Potato pancakes like to cook many, but tasty and nourishing pancakes can be made not only from potatoes. Zucchini fritters are no less tender and appetizing, they also perfectly satisfy hunger. Zucchini pancakes are easy to cook, but it is impossible to make them really tasty and appetizing unless you know a few simple rules.

  • Squashes do not belong to vegetables that contain a lot of starch, so the dough based on them is always required to be thickened with components that impart viscosity. It can be potato or corn starch, wheat flour, eggs.
  • Young zucchini are more watery than large ones. For this reason, the last for making pancakes are more suitable. However, you can also make pancakes from young vegetables, if you squeeze them after grinding on a grater. If this is not done, flour must be added more than when using large zucchini.
  • Putting dough from zucchini into the pan is usually advised with a tablespoon. It fits the optimum amount of dough so that the pancakes are neat and baked well.
  • You should not spread the dough from zucchini to the pan, if it is not heated: zucchini will spread and burn, will not be lush. First, heat the pan, wait until the butter boils, and only then lay out the dough. Only in this case, squash fritters turn out to be rosy and beautiful, they will be easy to turn over.
  • The dough for squash fritters can be made quite cool by adding cottage cheese and some other products. In this case, they can not only fry in a frying pan, but also bake in the oven. Otherwise, bake already fried pancakes.

It is best to serve squash pancakes with sour cream or garlic sauce based on it.

Classic recipe of squash fritters

Composition:

  • zucchini - 0.5 kg;
  • chicken eggs - 2 pcs .;
  • wheat flour - 40-60 g;
  • salt, black pepper - to taste;
  • vegetable oil - as needed.

Method of preparation:

  • Wash, peel the zucchini or one large enough zucchini. Cut the vegetables lengthwise and remove the seeds from them with a spoon.
  • Grate the flesh of zucchini on a fine grater, which is usually used for cooking pancakes.
  • Salted zucchini puree and leave for 10 minutes.
  • Using the gauze folded in several layers, squeeze the squash puree, removing excess juice.
  • Break eggs into zucchini in a bowl, pepper and mix well.
  • Add flour and stir until the paste is smooth.
  • Heat vegetable oil in a pan. Tablespoon put the dough in the pan, leaving the distance between the future pancakes.
  • When the pancakes are completely fried on one side and you notice that the top layer of dough has become thick enough, turn the pancakes over with a spatula. Fry them a couple of minutes from the second side and remove from the pan.

To remove excess butter and make the dish less nutritious, pancakes can be spread on a napkin that will absorb excess fat. This recipe can be considered basic, since on its basis it will be possible to prepare many tasty variants of squash fritters.

Sweet zucchini pancakes

Composition:

  • zucchini - 0.5 kg;
  • wheat flour - 60-80 g;
  • sugar - 20 g;
  • salt - at the tip of a knife;
  • eggs - 2 pcs .;
  • vegetable oil - as required.

Method of preparation:

  • Peel zucchini, after washing them, of peel and seeds. Finely rub and squeeze.
  • Add sugar and eggs, stir well.
  • After the mass becomes homogeneous, add flour and salt, stir it so that the dough is lump free.
  • Heat oil in a pan. Spoon the dough.
  • Fry the pancakes on both sides until a brown crust appears.

Sweet zucchini pancakes can be served, as usual, with sour cream, or with condensed milk. This option will especially appeal to children.

Zucchini Fritters with Minced Meat

Composition:

  • zucchini - 0.5 kg;
  • minced meat - 0, 3 kg;
  • onions - 0, 2 kg;
  • chicken egg - 2 pcs .;
  • wheat flour - 50 g;
  • salt, spices - to taste;
  • vegetable oil - as needed.

Method of preparation:

  • Peel the onion and grate it on a coarse grater.
  • Add the onion, salt and spices to the mince, mix.
  • Wash the zucchini. Peel off the peeler, cut and remove the seeds with a spoon.
  • Grate the squash pulp and mix with the minced meat.
  • Beat in the mince raw chicken eggs.
  • Add flour and stir until smooth.
  • Add oil to the pan, heat it.
  • Put a few spoons of zucchini and minced meat into boiling oil, leaving a small space between the pancakes.
  • Cover the pan and fry the pancakes for 4-5 minutes.
  • Turn the pancakes over with a spatula and fry on the other side for another 2-3 minutes.

