Products for short pastry use cold. Before rolling, the dough is cooled in the main chamber of the refrigerator for 30-60 minutes or put in a freezer for 10-20 minutes.   • The filling for tartlets should not be very liquid. Juice of berries can soak the dough, making the baskets little appetizing. If the filling is juicy, put it in baskets just before serving. Composition:

  • flour - 0, 25 kg;
  • butter - 150 g;
  • sugar - 60 g;
  • salt - a pinch;
  • cold water - 20 ml;
  • chicken egg - 1 pc.

Method of preparation:

  • Sift flour, mix it with sugar and salt.
  • Remove the oil from the refrigerator. Grate it with grated large cells directly on the flour.
  • Pound the flour with butter to a crumb.
  • In a separate container, combine the egg with water, whisk together.
  • Pour the egg mass to the flour crumb, stir with a spatula.
  • Knead the dough with your hands, trying to do it as quickly as possible.
  • Wrap the dough in cling film and put it in the fridge for an hour.
  • Roll the dough into a layer 4-5 mm thick. Cut out circles with a diameter slightly larger than the size of the cake pan.
  • Spread the dough sheets in molds, press it to the sides and bottom.
  • Pierce the bottom with a fork, put special baking balls in the baskets or put peas in them. This is to ensure that the bottom of the baskets does not rise during baking.
  • Heat the oven to 200 degrees and put the dough into it. Bake items for about 15 minutes until they get a delicious color.
  • Remove the molds from the oven, let them cool for 5-10 minutes. Remove the sand baskets from the molds. Leave on the rack until cool.

Baskets made of sweet shortcrust pastry are tasty by themselves, but in order to get real cakes, these products must be filled with berries, cream or another filling.

Tartlets with custard and strawberries

Composition:

  • chicken egg (yolks only) - 5 pcs .;
  • milk - 0, 5 l;
  • sugar - 80 g;
  • vanilla sugar - 10 g;
  • strawberries - 0, 3 kg;
  • shortbread dough baskets - 12-15 pcs.

Method of preparation:

  • Mix milk with regular and vanilla sugar, heat to about 80-70 degrees, remove from heat.
  • Separate yolks from proteins. Place the proteins in a clean container and put them in the fridge - they will not be needed for this recipe, but they can be used to prepare other dishes.
  • Whisk the yolks.
  • Continuing to whisk yolks, pour warm milk into them in a thin stream.
  • Place the resulting mixture in a slow fire or in a water bath. Heat it by stirring until the mass reaches the consistency of the cream.
  • Allow the cream to cool. To speed up the process, a container with it can be placed in a bowl of cold water.
  • Place cooled cream in a culinary bag, deposit the cream in shortcrust dough baskets.
  • Wash strawberries, let them dry. Cut each berry into 2-4 pieces depending on their size.
  • Spread strawberries on tartlets.

Tartlets with custard and strawberries are moderately sweet. They smell seductively and look appetizing. Not only children, but also adults will not refuse such a treat.

Tartlets with custard and wild berries

Composition:

  • egg yolks - 2 pcs .;
  • milk - 0, 25 l;
  • flour - 25 g;
  • lemon peel - 5 g;
  • sugar - 60 g;
  • vanilla sugar - 10 g;
  • strawberries, blueberries, cranberries - 50 g each;
  • mint (optional) - for decoration;
  • shortbread dough baskets - 6 pcs.

Method of preparation:

  • Put lemon zest in the milk. Bring it to a boil. Cool to 60 degrees and strain.
  • Combine the egg yolks with sugar (regular and vanilla), whisk together.
  • Continuing to beat the yolk mass, add the flavored milk and flour into it.
  • Put the mixture on a slow fire. Heat it by stirring it until it thickens. Thanks to the flour this will happen quickly.
  • Cool the cream, fill it with a cooking bag or a plastic bag. With the help of these devices, spread the cream in baskets.
  • Sort through, wash the berries. Wait until they dry out.
  • Spread the berries on tartlets.

It remains to decorate the cakes with mint leaves and serve. Berries can be sprinkled with powdered sugar, then the dessert will be even more appetizing and sweet.

Tartlets with yogurt cream, chocolate and prunes

Composition:

  • shortbread dough baskets - 10-12 pcs .;
  • pitted prunes - 10-12 pcs .;
  • dark chocolate - 150 g;
  • cream with fat content of 33% - 0, 2 l;
  • yogurt with prune flavor - 100-125 ml;
  • icing sugar - 60 g;
  • instant gelatin - 10 g;
  • water - in the amount specified by the manufacturers of gelatin;
  • walnut kernels - 150 g.

Method of preparation:

  • Drain the prunes, cover with hot water. After 10 minutes, drain the water, dry the steamed dried fruits with a towel.
  • Break the kernels of walnuts, put a piece in each of the prunes.
  • Put the remaining nuts in a bag and roll them with a rolling pin so that they turn into nut chips.
  • Break a chocolate bar (80-100 g) and melt it in a water bath, adding 1-2 teaspoons of cream.
  • Dip each fruit of one of the sides into melted chocolate, then - in a nut crumb. Put the glazed dried fruit in the fridge.
  • Tartlets turn upside down, dip the edges in chocolate and nuts. Return the baskets to their normal position and put them in the refrigerator too.
  • Dilute gelatin with water, focusing on the manufacturer's instructions.
  • Whip cream to steady peaks. Put sugar powder on them. It should be added gradually, one spoon each.
  • Combine whipped cream with yogurt.
  • Pour loose gelatine into cream and yoghurt, mix, beat with a mixer.
  • Put the cream in the refrigerator for 10 minutes, then spread it out on tartlets using a pastry bag.
  • In the center, stick the prunes with the glazed side up.
  • Grate the remaining chocolate, sprinkle chocolate chip on the cakes.

Dessert prepared according to this recipe has a unique taste, it is impossible to buy a similar cake in the store.

Tartlets with chocolate and apples

Composition:

  • tartlets - 6-8 pcs .;
  • dark chocolate - 40 g;
  • butter - 20 g;
  • cream with fat content of 33% - 150 ml;
  • apple (peeled) - 170-190 g;
  • sugar - 40 g;
  • cocktail cherries - 6-8 pcs.

Method of preparation:

  • Apple wash, peel, remove the seed box.
  • Cut apple pulp into slices, sprinkle with sugar, pour cream in the amount of two tablespoons.
  • Place the form with apples in the oven, preheated to 180 degrees. Bake the fruit until soft, whisk in a blender.
  • Heat the remaining cream, not allowing it to boil.
  • Add broken cream into small pieces or even grated chocolate.
  • While stirring, wait until the chocolate has melted.
  • Add softened butter, stir until a homogeneous composition is obtained.
  • Spread chocolate ganache in baskets.
  • Wait a little while for the chocolate to harden.
  • Place the apple puree in a culinary bag, spread it on baskets filled with chocolate.
  • Decorate the baskets with cocktail cherries.

Dessert for this recipe is slightly unusual, but tasty. Especially it will appeal to chocolate lovers.

Sweet baskets made of shortbread or other dough, filled with thick sweet cream, chocolate, jam, berries or fruit, are much tastier and even healthier than most cakes sold in the store.
