If you are going to cook mustard sauce at home, it makes sense to learn the advice of experienced chefs.

  • Choose the mustard variety for the sauce depending on how much savory sauce you want to get. If you have managed to purchase the required grade of mustard only in grains, you can easily grind them with the help of a coffee grinder.
  • You should not use table mustard purchased in the store for making the sauce. It will be much tastier and healthier if you make it yourself at home from mustard powder.
  • Do not use aluminum utensils for making mustard sauce. It reacts with the acidic products that make up the sauce, releasing harmful substances.
  • It is best to store table mustard in glass containers, tightly closing them after use. Mustard sauce is stored in the same conditions, but much less time: as a rule, it should be used for a week or two, depending on which products are in the sauce.

Mustard Meat Sauce

Composition:

  • butter - 20 g;
  • shallots - 50 g;
  • sour cream - 60 ml;
  • wine vinegar (6%) - 20 ml;
  • table mustard - 10 ml;
  • salt, sugar, pepper - to taste;
  • milk - 20 ml.

Method of preparation:

  • Mix sour cream with mustard and dilute with milk.
  • Cut the onion into small pieces and fry it until soft in the heated oil.

  • Add mayonnaise, mix again.

Spicy Mustard Sauce

Composition:

  • butter - 40 g;
  • table mustard - 40 ml;
  • flour - 35 g;
  • sour cream - 20 ml;
  • broth - 0, 5 l;
  • lemon juice - 20 ml;
  • yolk - 1 pc .;
  • salt, sugar, dill - to taste.

Method of preparation:

  • Mustard mixed with sour cream and lemon juice.
  • Mash sugar with chicken yolk.
  • Mix the yolk and mustard cream mass.
  • Melt butter in a pan, fry the flour in it.
  • Pour broth into the pan in a thin stream, whipping it simultaneously with a whisk.
  • Salt, add if desired finely chopped dill, cook for 2 minutes.
  • Remove from heat, let stand for a while.
  • Add a lot of sour cream with mustard and egg, whisk with a whisk or a mixer. It is important that egg white does not get into the dish, since it will immediately curl up and spoil the taste and appearance of the sauce.
