Sweet & Sour Chicken

Chicken is tasty, healthy and affordable. It is prepared in almost every family. Dishes from it are diverse, and often their taste determines the sauce used. It is believed that gravy, which has a sweet-sour taste, can best emphasize the taste of chicken. Sweet and sour sauce for chicken is made on the basis of fruits, berries, tomatoes, often emphasizing the acidity of wine or vinegar, sweetening with sugar or honey. Liquid seasoning can be served separately or poured over the dish when serving. Sometimes the chicken is immediately cooked in this sauce, after using it as a gravy.

Cooking Features

There are quite a few variants of sweet and sour sauce, suitable for chicken. The technology of their preparation and composition may have significant differences. However, to obtain the best result, regardless of the selected recipe, knowledge of a few points is useful.

  • Berries and fruits are often used to make a sweet and sour sauce. Sometimes they are not enough to grind in a blender. For a smoother consistency, the berry or fruit mass is ground through a sieve. Some recipes involve chopping the fruit with a knife, then the sauce will come across their pieces, without compromising, but on the contrary, improving its organoleptic qualities.
  • If tomatoes are part of the sauce, they must first be rid of the skin and seeds, otherwise the sauce will not have a sufficiently smooth consistency. Peel the tomatoes will be easy to remove, if you cut it crosswise, lower the fruit for 2 minutes in boiling water, then quickly cool them by placing in a container filled with cold water. Seeds can be extracted with a spoon, cutting the fruit in half. By rubbing tomatoes through a sieve, you also get the desired result.
  • Often the sauce served to the chicken requires thickening. Most often used for this starch. Before combining with the sauce, it must be diluted with a cool liquid, and then pour, stirring, into the sauce. After adding starch to cook the sauce for more than 5 minutes is not recommended, otherwise it will again begin to become thinner.
  • If lumps form in the sauce, strain it through a sieve before serving.
  • Suitable for chicken sweet and sour sauce makes use of seasoning that is in harmony with its taste. Garlic, ginger, red pepper (spicy and paprika), turmeric, and rosemary are considered the most suitable.

Chinese Sour Sweet Chicken

Composition:

  • onions - 150 g;
  • ginger root - 40 g;
  • garlic - 2 cloves;
  • apple or grape vinegar (6 percent) - 20 ml;
  • refined vegetable oil - 20 ml;
  • soy sauce - 20 ml;
  • cane sugar - 20-40 g;
  • ketchup - 60 ml;
  • water - 40 ml;
  • potato starch - a large pinch;
  • fruit juice (orange or other) - 120 ml.

Method of preparation:

  • Peel the ginger root, chop it in a grater.
  • Garlic cloves, peeled, finely chopped with a knife.
  • Free the onions from the husk, cut into small cubes.
  • Heat oil in a saucepan, put onion and garlic in it. Fry the vegetables until they are soft.
  • Wipe the vegetables through a strainer.
  • Mix vegetable mass with grated ginger, sugar, ketchup and soy sauce. Dilute this mixture with fruit juice.
  • In a separate container, dilute the starch with clean cool water.
  • Place the bulk in a saucepan and put on a slow fire. Bring to a boil.
  • While stirring the sauce, pour the starch into it.
  • Cook the sauce for 2-3 minutes, remove from the heat.

It remains to strain the sauce, cool, and serve. It can also be used warm as a gravy.

Thai sour-sweet sauce to chicken

Composition:

  • onions - 100 g;
  • tomato sauce - 150 ml;
  • ginger root - 40 g;
  • sugar - 150 g;
  • apple cider vinegar (6%) - 100 ml;
  • refined vegetable oil - 40 ml;
  • flour - 30 g;
  • soy sauce - 40 ml.

Method of preparation:

  • Peel the onion and ginger root, finely chop it. Fry them in vegetable oil until soft. Sprinkle with flour, stir.
  • Combine sugar and vinegar in a separate container. Heat over low heat.
  • Add tomato sauce to the mixture, mix.
  • Pour the mixture into a saucepan with fried foods and flour. Mix thoroughly.
  • Continuing to mix the sauce with a spatula, cook it until you get the desired consistency.

Ready sauce is filtered and cooled. This seasoning has a strongly pronounced sweet-sour taste, therefore it is not suitable for use as a gravy. It is placed in a sauceboat and served to the chicken separately.

Hot & Sour Chicken Sauce

Composition:

  • sugar - 100 g;
  • salt - 10 g;
  • water - 50 ml;
  • garlic - 3 cloves;
  • potato starch - a large pinch;
  • table vinegar (9 percent) - 20 ml;
  • hot peppers - 1 pc.

Method of preparation:

  • Dissolve starch in 2 teaspoons of boiled water cooled to room temperature. Temporarily set aside.
  • Mix sugar with remaining water.
  • Pepper wash, remove the stalk, seeds and partitions. Crush pepper pulp with a knife.
  • Cut the garlic in small pieces.
  • Shredded vegetables, fill with sweet mass and grind the resulting mixture with a blender until smooth.
  • Put the syrup on a slow fire and heat, stirring, until the sugar has completely dissolved.
  • Add a few drops of starch, diluted with water, and mix thoroughly until the starch runs out.
  • Remove thickened sauce from heat and cool.

The sauce prepared according to this recipe has a sweet and sour and at the same time spicy taste. It is served to the chicken separately.

Sweet and Sour Chicken Sauce with Tomatoes and Pineapples

Composition:

  • tomatoes - 0, 2 kg;
  • canned pineapple - 50 g;
  • apple cider vinegar (6 percent) - 40 ml;
  • soy sauce - 120 ml;
  • water - 120 ml;
  • sweet pepper - 0, 2 kg;
  • tomato paste - 60 ml;
  • sugar - 25 g;
  • pepper - to taste.

Method of preparation:

  • Tomatoes boil in boiling water or blanch 2 minutes in boiling water. Cool, peel off. Remove the pulp with seeds. Cut the rest of the tomatoes into small cubes.
  • Cut the pepper into small pieces, after removing the seeds from it.
  • Cut the pineapple into small, small cubes.
  • Dissolve tomato paste with water, mix it with sugar, pepper. Add soy sauce and vinegar, mix.
  • Heat the mixture over low heat and boil for 5 minutes, stirring occasionally.
  • Add chopped vegetables and pineapples to the sauce. Extinguish it for 5-10 minutes.

In this sauce you can stew the chicken or use it as a gravy for poultry meat. Pineapple in this sauce can be replaced by an apple. The taste of the sauce from this will change, but will remain pleasant.

Chicken goes well with sweet and sour sauce. It is most often prepared on the basis of fruits or tomatoes, adding vinegar, sugar, soy sauce, ginger, garlic and other products. Chicken sauce can be served separately or serve as a sauce. There are so many recipes for this liquid seasoning that it is difficult not to find an option to taste.
