Beans are very popular in cooking, because they turn out tasty if they are stewed with meat or cooked without it, with vegetables. It can be the basis of first courses or salads, hot or cold appetizers. Beans are popular in different countries. Georgian recipes have gained wide popularity. In this country, the dishes from it are called “lobio”, which is translated from Georgian as “beans”. Especially often they cook red-bean lobio, as it has a not too dense shell and is well boiled soft. If you extinguish it a little longer, and then knead it, you get a dish with a unique taste. The name “lobio” stuck in this country precisely for this recipe. However, there are other popular recipes that are worth making the hostess in his cookbook.

Cooking Features

Knowledge of the recipe is sometimes not enough to prepare a delicious dish. After all, in fact, its taste and aroma determines not only the ratio of products. Subtleties cooking technology also play an important role.

  • Red beans for lobio must first be soaked for at least 5-6 hours, and preferably at night. This will allow you to cook it faster and at the same time eliminate the side effects that legumes have on the body, that is, flatulence.
  • If you want the beans to be softer, you can soak them not in water, but in beer.
  • Do not mix different varieties of beans, as they all have different cooking times.
  • Lobio, like all Georgian dishes, should be spicy and spicy. Otherwise, it will not lobio, but just a bean stew. Even if you do not eat spicy, nothing prevents you from using spicy herbs and fragrant spices: tarragon, savory, coriander, parsley, cilantro, garlic.
  • If you have a lot of beans, but few onions, do not start cooking lobio - there should be a lot of vegetables in this dish, among which the onion is the leader.
  • It is best to cook lobio in a thick-walled pot or cauldron. In this case, the beans will boil faster.

In Georgian cuisine, walnuts are one of the most popular products. The classic lobio recipe implies their mandatory use. However, there are recipes that allow you to cook lobio without nuts.

Classic red bean lobio recipe

Composition:

  • red beans - 0, 3 kg;
  • onions - 0, 25 kg;
  • tomatoes - 0, 3 kg;
  • walnut kernels - 120 g;
  • garlic - 3 cloves;
  • vegetable oil - 60 ml;
  • wine vinegar (3 percent) - 60 ml;
  • fresh coriander - 50 g;
  • dried mint - 10 g;
  • hops-suneli - 10 g;
  • salt - to taste.

Method of preparation:

  • Sort through, wash the beans. Fill it with water and leave for the night or for 6-8 hours if you started cooking lobio only in the morning.
  • Wash, dry the cilantro. Leaves scissors cut from the stems. Finely chop the stalks with a knife and cover with vinegar. Refrigerate at about the same time that the beans were soaked.
  • Wash the beans again, put them in a saucepan with a thick bottom. Fill with water so that its level is about a centimeter above the level of the beans. Put the pot on medium heat. When the water boils, turn down the heat, cover the pan with a lid. Boil the beans for 50-60 minutes, making sure that the water does not boil. If, after the beans are cooked, there is some water left in the pot, it will need to be drained.
  • Peel the onions and cut them into cubes that are not too large, but not too small.
  • Boil the water. Wash the tomatoes, make a cross-shaped incision on the side of the fruit opposite to the stem. Dip the tomatoes in boiling water, after 30 seconds, remove them with a slotted spoon and transfer them to a saucepan filled with cold water. Remove it again, dry with a napkin and peel off. Cut the seal near the stem, cut the tomato pulp into small cubes (about a centimeter).
  • Heat oil in a pan, put onion in it and fry it on low heat until golden brown.
  • Put the tomatoes on the onion and simmer it with them for about 10-15 minutes over low heat.
  • Chop walnut kernels thoroughly with a knife.
  • Chop the cilantro leaves.
  • Mix nuts and cilantro with vegetables, adding the stems marinated in vinegar.
  • Pour mint, hops-suneli, pepper and salt, while not forgetting that there is already pepper in hops-suneli.
  • Stir and simmer the mixture on low heat for another 10 minutes.
  • Transfer the vegetable mass to the pan to the beans, squeeze the garlic directly into it.
  • Set the saucepan on low heat and sweat red beans for about 15 minutes.

