Even a lazy meal can deliver a lot of pleasure and benefit if you carefully consider each technological step of its preparation. The preparation of any dish consists of a specific set of main products, methods of their preparatory, mechanical and heat treatment.

The basis of cabbage is minced meat or other meat products, cereal part (rice, millet, buckwheat, etc.), vegetables and cabbage, which is sometimes replaced with other leafy vegetables to wrap the stuffing. For vegetarian or lean cabbage, the meat part is replaced with non-animal products, but the process remains the same.

Isn’t it the most time-consuming step in cooking stuffed cabbage is to prepare the cabbage leaves and to form semi-finished products in the form of rolls or envelopes of leaves and filling? In this lies the basic idea of ​​cooking all the lazy dishes. It remains, fundamentally without changing the composition of the dish, to exclude from the technological process the most time-consuming steps to reduce to a minimum the time for preparing a delicious homemade dinner. After all, the sum does not change from the rearrangement of the terms.

That is, if you add cabbage directly to the filling, the taste of cabbage leaves will remain the same. True, such a solution lacks one nuance: the filling without cabbage “wrappers” will lose its shape, it will crumble in the sauce and turn into a stew or hodgepodge. But a small culinary trick easily removes this obstacle: you just need to add eggs or a little flour, starch to the stuffing, or make a viscous porridge from the cereal. The protein contained in these products will bind the components of the filling during roasting or steaming. As a result, we will get all the same semi-finished products of cylindrical or other shape, no different in taste from ordinary cabbage. There is another way to reduce the cooking time of cabbage: you just need to put the stuffing and cabbage leaves in layers of prepared deep frying pan, covering each layer with sauce, bake the dish in the oven, and when serving, cut into portions, and again pour the sauce to decorate the dish. In a word, there are no hopeless situations.

1. Lazy cabbage rolls in a frying pan in a creamy mustard sauce

Ingredients:

Viscous porridge, rice 200 g

Cutlet meat 800 g

Bay leaf 2 pcs.

Sour cream 300 g

Preparation:

Finely dice white cabbage and onions. Cook the minced meat by combining rice porridge, meat cutlet and vegetables. Add salt, egg, spices. Mix thoroughly and repel the mass. Form cylindrical semi-finished products weighing 180 g each. Preheat a large frying pan and fry them, adding margarine during frying. After roasting, the cabbage rolls will noticeably decrease in volume, so that they can be put in the same pan all together. In a sour cream, add a spoonful of mustard, garlic, spices, mix the sauce, and fill them with fried semi-finished products. Put chopped parsley and bay leaf on top. Cover the pan with a lid. Stew until tender.

2. Lazy cabbage rolls in a pan of chicken fillet and fried mushrooms

Ingredients:

Boiled rice 250 g

Vegetable oil 100 ml

Chicken fillet 600 g

Tomato sauce “Krasnodar” 400 g

Preparation:

This recipe is the most energy efficient. Prepare the largest skillet with a high side and a lid. Chop the cabbage and place half in a greased frying pan. Cooked until cooked rice, fried mushrooms and chicken fillet, cut into cubes, combine in one container, mix, and put a thick layer into the pan, over the cabbage, filling it up to half the volume. Preparation:

Chop the pork, onions and cabbage chop with a knife, or skip through a large grid of the meat grinder. To the mass, add washed rice, spices. Put a bowl of minced meat for a couple of hours in the fridge so that the ingredients can soak in the cabbage pickle. After hammering the egg, carefully knock out the mass and form semi-finished products of arbitrary shape. Fry by adding vegetable oil to the pan.

Put all the cabbage rolls in a frying pan without a handle or another suitable shape, buttered. Powder with grated cheese, put in a preheated oven. Redden the cheese.

In a pan, fry the flour, combining with margarine. Combine sour cream with baked milk, pour into the pan with flour. While stirring, bring the sauce to a thickening. If you can not get the sauce without lumps, then wipe it through a sieve or perebeyte mass right there in the pan, using an immersion blender. As soon as bubbles appear, add chopped greens, spices.

