Thai soup with coconut milk, chicken, shrimps and mushrooms

Ingredients

• 1 fillet from the breast;

• 400 ml of coconut milk;

Cooking

1. Rinse the fillet, cut into small pieces up to two centimeters.

2. Cut the carrots into straws, mushroom slices, onions into small cubes. Ginger needs to be rubbed. It will take 2 teaspoons. Chop the chili pepper finely.

3. Fill the chicken with water, about 1.2 liters, bring to a boil. Remove the foam. 4. Now add the onions and carrots, let them boil again.

5. It's time to add mushrooms.

6. Following can be salted soup.

7. Now throw in ginger, chili pepper. Cooking soup on low heat for a quarter of an hour.

8. During this time, squeeze the juice from the lime. You can use a lemon. Remove the zest, grind. Chop the greens.

9. Also clean the shrimp. The recipe is 100 g of the already prepared product.

10. Fill coconut milk, give boil.

11. Add citrus juice with zest to the pan, throw the shrimp.

12. Boil the soup for another minute, fill with greens, cover and turn off. Insist 10 minutes before serving.

Soup with coconut milk and pumpkin

The recipe is very bright soup with coconut milk. In addition to pumpkin, you will need curry seasoning and fresh ginger root, the number of seasonings can be reduced to your taste.

Ingredients

• 800 g pumpkin;

• 100 g carrots;

• 100 g onions;

• 50 g of oil;

• 300 ml of coconut milk;

Cooking

1. Use a saucepan with a thick bottom in which to fry vegetables. Put oil in a pot, put it on fire.

2. Cut the onion and carrot, alternately casting fry at intervals of a minute.

3. While the vegetables are browned, you need to do pumpkin. Peel, cut into cubes, remove all excess. Put it in a saucepan.

4. Add the grated root of ginger.

5. Add 300 ml of hot water or any broth, close and boil twenty minutes until soft.

6. Remove the saucepan from the heat, open and allow the boiled pumpkin and vegetables to cool slightly.

7. Puree soup blender or just carefully mash the pieces.

8. Put it back on the stove.

9. Add coconut milk, salt, season with pepper and curry.

Coconut Milk and Chicken “Tom Ka” Soup

Another Thai soup recipe that needs fish sauce. Although many people cook without it, it also turns out decently.

Ingredients

• 1 chicken breast; • 2 tomatoes;

• 300 ml of coconut milk;

• 2 spoons of fish sauce;

7. After two minutes, add lemon juice, turn off. Greens can be added to the pan or serve separately.

Soup with coconut milk, shrimp and rice noodles

Variant of nourishing soup, to which rice noodles are added. Shrimp is better to use small, in the recipe indicated the amount of purified product.

Ingredients

• 500 ml of coconut milk;

• 100 g rice noodles;

• 1 tsp. starch;

• 500 g peeled shrimp;

• 1 pinch of chili;

• 3 carrots;

• 2 cloves of garlic;

• 0.5 tsp. grated ginger;

• lime, green onion, salt and olive oil.

Cooking

1. Cut the peeled carrots into thin slices, chop the garlic, squeeze the juice out of the lime.

2. Heat olive oil in a saucepan, put chopped ginger, add garlic and chili pepper, fry for a few seconds.

3. Add the carrot, fry for a couple of minutes.

4. Pour coconut milk and 800 ml of hot water into the soup. Cover and cook for ten minutes.

5. Open, add salt, put rice noodles, cook another three minutes.

6. Mix the starch with 100 ml of water, send it to the soup.

7. Put the peeled shrimp.

8. After two minutes, try on the salt, if necessary, add more. Pour in lime juice, throw chopped onion and turn it off.

9. Give the soup to stand on a warm stove for a few minutes to reveal the flavors of the ingredients added at the end.

Soup with coconut milk and lentils

Variant unpretentious in cooking soup, but quite hearty and tasty. Lentils for him, you can use any. Prescription tomatoes are added canned.

Ingredients

• 200 grams of tomatoes;

• 200 g of lentils;

• 200 ml of coconut milk;

• 2 cloves of garlic;

• 1 onion;

• 2 spoons of plum oil .;

• 800 ml of broth;

• salt, hot pepper.

Cooking

1. Wash the lentils, lay in boiling broth, boil the dots of readiness. On average, about half an hour, but it all depends on the variety, sometimes it takes a little more or less time.

2. In butter, fry the garlic, cut into several pieces. Remove the pieces.

3. Add chopped onion to garlic oil, fry until golden brown.

4. It's time to add canned tomatoes to the pan. Remove the skin, cut the tomatoes.

5. Cook onions with tomatoes for about five minutes, turn off.

6. Transfer the browned vegetables to cooked lentils, add coconut milk.

7. Salt, cover and cook the coconut soup for a couple of minutes.

8. Add greens, hot pepper and lemon juice to taste.

Spicy citrus soup with coconut milk

Option spicy first course. Despite the name, orange is added quite a bit. The basis of the dish is carrots with canned beans.

Ingredients

• 400 g carrots;

• 2 bulbs;

• 400 g canned beans;

• 1 orange;

• 1 tsp. ground chili;

• 1 liter of broth, water;

• 200 ml of coconut milk;

• 2 spoons of butter;

• salt, greens;

• 2 cm ginger root.

Cooking

1. Cut the onions and carrots in any pieces, but not thick. Fry in a saucepan with a couple of tablespoons of butter.

2. Add broth or just hot water.

3. Immediately add hot pepper and a piece of ginger, chopped finely or grated. You can reduce the amount of spicy ingredients or lay only a portion for now, and add to taste later.

4. Squeeze the juice from the orange into the pan, you can also add the zest. Boil the soup until soft carrots. Remove from heat.

5. Allow the dish to cool slightly, then mash. Return to the fire. 6. Salt, add canned beans, pour coconut milk, boil for a moment.

7. Refill citrus soup with greens when serving.

Sweet Coconut Milk Soup

Variant of sweet soup based on coconut milk. A wonderful dish for breakfast, afternoon snack or just like that. You can add any dried fruits, it is not necessary to use only dried apricots and raisins.

Ingredients

• 400 ml of coconut milk;

• 100 grams of rice;

• 400 ml of water;

• 50 g raisins;

• 50 g dried apricots;

• 1 spoon of nuts;

• 1 spoon of coconut chips;

• 2 spoons of sugar or honey;

• salt.

Cooking

1. Put water on the stove, salt it.

2. While the liquid boils, sort out and rinse the rice, put it in a saucepan and boil it over low heat until almost ready. The pips should not be boiled soft.

3. Add coconut milk to saucepan.

4. Wash dried fruits, cut dried apricots into cubes or straws, you can simply cut into four parts. Add to saucepan.

5. Boil the soup for three more minutes, add sugar or honey to taste. Turn it off.

6. Pour the sweet dish into the plates, add the roasted nuts, coconut chips.

Coconut Milk Soup - Tips and Tricks

• Thai soups with coconut milk are sharp and aromatic. But it is not necessary to lay all the ingredients on the list. If you do not like spicy dishes or do not carry any component, then you can simply eliminate or reduce the amount.

• When serving coconut soup, greens can be added directly to the plate, like lemon juice. You can serve these products in a separate dish and put to taste.