Served lobio, cooked according to the classic recipe, hot with warm corn cake. Instead of flat cakes, you can serve Georgian pita bread.

Lobio in Georgian

Composition:

  • red beans - 0, 2 kg;
  • onions - 0, 4 kg;
  • tomatoes - 0, 2 kg;
  • walnut kernels - 50 g;
  • garlic - 2 cloves;
  • hops-suneli - 15 g;
  • salt, greens - to taste.

Method of preparation:

  • Rinse pre-soaked beans, cover with water, salt it to taste. Put on a slow fire and cook, if necessary, adding water until the beans are melted and become completely soft.
  • Boil the tomatoes.
  • Cut the onion into small cubes.
  • Put the vegetables in the pan with the beans, add the hop-suneli into it, stir. Simmer all together for 20 minutes.
  • Chop garlic, nuts and greens with a knife. Add them to lobio, mix. Mash some beans with a spoon or “tolkushkoy”.
  • Then sweat red bean lobio on low heat for another 10 minutes.

Lobio in Georgian can be served both hot and cold.

Lobio with meat

Composition:

  • red beans - 0.5 kg;
  • tomatoes - 0.5 kg;
  • lamb - 0, 5 kg;
  • onions - 0, 3 kg;
  • garlic - 1 head;
  • vegetable oil - how much will leave;
  • dill, parsley, cilantro - to taste;
  • salt, pepper - to taste.

Method of preparation:

  • Soak the beans, after 6-8 hours, drain the water, put the beans in the pan, cover with clean water and cook until it is completely soft.
  • Wash, dry the meat. Cut it in small pieces and fry in hot oil for 30 minutes, do not forget to stir.
  • While the lamb is roasted and the beans are boiled, prepare the vegetables: pour boiling water over the tomatoes, peel and dice, and chop the onions, freed from the husk.
  • Add vegetables to the meat, season with salt, pepper, stew for 15 minutes.
  • Squeeze the garlic into the pan, put the finely chopped greens into it, mix. Extinguish 5 minutes.
  • Mash the beans and combine it with meat and vegetables. Then on fire for 10-15 minutes.

Lobio of red beans with meat served hot. This is a very tasty and satisfying dish.

Lobio of red beans with champignons

Composition:

  • red beans - 0, 25 kg;
  • fresh champignons - 0, 2 kg;
  • carrots - 100 g;
  • onions - 100 g;
  • soy sauce - 50 ml;
  • corn oil - how much will go;
  • pepper, greens, herbs - to taste.

Method of preparation:

  • Rinse the beans, cover with water and bring to a boil. Remove from heat and allow to cool. Drain water. Fill with boiled water, bring to a boil again and cook over low heat until cooked.
  • Wash, dry, and cut mushrooms into medium sized cubes.
  • Chop the peeled onion with a knife.
  • Carrots, peeling, grate finely.
  • Fry mushrooms with onions and carrots. Fry in oil over low heat until the liquid evolved from the mushrooms evaporates from the pan.
  • Chop the greens.
  • Add mushrooms with vegetables, herbs and soy sauce to the beans. Remember it, mix, put on low heat. Then cover with lid for 15 minutes.

Composition:

  • red beans - 0, 25 kg;
  • onions - 100 g;
  • carrots - 100 g;
  • sweet pepper - 100 g;
  • hot peppers - 1 pc .;
  • tomato paste - 15 g;
  • vegetable oil - how much will leave;
  • salt, seasonings - to taste.

Method of preparation:

  • Soak the beans in advance, rinse, cover with water and boil until ready.
  • Peel sweet pepper, cut into small squares.
  • Onion cut into small cubes, grate carrots coarsely.
  • Fry the onions and carrots until soft, add the sweet peppers with the tomato paste, stew for 5 minutes.
  • Transfer the frying to the pan with the beans, season with lobio and season with salt. Stir. Place the hot pepper in the top.
  • Set the pan on low heat and then 10 minutes. Take out the hot pepper, mix the beans.