Serve the lazy cabbage rolls, laying on the washed and dried lettuce leaves. Serve sauce separately or pour them each portion.

4. Lazy cabbage rolls in a pan of beef with prunes

To make the sauce, combine the carrot puree with tomato, add salt, spicy spices and sugar to taste, pour in half the water or starch. Bring the cooked mass to a boil on the stove. Combine the remaining liquid with the starch, mix thoroughly and pour in a thin stream into the boiling sauce, not forgetting to stir the sauce intensively with a whisk. Try it. Then add chopped hot pepper and leek, thinly sliced, in ringlets.

Beef, prunes, bacon and garlic, double-scroll through a meat grinder. Add rice, egg, salt and add ground pepper. Form the semi-finished products. Pour a glass of water or broth into a deep frying pan. When it boils, put cabbage rolls and stew until half cooked. Chop the cabbage to a puree, squeeze some of the juice so that the puree is thick. Add the egg, mix the mass. If necessary, add flour or potato starch to thicken. Using the resulting mass, stick the prepared semi-finished products and fry them in deep fat, gently dipping the stuffed cabbage rolls into the boiling oil.

Ready stuffed cabbage roll on a large dish, garnish with greens. Serve sauce separately.

5. Lazy cabbage rolls in a pan without rice

It is known that cereals contain carbohydrates and do not contribute to rapid weight loss. What can replace them in a dish? The trick is that nothing! Without rice and any other cereal, cabbage rolls can be no less tasty. Try it!

Chop the cabbage, very finely. Spoon baked applesauce with a spoon. Raw breast pass through the fine grid of the meat grinder twice. Combine the components by adding ground chili pepper and dry seasoning. Salt and mix thoroughly. Divide into portions of 150 g, form sausages. Put the butter in a deep frying pan, pour the broth, bring the mixture to a boil and place the semi-finished products. Cover and simmer for about ten minutes.

In yogurt, add chopped spicy greens, garlic, ginger. Blend the mixture until smooth. Pour into a frying pan, and simmer the same amount.

6. Lazy cabbage rolls in a pan of chicken liver with rice and stewed cabbage

Ingredients:

With semi-finished products - everything is simple. Proudly collect rice from porridge and stewed cabbage, left over from dinner last night, into a large total container. To make this dish look presentable and tasty in a new way, add sausages cut into small cubes. Chop chicken livers with a blender and add to the total mass. To make the mass viscous enough to form cylinders or balls, add an egg. Now mix thoroughly. Try to squeeze the mixture in your fist. If it is not viscous enough, add a little flour or starch, mix again and make semi-finished products of any shape. Grease the pan without a handle, cover with breadcrumbs and place the lazy cabbage rolls. Put them in the oven for 15 minutes. Bake at 200 ° C.

In another pan, prepare the sauce. Rub the carrots and onions, cut into small cubes, passe in a heated dish, adding flour. When the vegetables are soft, add sour cream and tomato paste. After a couple of minutes, add spices and herbs. Simmer another 5-7 minutes. Pour the sauce over the lazy cabbage rolls, then sweat it all together in a hot oven, in the cooling mode. Sprinkle with greens again, and serve.

Lazy cabbage rolls in a pan - useful tips

  • Juiciness stuffed for cabbage gives fat. Use bold meat for cooking lazy cabbage, or add components that contain animal fat to lean foods. If you cook a lean dish, the juiciness of the cereal mass can be given by adding vegetables.
  • Cooking time for croup is approximately 15–20 minutes, and barley grits are boiled for up to 45 minutes. Consider the preparation time of each of the components of stuffing for cabbage, trying to choose its composition in such a way that all the ingredients reach readiness at the same time.
  • In fatty and tomato sauce (gravy), the duration of cooking of cereals increases markedly. Therefore, try to use cereals for stuffed cabbage in ready or semi-cooked form, especially if fishmeat, cutlet meat, chicken meat is used in combination with cereal. The duration of cooking vegetables, in comparison with cereals, is generally not significant, and therefore it is appropriate for vegetarian recipes to prepare viscous cereal porridge first, and then add vegetable ingredients to it.
