For the winter, this so-called “jam” is made by many precisely because it does not undergo heat treatment, which means that the vitamins contained in blueberries are not destroyed. However, in order to keep such a jam without boiling for a long time, you need to follow some recommendations.

The principle of cooking blueberries, mashed with sugar, is identical to the preparation of similar preparations for the winter from other berries.

  • Remembering that blueberries will not boil, it should be washed and sifted very carefully. Not a single speck, unnoticed leaflet or spoiled berries should get into “cold jam”. Otherwise it will quickly spoil everything.
  • The requirements for cleanliness also apply to dishes used in the preparation and storage of berries. Spoons, pots, jars, lids, blender parts, or other equipment for chopping blueberries should be clean. It is important to remember that aluminum dishes are absolutely not suitable for cooking berries. Preference is given to glass, ceramics, wood and stainless steel. Banks and covers should be sterilized.
  • The preservation of the berries in this case provides sugar, so you can not save on it. Sugar should be used no less than specified in the recipe. Additionally, in each jar you can pour a little sugar over what is listed in the recipe. Cover the berry with a fairly centimeter layer of sugar.
  • Store blueberries, ground with sugar, in a cool place. In a city apartment there is one place - a refrigerator.   • Spread out in sterilized jars or clean containers. Tightly tighten the jars with metal lids.
  • Store the sweet billet for the winter in the fridge or freezer.

Blueberry has a lot of pectin, so “cold jam” is thick from it. It is well suited for baking, it can be spread on toast instead of confiture.

Blueberry grated with strawberries and sugar

Composition:

  • blueberries - 0.5 kg;
  • strawberries - 0.5 kg;
  • sugar - 1 kg;
  • icing sugar - 0, 25 kg.

Method of preparation:

  • Gently, in order not to damage the berries, wash the blueberries and strawberries, after carefully examining them, in order to get rid of the spoiled copies.
  • Pure berries in any way convenient for you, based on what equipment is available in your kitchen.
  • Sprinkle sugar, stir. Cover with a cloth and wait a couple of hours.
  • Spread out in sterile jars.
  • Sprinkle icing sugar over the jars on top of the berry mass. You can not only buy it, but also make it yourself. To do this, you need to grind granulated sugar.
  • Seal up containers (roll up). Clean for the winter.

It is possible to store “cold jam” of blueberries and strawberries only in a cool place, it will quickly deteriorate at room temperature.

Blueberries grated with black currant and sugar

Composition:

  • blueberries - 0, 7 kg;
  • black currant - 0, 5 kg;
  • granulated sugar - 1, 5 kg.

Method of preparation:

  • Pick blueberries and rinse them well. Drain.
  • Wash the currant, first sifting through and removing the stalk. Put on a napkin to get water from her glass.
  • Chop the berries together.
  • Mix with sugar. After 2-3 hours, mix the berry mass and place it in prepared jars. Close them.

Such “jam” is also stored in the cold. It turns out it is sour, which gives it a black currant. The alliance of vitamin A, which is abundant in blueberries, and vitamin C, which is particularly rich in black currants, makes blueberry-currant delicacy a powerful weapon against the flu and cold.
