Instant marinated cucumbers in the summer season are one of the most sought after snacks. They have a fresh aroma, shaded by spicy herbs and skillfully selected spices, they look bright and appetizing. They can be served as a separate dish or supplement them with a side dish. A good idea would be to use pickled cucumbers for salads in a fast way. It will take quite a bit of time to prepare the snack, and it will be ready for use in just a few hours.

Cooking Features

Even a novice cook can pickle cucumbers in a fast way. The result will certainly meet the expectations, if the cook will know and take into account a few moments.

  • You can pickle cucumbers in a hot and cold way. The use of hot marinade helps speed up the process, but does not preserve the fresh, bright color of cucumbers. It is advisable to use it if you want to quickly marinate the whole fruit. If you want vegetables to retain their original color, choose recipes that include the use of cold marinade.
  • Young and ripe cucumbers can marinate in a fast way. Mature fruits are peeled with a peeler, otherwise the appetizer will have a coarse taste. Similarly, it is recommended to do with bitter fruit.
  • The smaller the sliced ​​vegetables, the faster they marinate. Cucumbers cut into circles or bars. The latter are obtained by cutting the fruit lengthwise into 4 parts and cutting them into pieces 4-6 cm long.
  • Pickling cucumbers can be in glass jars and forms, plastic containers, packages. Metal utensils can give a snack a bad taste. Moreover, aluminum reacts with acids, resulting in the formation of harmful substances. If you use a package for cooking snacks, it is better to take two and put them into each other to prevent leakage. If you are not sure that the marinade does not leak through the bag, place a plate under it.

Pickled quick-cooking cucumbers are usually ready to be consumed after 3-4 hours, but they get the most pleasant taste in about a day.

A simple recipe for instant pickled cucumbers

Composition:

  • cucumbers - 1 kg;
  • water - 1, 5 l;
  • salt - 60 g;
  • sugar - 10 g;
  • allspice - 10 pcs .;
  • carnation - 5 pcs .;
  • horseradish leaves - 2 pcs .;
  • garlic - 10 cloves;
  • Dill umbrellas - 5 pcs .;
  • table vinegar (9 percent) - 80 ml.

Method of preparation:

  • Wash the cucumbers. If they are slightly wilted, soak them for an hour in ice water.
  • Put the cucumbers in the pan, do not cut the tails.
  • Cut the garlic into plates, pour it into cucumbers.
  • Spread on cucumbers pieces of shabby leaves, fennel sprigs.
  • Boil water, dissolve salt and sugar in it.
  • Add the cloves and pepper. Boil for 5 minutes.
  • Pour in vinegar, stir. Remove the marinade saucepan from the heat.
  • Fill the cucumbers with hot marinade. Leave to cool in the room.
  • When the marinade has cooled, move the jar of cucumbers to a cool place.

After 6 hours you can take a sample, but if you wait an extra day, pickled cucumbers will become even tastier.

Instant pickled cucumbers in honey marinade

Composition:

  • cucumbers - 0, 5 kg;
  • water - 20-30 ml;
  • apple cider vinegar (6%) - 50 ml;
  • honey - 20 ml;
  • salt - 20 g;
  • mustard powder - a large pinch.

Method of preparation:

  • Pound salt with honey, it will acquire a liquid consistency from it.
  • Add the mustard, having previously diluted it with a spoonful of warm water, and vinegar.
  • Stir. Temporarily set aside the marinade.
  • Wash the cucumbers, dry them with a napkin. Cut into large pieces of oblong shape. Put in the package.
  • Add marinade to cucumbers.
  • Tie the package well, shake it.
  • Store the bag of cucumbers in a cool place.

In an hour, this spicy cucumber snack in honey marinade can be served.

Instant pickled cucumbers with soy sauce

Composition:

  • fresh cucumbers - 1 kg;
  • chili pepper - 1 pc .;
  • dill - 8-12 branches (by the number of cucumbers);
  • water - 0, 75 l;
  • sugar - 80 g;
  • soy sauce - 60 ml;
  • vegetable oil - 50 ml;
  • apple cider vinegar (6%) - 50 ml;
  • salt - 60 g.

Method of preparation:

  • Wash cucumbers, blot with a napkin. Cut the fruit crosswise along, but not to the end. Leave uncut only about 2 cm long.
  • Sprinkle the cucumbers with salt, using only one tablespoon at this stage.
  • Wait 40 minutes. Drain the bottom fluid.
  • In each cucumber, insert a branch of dill.
  • Spread the pepper rings on top.
  • Boil water, dissolve the remaining salt and sugar in it, let cool to room temperature.
  • Heat oil in a frying pan, pour cucumbers on it, and mix gently.
  • Add soy sauce, mix again.
  • Pour vinegar in the cooled brine, mix.
  • Pour pickle on cucumbers. Cover with a lid. Leave for a day at room temperature.

A day later, cucumbers can be served, added to salads. For further storage, the container with the snack must be moved to the refrigerator.

Quick pickled cucumbers with onions and sweet pepper

Composition:

  • cucumbers - 0, 5 kg;
  • onions - 100 g;
  • Bulgarian pepper - 100 g;
  • table vinegar (9 percent) - 100 ml;
  • salt - 10 g;
  • sugar - 0, 2 kg.

Method of preparation:

  • After washing and drying cucumbers with a napkin, cut off their tips. Cut the vegetables in circles with a thickness of about 0, 5 cm. If the cucumbers are large, they must first be peeled. Cutting large vegetables is recommended not in whole circles, but in their quarters.
  • At the pepper, remove the stem together with the seeds. Rinse the pulp, blot with a napkin, cut into half rings. Put in a container with cucumbers.
  • Free onion from the husk, cut into thin half-rings, add to other vegetables.
  • Stir in sugar and salt with vinegar. Bring to a boil.
  • Stir vegetables, put them in a jar or other container suitable for pickling.
  • Pour marinade. An hour later, remove the jars of cucumbers in the refrigerator.

This snack will be ready for use in a day. It will become tastier and more fragrant if it is supplemented with dill, parsley, and cilantro.

Marinated instant cucumbers are suitable for potatoes, meat dishes. They can be served separately, along with a side dish, used to make salads. Pickling cucumbers in a fast way can be both slices and whole.
