  • Do not pick strawberries in cloudy weather. At this time it is watery, tasteless. Billets from it, too, will not be exactly what you expect to receive.
  • Ripe or even slightly over-ripe berries are suitable for jelly, unless you want to keep them whole. For the dessert of whole berries, ripe specimens are not suitable either.
  • To prevent water from getting inside the berries, they should remove their sepals only after the berries have been washed and dried.
  • Strawberries contain a small amount of pectin. This allows you to cook a thick jam or jam from it, but for this, the berry should be cooked for a very long time. As a result, the consistency of the dessert will be denser than what is required for jelly. Therefore, when making strawberry jelly, gelling components are added to the berry, the most accessible of which is gelatin.
  • If you do not want to use animal products for density, you can use fruit pectin or apples, which contain a lot of it, to make strawberry jelly.
  • Gelatin is diluted in a cool liquid before adding to the strawberry mass. After the introduction of this component, it is possible to cook the jelly for no more than 5 minutes, otherwise it will stop thickening, on the contrary, becoming more liquid.

  • If you are preparing strawberry jelly for the winter, you need to fold it over the sterilized jars, close tightly with metal lids, which were previously boiled for 10 minutes.

Strawberry jelly storage conditions depend on the recipe. If the berry mass has undergone sufficient heat treatment, the billet is well worth it at room temperature.

Whole strawberry jelly

Composition (2 liters):

  • strawberries - 1 kg;
  • sugar - 1 kg;
  • water - 100 ml;
  • gelatin - 20 g.

Method of preparation:

  • Go through the berry. Dip it in a bowl filled with clean water and rinse well.
  • Put in a colander, rinse under running water.
  • Put a towel on the table, pour the strawberries on it. The fabric absorbs the liquid flowing off the berries, making the strawberries dry faster.
  • Unscrew the sepal berries.
  • Fold the strawberries in an enamel container, add sugar. Cover with gauze and leave for 2-3 hours.
  • Put the berry mass on the fire. Bring to a boil. Cook for 5 minutes over medium heat, removing the foam protruding on the surface.
  • Extinguish the fire. Leave the berry to cool and soak in the syrup.
  • When the strawberries have cooled to room temperature, bring it to a boil again, boil for 5 minutes.
  • Dissolve the gelatin in cool boiled water, pour into the bowl with strawberries, while mixing the berry mass. Turn down the heat.
  • Cook another 4-5 minutes jelly. Remove from heat.
  • Sterilize the jars, fill them with hot jelly.
  • Roll up.
  • Place the cans upside down, cover with a blanket. This will provide additional conservation.

Cold jelly can be stored on a shelf where you usually store supplies for the winter - it is well worth it at room temperature. Whole berries, translucent through a layer of jelly, make the dessert especially appetizing.

Strawberry jelly

Composition (2 liters):

  • strawberries - 1 kg;
  • citric acid - 2 g;
  • sugar - 1 kg;
  • water - 100 ml;
  • gelatin - 20 g.

Method of preparation:

  • Enume the strawberries, rinse them well. Wait until the berry dries.
  • Put the strawberries in a blender jar and grind to a mash. In the absence of a blender, strawberries can be ground through a sieve manually.
  • Mix strawberry puree with sugar. To he rather dissolved, it can be crushed to a state of powder with a coffee grinder.
  • On medium heat, bring the berry puree to a boil, cook for 5 minutes, removing the foam.
  • Add citric acid, mix.
  • Dissolve gelatin with cool water, enter into strawberry puree.
  • Reduce heat and simmer for 1-2 minutes, stirring slowly.
  • Fill prepared jars with strawberry jelly.
  • Place a cloth at the bottom of the pan, put the jars in the pan, cover them with lids.
  • Pour water into the pan so that its level reaches the hangers of the cans.
  • Put on a slow fire. Half-liter jars sterilize 10 minutes, liter - 15 minutes. It is not advisable to lay strawberry jelly on larger banks.
  • Spin the jars. Leave to cool in a steam bath.

The given technology of making strawberry jelly allows preserving most of the beneficial properties of the berry, since the strawberries undergo minimal heat treatment. You can make strawberry jelly according to this recipe without boiling it at all, simply by mixing all the ingredients, spreading them in banks and sterilizing for a specified time, but then you will have to keep the billet in the refrigerator.

Strawberry jelly with apples

Composition (2 liters):

  • strawberries - 1 kg;
  • apples - 0.5 kg;
  • sugar - 1 kg.

Method of preparation:

  • Wash the strawberries, dry, tear off the sepals.
  • Wash the apples, blot them with a napkin, peel and cut the core. Pulp cut into small cubes.
  • Chop strawberries and apples with a blender or meat grinder to a state of mashed potatoes.
  • Combine applesauce and strawberry puree, mix.
  • Add sugar and set aside. Boil until the strawberry-apple mixture becomes thick enough.
  • Spread out the sterilized banks, cork them. After cooling, remove the pantry.

Strawberry jelly with apples is prepared without gelatin of animal origin. This delicacy will appeal to vegetarians.
