Cucumbers can not only be pickled whole, but also closed for the winter in the form of salads. One of the popular snacks are Georgian cucumbers, canned in a garlic-tomato sauce, thanks to which vegetables acquire a slightly savory taste and mouth-watering aroma. The workpiece is not considered difficult to prepare, even an aspiring hostess can make it.

Cooking Features

Georgian cucumbers are one of the simplest preparations for the winter. For its preparation does not require outstanding culinary skills and a great experience in home canning. It is enough to take into account a few points and adhere to the recommendations accompanying the selected recipe.

  • Both young and mature fruits are suitable for cooking cucumbers in Georgian, but the salad from overgrown vegetables will be less pleasant to taste than from small ones. Overripe fruits before use must be cleaned from the skin and from large seeds. Cut them into medium-sized bars. Georgian-style young cucumbers for salad are cut into circles about 0.5 cm thick.
  • To make the appetizer savory, garlic is added to it at one of the final stages of cooking. If it is subjected to heat treatment for more than 5 minutes, it will lose its sharp taste, passing only a specific flavor to the snack. Vinegar is also added to the marinade shortly before it is ready.
  • Tomato sauce for pouring cucumbers can be prepared both from fresh tomatoes and from tomato sauce. The second option is easier, but the snack on it turns out less tasty and fragrant.
  • To give the salad a flavor typical of Georgian dishes, add coriander, hops-suneli, pepper, and sometimes cilantro.
  • Banks for snacks must not only be washed, but also sterilized. Covers use only metal, providing tightness. They should also be sterilized by boiling.
  • Often, winter snacks are turned over and covered with a blanket after closing. Cooling down in a steam bath, they are subject to additional preservation, after which they stand better. If it is important for you to keep cucumbers in a crispy snack, you can skip this step by cooling the canned food at room temperature, without wrapping.

It is possible to store cucumbers in Georgian at room temperature, but they will stay longer in a cool room. The minimum shelf life of the workpiece is 12 months.

Classic Georgian cucumber recipe

Composition (1 l):

  • cucumbers - 1 kg;
  • tomatoes - 0, 6 kg;
  • garlic - 5 cloves;
  • salt - 25 g;
  • table vinegar (9 percent) - 60 ml;
  • hops-suneli - 5 g;
  • red pepper (spicy) - to taste.

Method of preparation:

  • Wash cucumbers, soak for 1-5-2 hours in cold water to make them more crispy. Rinse again, dry with a towel. Cut into circles or bars. If the fruits are large, do not forget to peel them and seeds.
  • Tomatoes boil, peel. Pulp into small cubes or chop with a blender to the consistency of mashed potatoes.
  • Bring the tomato mixture to a boil over low heat. Add salt, pepper and hops-suneli, mix. Extinguish 10 minutes, stirring occasionally.
  • Dip cucumbers in tomato paste. Wait until it boils again. Cook the cucumbers for 5 minutes.
  • Crush the garlic cloves with the flat side of a knife, finely chop. Together with vinegar add to snack, mix.
  • Keep the snack on slow fire for another 2-3 minutes. Remove the pot from the stove.
  • Sterilize the jars and their lids.
  • Fill the jars with cucumbers, fill them with marinade remaining on the bottom of the pan.
  • Roll banks, flip. Cover with a blanket and wait for the morning, after which the snack can be removed for permanent storage in the pantry.

The cucumbers made according to this recipe can be served even to the holiday table: they look colorful, exude a seductive aroma and have a pleasant savory taste.

Georgian Cucumbers with Chilli Peppers and Greens

Composition (1 l):

  • cucumbers - 0, 8 kg;
  • tomatoes - 0, 7 kg;
  • garlic - 10 cloves;
  • hot peppers - 2 pcs .;
  • salt - 20 g;
  • sugar - 10 g;
  • vegetable oil - 60 ml;
  • table vinegar (9 percent) - 60 ml;
  • fresh coriander - 50 g;
  • ground coriander - 5 g;
  • hops-suneli - 15 g.

Method of preparation:

  • Cucumbers, washed and dried, cut into circles.
  • Tomatoes, after pouring boiling water, peel, cut into slices.
  • Peppers are cleaned of seeds and partitions. If you like very sharp snacks, you can not remove the seeds.
  • Wash the greens, let it dry.
  • Mince tomatoes, cilantro and hot peppers through a meat grinder.
  • Grind the garlic mashed potatoes separately.
  • Combine the tomato and pepper puree with salt, sugar and butter. Over low heat bring it to a boil. Boil for 10-15 minutes.
  • Dip cucumbers in tomato sauce, cook for 5 minutes.
  • Add garlic and vinegar. Continue cooking for 2-3 minutes.
  • Spread the appetizer over the prepared jars, close them tightly and leave to cool upside down, covered with a blanket.

The finished snack is well worth it at room temperature. This recipe is a bit more complicated than the classic one, but the snack is more spicy and flavorful.

Georgian Cucumbers with Tomato Paste

The composition (1, 5 l):

  • cucumbers - 1, 7 kg;
  • tomato paste - 100 g;
  • water - 100 ml;
  • sugar - 80 g;
  • salt - 20 g;
  • refined vegetable oil - 80 ml;
  • table vinegar (9 percent) - 80 ml;
  • garlic - 100 g;
  • spices - to taste.

Method of preparation:

  • Cucumbers, previously washed and dried, cut into circles or bars.
  • Clean the garlic cloves, crush them with a hand press.
  • Dissolve tomato paste with water. Add sugar, salt, spices to it. Whisk with a whisk. Mix with butter. Heat to boil and extinguish 5 minutes.
  • Add cucumbers to the tomato mixture, then sweat them for 5 minutes.
  • Put garlic on cucumbers, pour in vinegar. Stir. Prepare a snack for a couple of minutes.
  • Fill the prepared jars with cucumbers, roll them up. Leave to cool upside down, wrapped in something warm. In this case, this stage is undesirable.

Store a snack preferably in a cool place. Suitable basement, unheated pantry. This is one of the easiest recipes for cooking cucumbers in Georgian, allowing you to do without the use of kitchen appliances.
