A simple recipe for cooking zucchini, popularly known as “Italian zucchini”, with a delicate stuffing of ground beef.
Baked aromatic vegetable cucurbita pepo - the scientific name of the squash from the pumpkin kind, looks like a cucumber. This is zucchini. Green or yellow European varieties in the recipe can be replaced by small young squash with delicate skin.
You will need:
- 400 g ground beef (5% fat);
- 2 zucchini (zucchini), it is desirable to choose thin, rounded, smooth fruits;
- 200 g tomato gravy;
- 2 tablespoons of olive oil;
- 30 grams of grated hard Italian Parmesan cheese;
- 1 onion (preferably shallots);
- herbal seasonings: thyme, basil.
Stuffed zucchini in the oven: cooking recipe
1. Rinse fresh small zucchini and cut along the cylindrical shape into two halves. With the help of a spoon, clean each half of the zucchini from the pulp - you get two “boats”.
2. Grind tender, juicy flesh. Onions (or shallots taste sour-sweet), peel the garlic, finely chop.
3. Heat two tablespoons of olive oil (it is olive oil), in a frying pan with a thick bottom. Add the minced meat and fry the onion, garlic and chopped zucchini pulp for five minutes, until the filling changes color by mixing them with a fork. Sprinkle with thyme and chopped sweet cornflower. Salt and pepper add with a sense of proportion.
4. Each half is filled with prepared minced meat. Place them in a refractory baking dish.
5. Pour zucchini tomato sauce. And you can bake the dish for 30-40 minutes, exposing the heat of the preheated oven at 200 degrees.
6. Just a couple of minutes before being ready, sprinkle zucchini with minced meat with grated parmesan cheese. Bake the dish under the grill until crispy.
7. Basmati rice is suitable as a side dish.
