Tortillas are Mexican corn tortillas. Recently, they are increasingly done with the addition of wheat flour, which gives the dough elasticity. In Mexico, they are used for different purposes: they seize the soup, like bread, scoop the sauce, like a spoon, put it on each other, sandwiching and getting a kind of cake. Tortilla fillings usually have a complex composition, they are made from vegetables, meat, beans and other ingredients, mixing them and flavoring with sauce. The taste of the finished snack depends on what the corn cake is filled with, so the choice of recipe for the filling should be approached especially seriously.

Cooking Features

Today, tortilla is not a rare and inaccessible product in our country - it can be purchased at most major grocery stores. Even if there is no outlet near your house, on the shelves of which are corn tortillas, you can fry them yourself, since the recipe is simple and rare ingredients are not included in it. For this reason, to diversify the diet, including in the menu dishes of Mexican cuisine, every hostess can. Considering that there are a lot of recipes for tortillas filling, there will be no difficulty in choosing the right filler option. However, in order for the tortillas with the filling to be truly tasty, you need to know a few subtleties.

  • Tortilla with a filling must be spicy, as befits a Mexican dish. For this reason, regardless of whether the pepper or spicy sauce is included in the filler, sprinkle the red cake before putting the stuffing on it.
  • It is customary to serve tortillas hot, but together with the filling, which is applied in a significant amount, it will be problematic to fry them. Therefore, the tortillas and the filling are prepared or heated separately immediately before serving.

Stuffing for beans tortilla

Composition:

  • red beans - 0, 2 kg;
  • goat cheese - 50 g;
  • garlic - 3 cloves;
  • cilantro - 20 g;
  • coriander, ground red pepper, salt - to taste.

Method of preparation:

  • Pick and wash the beans. Fill the grain with water. This should be done in advance, as it is necessary to soak the beans in water for at least 3-4 hours, even overnight.
  • Drain, refill with new portion of liquid and set on fire. Boil the beans until cooked, that is, make it soft.
  • Drain excess water, leaving only a small part of it, and turn the beans into mashed potatoes using a blender.
  • Ceiling coriander seeds in a mortar with garlic. If desired, you can crush it with a hand press, and grind the seasoning in a coffee grinder.
  • Add garlic and coriander to the beans, salt and pepper to taste, mix.
  • Beat the beans in a blender again, but now with the cheese.
  • Finely chop the cilantro with a knife.
  • Heat the filling in the microwave or in a frying pan, put it on a sprinkled with peppercake, roll it up.

Sprinkle chopped greens before serving. It will not only decorate it, but also give a unique taste and aroma.

Tortilla stuffing with chicken and cheese

Composition:

  • chicken breast fillet - 0, 4 kg;
  • Bulgarian pepper - 100 g;
  • zucchini - 0, 2 kg;
  • onions - 100 g;
  • hard cheese - 150 g;
  • vegetable oil - as required;
  • salt, spices - to taste.

Method of preparation:

  • Wash chicken breast, dry with a napkin, cut into thin strips.
  • Peel and cut the onion into thin half-rings.
  • Wash the zucchini. If necessary, peel it and remove seeds. Cut into medium-sized bars.
  • Wash the pepper. Remove the stalk and seeds, cut into strips.
  • Coarsely grate the cheese.
  • Heat vegetable oil in a pan, put onion in it and fry until golden brown.
  • Add the chicken fillet and fry it with onion for 10 minutes. It must be fully prepared.
  • Remove the chicken fried from the onion from the pan, filling the plate with it.
  • Without pouring butter from the pan, put zucchini and pepper in it, fry them for 6-7 minutes, add salt and season to taste.

Put a spoonful of vegetables on the tortilla, flatten them slightly, place the chicken on top, sprinkle with cheese and roll into a coarse roll.

Stuffing for chicken tortilla with mushrooms

Composition:

  • chicken breast fillet - 0, 2 kg;
  • fresh champignons - 0, 2 kg;
  • onions - 100 g;
  • tomato - 150 g;
  • Bulgarian pepper - 0, 2 kg;
  • carrots - 100 g;
  • vegetable oil - as needed;
  • salt, red pepper - to taste.

Method of preparation:

  • The onions, freed from the husk, cut into small pieces, divide into 2 parts.
  • Boil chicken fillet until ready, cut into small strips.
  • Wash champignons, blot with paper napkins and cut into thin plates.
  • Peel Bulgarian pepper, cut into small strips.
  • Cut the tomatoes into cubes.
  • Heat the oil in a frying pan, dip half of the onions and mushrooms into it. Cook them over low heat, stirring occasionally, until all the moisture released from the mushrooms has evaporated from the pan.
  • Fry the remaining onion with carrots in another pan. When they get a golden hue, add chicken fillet to them and fry it for 5 minutes.
  • Add pepper with tomatoes, salt and pepper. Stew for 2 minutes.

Put the vegetables and chicken on the tortilla in the first layer, put a spoonful of mushrooms on top. After that, roll the cake into a bulk roll. Also fill the remaining tortillas.

Tortilla with canned beans and corn

Composition:

  • canned beans - 0, 4 kg;
  • avocados - 1 pc .;
  • canned corn - 0, 2 kg;
  • onions - 100 g;
  • lettuce leaves - by the number of tortillas;
  • sour cream - 50 ml;
  • tomato sauce - 50 ml;
  • hard cheese - 150 g;
  • vegetable oil - as required;
  • salt, spices - to taste.

Method of preparation:

  • Cut the pulp of avocado into thin slices.
  • Turn half the beans into a puree using a blender.
  • Add ketchup and sour cream to the bean puree, mix. At this stage, season and salt the filling to taste.
  • Mix the bean sauce with the corn and the remaining beans.
  • In vegetable oil fry the onion cut into small cubes.
  • When the onion has a golden hue, place the bean mass on it and fry.
  • Add the avocado, stir and heat for 2-3 minutes.

Place a piece of lettuce on each tortilla, put the filling on it, smooth it out, sprinkle with coarsely grated cheese. Wrap the stuffing in a tortilla and serve it to the table.

Fruit filling for tortilla

Composition:

  • bananas - 0, 3 kg;
  • strawberries - 150 g;
  • fatty cream - 100 ml.

Method of preparation:

  • Go through the berry. Wash while removing sepals. Cut into large chunks.
  • Peel the bananas and cut their flesh into medium sized cubes.
  • Whip cream.
  • Mix bananas and berries with whipped cream.
  • Put the fruit salad on a flat cake, roll it up.

It is not necessary to pepper or warm up the tortilla with fruit filling. You can serve it for dessert, although it is quite capable of replacing the whole breakfast.