Zucchini pancakes with minced meat are especially tasty and nourishing. They are very good if the stuffing for them is used not purchased, but made by hand from two or three kinds of high-quality meat.

Zucchini Fritters with Onions

Composition:

  • zucchini - 0.5 kg;
  • onions - 0, 2 kg;
  • chicken egg - 1 pc .;
  • wheat flour - 150 g;
  • salt, seasonings, dried herbs - to taste;
  • vegetable oil - as required.

Method of preparation:

  • Wash, clean the zucchini. Cut them in half lengthwise, remove the seeds. Make it comfortable with a spoon of the right size.
  • Cut the zucchini into large chunks and chop with a blender.
  • Peel the onions, cut each onion into 6-12 pieces. Put the onion pieces in the blender bowl and chop them. Mix onion puree with zucchini.
  • Beat an egg into the vegetable mass, add salt, seasonings, dried herbs.
  • Sift the flour and, gradually adding it to the vegetable mass, prepare a homogeneous dough consistency.
  • Fry zucchini-onion pancakes in a frying pan in boiling oil.

Zucchini fritters with onions are best combined with sour cream. In this case, you should not add garlic in it, since it will kill the taste and aroma of the fritters themselves.

Zucchini fritters on yogurt

Composition:

  • zucchini - 0.5 kg;
  • kefir - 0, 5 l;
  • salt - 2-3 g;
  • sugar - 2-3 g;
  • flour - 0, 32 kg;
  • soda - 5 g;
  • chicken egg - 2 pcs .;
  • fresh parsley - 50 g;
  • garlic - 1 clove;
  • ground black pepper to taste;
  • vegetable oil - as needed.

Method of preparation:

  • In sifter pour kefir, mix, leave for some time in a warm place.
  • Clean courgettes from peel and seeds. Finely rub, add salt and sugar to them. Leave for a quarter of an hour.
  • Drain the juice released from zucchini, squeeze zucchini mass.
  • Squeeze the garlic into the zucchini bowl.
  • Finely chop the parsley and mix with the zucchini. Add pepper to them.
  • Pour kefir into a clean bowl, break eggs into it and mix thoroughly.
  • Pour the kefir into the container with zucchini, mix.
  • Sift the flour and, gradually pouring it into the vegetable mass with kefir, knead the dough.
  • Fry the pancakes, forming them with a spoon, in boiling oil until golden brown.

Finished pancakes are best served with sour cream. If you add garlic and herbs to sour cream, it will be even tastier.

Squash with garlic

Composition:

  • zucchini - 0.5 kg;
  • garlic - 5 cloves;
  • chicken egg - 2 pcs .;
  • bulb onion - 150 g;
  • fresh dill - 50 g;
  • salt - to taste;
  • flour - 100 g;
  • vegetable oil - as required.

Method of preparation:

  • Peeled and peeled zucchini seeds, rub on a coarse grater.
  • Finely chop the onion, freeing it from the husk.
  • Chop the dill.
  • Pass the garlic through the press.
  • Mix vegetables and greens.
  • Break the eggs into the bowl with the vegetable mixture, stir everything until smooth.
  • Salt, pepper and add the sifted flour. Stir until the mass becomes homogeneous, without lumps.
  • Fry the zucchini pancakes in boiling oil, browning them on both sides.

Zucchini pancakes made according to this recipe can be served not only as an independent dish, but also as a side dish for meats.

Lenten zucchini fritters

Composition:

  • zucchini - 0.5 kg;
  • wheat flour - 150 g;
  • salt, pepper - to taste;
  • fresh greens - to taste;
  • vegetable oil - as required.

Method of preparation:

  • Chop peeled zucchini grated on a grater with large holes.
  • Chop the greens, add to the zucchini.
  • Pour flour, salt and pepper. Stir with a mixer.
  • Fry the pancakes, forming them with a tablespoon, in a hot frying pan in a large amount of butter on both sides.

You can serve such pancakes with mayonnaise or with no sauce at all - they will still be juicy and tender. If desired, such squash fritters can be combined with mushrooms or fresh tomatoes - the taste will be quite harmonious.

Fritters of zucchini can be cooked at any time of the year, especially since they are not only young zucchini. It is easy to prepare them, so the novice cook will cope with the task. At the same time, the dish will be inexpensive, especially if it is made in the summer season, when zucchini is affordable.
