - 0, 38 kg;
  • butter - 180 g;
  • coconut chips - 150 g;
  • almonds - 30 pcs.

Method of preparation:

  • Remove the oil from the refrigerator in advance so that it softens.
  • Beat the butter with a mixer. Gradually add condensed milk and whisk to it, prepare the cream.
  • Add coconut flakes to cream - about half the amount specified in the recipe or a little more than half (75-100 g). Mix well.
  • Put the cream in the fridge for at least 2 hours. You can leave it in the refrigerator overnight.
  • Pour the almonds with boiling water, after 10 minutes drain the water. Pour nuts with a new batch of boiling water. After 10 minutes, drain the water, dry the nuts with a napkin, and remove the husks.
  • Pour the nuts on a baking sheet covered with parchment. Put in the oven, preheated to 120-130 degrees. Dry them for 10 minutes, stirring occasionally.
  • Divide the cream into approximately 30 equal parts.
  • From each part, form a small tortilla, put the almond kernel in the center, cover it with the edges of the cream, carefully form a ball.
  • Roll the balls in the remaining coconut chips, put them on paper candy sheets, put them in the fridge.

After 2 hours, the candies will harden enough, they can be served at the table.

Recipe “Raffaello” in wafer cases

Composition:

  • condensed milk - 0, 25 l;
  • butter - 150 g;
  • coconut chips - 150 g;
  • white chocolate - 160-180 g;
  • wafer tartlets in the form of small hemispheres - 50-60 pcs. (30-45 g);
  • almond kernels - 25-30 pcs.

Method of preparation:

  • Whip the softened butter with condensed milk, add 100 g of coconut chips to the mixture, put the cream in the refrigerator.
  • Melt 60-80 g of chocolate in a water bath. From the inside cover them with wafer tartlets. Put them in the fridge so that the chocolate froze. This is necessary so that after the waffles are not soaked with cream and remain crispy.
  • After half an hour, fill the halves with cream.
  • Peel and dry the nut kernels in a dry frying pan. Spread out on tartlets. Nuts should be put in every other tartlet. Instead of almonds, you can use hazelnuts or cashews.
  • Pair the tartlets in pairs: the pair should have one half with a nut, the second one without it.
  • Melt the remaining chocolate. Dip each candy in it, roll in coconut flakes.
  • Put sweets on paper backing and refrigerate for 2-3 hours.

Rafaello candies prepared according to this recipe are not very different from the store, but many prefer the option without a waffle shell, believing that it makes the delicacy less tender.

Simple Raffaello recipe from waffles

Composition:

  • coconut chips - 75 g;
  • condensed milk - 0, 25 l;
  • waffles with cream or coconut filling - 0, 25 kg;
  • almonds - 25 pcs.

Method of preparation:

  • Crush the waffles on a grater. If they are very soft and crumbly, you can crush them with your hands. You should not use a blender: it will turn waffles into too small crumb, because of which they will not be crispy and give the candies a unique taste.
  • Add 25 g of coconut chips to the waffles, mix.
  • Pour 150 ml of condensed milk to the resulting mass. Mix thoroughly. Put the cream in the refrigerator for several hours.
  • Form balls of cream dough by hiding the almond kernels into each one.
  • Dip each bead in condensed milk, roll in coconut flakes and put in the fridge again for 2-3 hours.

Despite the ease of preparation, sweets for this recipe are tasty and similar to the real “Raffaello”.

White Chocolate Rafaello Sweets

Composition:

  • fatty cream - 0, 2 l;
  • almonds - 100 g;
  • white chocolate - 100 g;
  • coconut flakes - 100 g;
  • butter - 30 g;
  • icing sugar - 50 g;
  • waffles (without filling) - 50 g;
  • salt - a pinch.

Method of preparation:

  • Melt the chocolate in a water bath or on a very slow fire, not allowing it to boil.
  • Add a pinch of salt and half of the coconut shavings in the recipe to the melted chocolate. Mix well and refrigerate for an hour.
  • Crush the waffles in a mortar to make a large crumb.
  • In a spoon of powdered sugar, roll nuts (it is advisable to clean them beforehand).
  • Fry the nuts until golden brown in melted butter, cool.
  • Whip cream into a thick mass, adding to them the remaining icing sugar.
  • Remove the cream from the refrigerator.
  • Scoop up the cream with a teaspoon, put a nut in it. Helping yourself with a second teaspoon, form a ball with almonds inside.
  • Dip the ball in a wafer crumb, coat it with whipped cream, sprinkle with coconut chips, place on a paper backing and put it in the fridge.
  • In the same way, make candies from the remaining products.

It is necessary to cool candies prepared according to this recipe in the refrigerator for a long time, at least 6-8 hours. If you put them in the fridge for the night, in the morning you can enjoy a pleasant tea.

“Raffaello” from cottage cheese with hazelnuts

Composition:

  • cottage cheese - 0, 5 kg;
  • egg yolk - 1 pc .;
  • sour cream - 80 ml;
  • butter - 60 g;
  • sugar - 100 g;
  • vanillin - 1 g;
  • coconut chips - 150 g;
  • hazelnuts - 100 g.

Method of preparation:

  • Curd the curd through a sieve.
  • Add softened butter and sour cream to cottage cheese, mix well.
  • Spread egg yolk with sugar. Combine with curd mass. Stir or even whisk.
  • Add vanilla, whisk again.
  • Hazelnuts fry in a dry frying pan, cool, peel.
  • Cool the curd in the fridge for an hour.
  • Form balls of cottage cheese cream by hiding a nut inside each.
  • Dip the cottage cheese balls in coconut chips, let cool in the refrigerator for several hours.

“Raffaello” cheesecakes are impossible to buy, they can be made only with their own hands, and this delicacy will be much more useful than the one sold in the store. Children indifferent to cottage cheese will almost certainly be happy to eat this airy dessert.
