Gentle herbaceous plant with leaves like those of lily of the valley, but with the aroma of garlic grows in different regions of our country, it is especially common in the North Caucasus.   • Ramson and lily of the valley look very similar to each other, only the first one is useful, and the second one is poisonous. To avoid mistakes when buying a product will allow the knowledge of the fact that the bear bow has a pronounced garlic flavor. It can be felt if you pinch off a piece of leaf or stem and rub it between your fingers.
  • The most valuable nutrients are contained in young garlic, collected before the flowering period. If her leaves have not yet opened, she will be tender and rich in vitamins. Gentle opened leaves also belong to a young plant. But if the leaves are large and tough, you are dealing with ripe wild garlic. It is also edible, but not as useful as young.
  • Before cooking, wild garlic must be well washed and inspected to make sure that no dirt is left on it. Then it is cut into pieces about 2-3 cm thick and fried. If the leaves of the plant are rough or will be roasted whole, they will not interfere with pre-boil. Boil the ramson in a small amount of water. Cooking time of wild garlic, which after they will fry, should not exceed 2-3 minutes.
  • When frying wild garlic, a lot of juice is extracted from it. If some products need to be browned, this should be done either before adding garlic, or after the excess liquid has evaporated.

Ramson fried with garlic

Composition:

  • wild garlic - 0, 4 kg;

Method of preparation:

  • Wash the ramson, dry it with a kitchen towel. Cut into pieces about 2-3 cm wide.
  • Garlic cloves free from husk, cut into medium-sized plates.
  • Heat the oil in a deep frying pan or saucepan. Put garlic in it. Cook it until it gets dark.
  • Add the ramson, fry until the juice from the pan has almost completely evaporated from the pan.

Fried ramson in tomato sauce

Composition:

  • wild garlic - 0.5 kg;
  • tomato paste - 20 ml;
  • salt, seasonings - to taste;
  • butter - how much will leave.

Method of preparation:

  • Wash, dry the leaves of wild garlic, cut the cuttings.
  • Pour a glass of water at the bottom of the pot. Put ramsberry leaves in a saucepan. Put the pot on a slow fire and simmer the ramson until it changes color.
  • Fold the ramson into a colander, let it dry a little.
  • Put the leaves in a pan with melted butter. Stir for 10 minutes.
  • Dissolve tomato paste with three tablespoons of water, add salt and spices. Pour the prepared ramson sauce and then 5-10 minutes in it.

Ramson fried with egg

Composition:

  • wild garlic - 0, 2 kg;
  • chicken egg - 4 pcs .;
  • refined vegetable oil - 40 ml;
  • soy sauce - 40 ml.

Method of preparation:

  • Ramson, washing and drying with a kitchen towel, cut into small pieces.
  • Break eggs into a bowl, shake with a fork.
  • Heat the oil in a pan, put the ramson in it. Cook it for about 7-8 minutes.
  • Pour the ramson eggs, mix. Continue to cook the dish until the eggs coagulate.
  • Pour over boiled eggs with wild garlic soy sauce, mix.

Remove the pan from the heat, allow the dish to stand under the lid for 2-3 minutes. After a specified time, roasted ramson with eggs can be laid out on plates and served to the table.

Ramson, fried with potatoes and mushrooms

Composition:

  • shoots of wild garlic - 0, 2 kg;
  • potatoes - 0.5 kg;
  • fresh champignons - 150 g;
  • garlic - 3 cloves;
  • onions - 100 g;
  • refined vegetable oil - 50 ml;
  • salt, spices - to taste.

Method of preparation:

  • Peel the potatoes, cut them into medium-sized bars.
  • Cut the ramson into slices about 3 cm long.
  • Wash mushrooms, pat dry with a napkin, cut into strips.
  • Crush the garlic cloves with the flat side of a knife, chop finely.
  • Onion, freeing from the husk, cut into thin half-rings.
  • Heat oil in a pan. Put the onion and garlic in it. Fry them until a pronounced garlic smell.
  • Add wild garlic and mushrooms. Fry them until excess liquid evaporates from the pan.
  • Add potatoes and fry them with other foods until cooked.

Salt and pepper the food, stir. Then cover the dish for a couple of minutes under the lid and invite the household to the dining table.

Roasted wild garlic with radishes and pine nuts

Composition:

  • shoots of wild garlic - 0, 3 kg;
  • lemon juice - 20 ml;
  • pine nuts - 20 g;
  • radishes - 100 g;
  • garlic - 3 cloves;
  • refined vegetable oil - 40 ml;
  • salt, seasonings - to taste.

Method of preparation:

  • Cut the Ramson into strips about 4-5 cm long. Fold them into a colander, put them in a pan of boiling water. After 2-3 minutes, remove the colander with wild garlic from the boiling water, let it drain.
  • Heat vegetable oil in a pan. Cut the garlic cloves into several pieces, put in the butter. Cook them until they darken. Remove the darkened garlic from the pan, put the ramson in its place and fry it, stirring with a spatula, for 10-12 minutes.
  • Pour lemon juice on ramson, salt and pepper, then cover for 2-3 minutes under a lid.
  • Mix hot ramson with pine nuts and sliced ​​radish.

Snacks can be served warm and cold. It can be used as a side dish or as an independent dish.
