How to fry mushrooms in a pan

Pickled or salted mushrooms are made by many, considering that in this form they are most tasty. However, many of these mushrooms also like fried mushrooms. Therefore, information on how to fry mushrooms in the pan, will not be superfluous. It's never too late to learn new recipes.

Cooking Features

In order for fried mushrooms to come out really tasty, you should know some features of their cooking in a pan.

  • Before cooking, the mushrooms should be thoroughly cleaned of forest debris. They have a hat of a specific form, in which blades of grass and needles often accumulate, so it is convenient to use an old toothbrush to clean them. After cleaning the mushrooms need to be washed.
  • Pretreatment of camelina includes not only washing. They should be sorted out, having thrown out spoiled ones (wormy rychiki are often caught). Good specimens need to be cut into several pieces (4-8, depending on size). It is desirable that each piece includes a fragment of the cap and leg. An exception can be made only for young mushrooms, the size of which is so small. It should also be borne in mind that some recipes involve the use of whole mushroom caps. If you chose this, then from the mushrooms you just need to cut off the legs, which you can also fry in a pan or use to cook mushroom caviar.
  • It is not necessary to boil mushrooms, some recipes do not provide for this stage of processing. However, in most cases, mushrooms are still boiled in salt water for 15-20 minutes.
  • It is impossible to fry red mushrooms all the time under the lid; it must be removed at least for a while so that excess moisture from the mushrooms can evaporate. Otherwise, instead of appetizing mushrooms in the pan you will find a shapeless mass.
  • When using spices, it is important not to overdo it so that they do not interrupt the pleasant scent of mushrooms.

Red mushrooms fried with onions

Composition:

  • mushrooms - 0, 5 kg;
  • vegetable oil - 50 ml;
  • onions - 0, 2 kg;
  • salt, black pepper powder - to taste.

Method of preparation:

  • Loop, wash the mushrooms and cut them into small pieces.
  • Boil (15 minutes in salted water).
  • When the water is drained, put the ryberry in a heated frying pan and heat it without oil until some of the moisture has evaporated.
  • Pour oil into the pan and, occasionally stirring the mushrooms, fry them for 10-15 minutes.
  • Add diced onion to the mushrooms, if desired - salt and black pepper, mix.
  • Fry until the onion turns golden.
  • Reduce heat and cover the pan with a lid. Then mushrooms 5 minutes and lay out on the plates.

Frying mushrooms in the pan with this recipe is a snap. They can even not boil beforehand, but simply pour boiling water over it. But in this case, they need to be cut very finely.

Red mushrooms, fried with potatoes

Composition:

  • saffron milk - 0, 6-0, 7 kg;
  • vegetable oil - 100 ml;
  • potatoes - 0.5 kg;
  • onions - 0, 2-0, 3 kg;
  • salt, black pepper powder - to taste.

Method of preparation:

  • Mushrooms washed and cut into 4-6 parts for a quarter of an hour in salted water, fold them in a colander.
  • Peel and chop the potatoes into small pieces.
  • Peel and chop the bulbs.
  • Heat half the butter in a frying pan and put the mushrooms in it.
  • Fry the mushrooms with the lid open until excess liquid has evaporated.
  • Add the onion and keep frying until it turns golden.
  • Pour in the remaining oil, add potatoes. Fry, stirring occasionally, until the potatoes are ready. A few minutes before salt and pepper the dish.

Fried mushrooms with potatoes and sour cream are usually served with sour cream and greens, but without them they are very tasty and satisfying. If you wish, you can fry the mushrooms on butter, not on vegetable oil. In this case, the dish will turn out even more fragrant and more tender.

Redberries fried in flour

Composition:

  • mushrooms of medium size or large - 0.5 kg;
  • wheat flour - 50 g;
  • salt - 10 g;
  • vegetable oil - how much will leave;
  • greens - for decoration.

Method of preparation:

  • Clean raw mushrooms thoroughly, wash, wash with boiling water and dry with a napkin.
  • Cut the caps: they will need to be fried separately.
  • Mix the flour with salt. If desired, add a little ground black pepper.
  • Heat the oil in a pan.
  • Dip the mushrooms in flour and fry on all sides until crispy. Cover and sweat for 5-10 minutes over low heat.
  • Do the same with the legs.
  • Put the caps and legs on a dish, sprinkle with chopped greens.

Fried mushrooms of this recipe are very beautiful, appetizing and crispy.

Redberries fried in sour cream

Composition:

  • mushrooms - 1 kg;
  • sour cream - 0, 2 kg;
  • onions - 0, 2 kg;
  • vegetable or melted butter - 60-80 ml;
  • salt, seasonings - to taste.

Method of preparation:

  • Wash the mushrooms and cut them into small pieces.
  • Dice the onions.
  • Fry the mushrooms in butter for 10 minutes.
  • Add the onion and fry the mushrooms with it for another 10 minutes.
  • Salt, pepper, cover the pan with a lid. Stew mushrooms in cream for 15-20 minutes.

The curry mushrooms fried according to this recipe can be used as a sauce for potatoes, buckwheat porridge, and macaroni.

Fried mushrooms for the winter

Composition (1 l):

  • mushrooms - 1 kg;
  • vegetable oil - 0, 2 l;
  • salt - 5 g.

Method of preparation:

  • Cooked (washed and chopped) mushrooms cook for 15 minutes.
  • Heat the oil in a deep frying pan with a thick bottom.
  • Put the mushrooms in the butter and fry them for 30 minutes. 5 minutes before ready salted.
  • Spread the mushrooms in sterilized jars, cover with oil, in which they were fried. Close the capron lids and clean after cooling to store in a cool place.

Ryzhiki will be better kept, if the oil, before pouring mushrooms in cans, mixed in half with table vinegar (9%) - according to this recipe, fried mushrooms are prepared for the winter in Bulgaria.
