It is difficult to find a hostess who would not cook meat cutlets for households. But such snacks can be made not only from meat, but also from offal. Beef liver cutlets are soft, tender, go well with any side dish, and can be served as a separate dish. The recipes of these culinary products are simple enough so that they can take advantage of a cook who does not have much experience.

Cooking Features

Beef liver cutlets are prepared not quite as similar products from minced meat. Knowing a few moments will allow you to prepare a tasty and fragrant dish that will almost certainly appeal to your guests and household members.

  • The choice of ingredients is key. You can use frozen liver to make cutlets, but from fresh ones they will be more juicy. If you use an ice cream product, give it a chance to thaw in the refrigerator.
  • Beef liver has a thick film, coarse vascular lesions. Before preparing the dish, the film should be removed, the bile duct fragments cut with a knife. It will be easier to remove the film if the liver is immersed in hot water for a few minutes.
  • Beef liver can taste bitter. To avoid this, it should be soaked in water for 1-2 hours. Even better results can be achieved if milk is used for soaking instead of water.
  • The beef liver processed by the meat grinder represents quite liquid weight. It must be thickened with eggs, flour, starch, semolina.
  • For juiciness, onions are most often added to onion, sometimes other vegetables are included in the composition (carrots, potatoes, zucchini, Bulgarian pepper). To give the dish new flavors allows the use of various cereals. If you put greens in minced meat, cutlets will be fragrant.
  • Shape beef liver cutlets with a spoon, spreading the minced meat on a hot skillet with boiling oil.

Liver patties can be served as a separate dish or with a side dish. Some housewives make them "cakes", sandwiching sour cream mixed with fried vegetables.

Classic recipe for beef liver patties

Composition:

  • beef liver - 0.5 kg;
  • chicken egg - 2 pcs .;
  • onions - 0, 25 kg;
  • wheat flour - 140 g;
  • mayonnaise or sour cream - 120 ml;
  • salt, black pepper - to taste;
  • vegetable oil - how much will leave.

Method of preparation:

  • Rinse the liver, free from seals and film. Cut into pieces of arbitrary shape and scroll through a meat grinder.
  • Peel the onions, cut them into large pieces and turn them through the meat grinder too.
  • Beat the eggs and place in a bowl with liver and onions. Add sour cream or mayonnaise, salt and spices. Stir until smooth.
  • Add flour in portions and stir until you get minced meat, which is thick like a pancake dough.
  • Pour some oil on a pre-heated pan, after 10 seconds, put mince meat on it with spoons, leaving some distance between portions.
  • Roast on medium heat until the patties below are browned.
  • Turn it over, cover and fry for another couple of minutes until tender.
  • Remove the cutlets from the pan, add butter to it and continue to fry the liver cutlets until the stuffing is over.

As a garnish, mashed potato beef, vegetable stew, and buckwheat are suitable for classic beef liver cutlets.

Beef liver cutlets with semolina

Composition:

  • beef liver - 0.5 kg;
  • onions - 150 g;
  • chicken egg - 1 pc .;
  • semolina - 100 g;
  • salt, pepper - to taste;
  • vegetable oil - how much will leave.

Method of preparation:

  • Cut the prepared beef liver into chunks and chop with a meat grinder.
  • In the same way, mash the peeled onions.
  • Mix the onions with the liver, add the semolina, mix.
  • Wait a quarter of an hour for the semolina to swell.
  • Add egg, salt, spices to mince. Mix thoroughly so that the composition has a uniform consistency.
  • Heat oil in a pan, put mince in it.
  • Fry the patties for 2 minutes on each side over medium heat. During the frying pan you can cover the pan with a lid - so the cutlets will be better roasted.

Cutlets made according to this recipe have a delicate texture. Even children will like them.

Beef liver cutlets with bacon

Composition:

  • beef liver - 0.5 kg;
  • pork lard - 100 g;
  • flour - 100 g;
  • onions - 100 g;
  • starch - 5 g;
  • chicken egg - 1 pc .;
  • salt, pepper - to taste;
  • vegetable oil - how much will leave.

Method of preparation:

  • Prepare the liver and fat. Cut them into pieces, grind with a blender or meat grinder.
  • Peel the onions, cut them into pieces, chop them in the same way as the meat products.
  • Mix the onions with the liver and bacon.
  • Whisk the egg, whisk it in the mince. Add starch, salt, spices. Mix thoroughly.
  • Combine with flour and whisk to get a homogeneous composition, consistency resembling sour cream.
  • Heat the butter and put the minced meat in it, forming cutlets with a spoon.
  • Fry over medium heat for about 5 minutes, giving each side 2-3 minutes.

Before serving, liver patties can be sprinkled with fresh herbs. Salo makes the dish tender, appetizing and more satisfying.

Beef liver cutlets with rice

Composition:

  • beef liver - 0.5 kg;
  • rice - 0, 2 kg;
  • chicken egg - 1 pc .;
  • onions - 150 g;
  • starch - 10 g;
  • fresh dill - 50 g;
  • salt, spices - to taste;
  • vegetable oil - how much will leave.

Method of preparation:

  • Rinse the rice, cover with water and boil until ready. It should turn out crumbly, not viscous.
  • Mince a liver.
  • Grate the onion on a coarse grater or chop finely with a knife.
  • Add egg, salt, spices, and starch to the liver mass. Stir to make the ingredients smooth.
  • Add the rice, onion and chopped dill, mix again.
  • Spreading minced meat with a spoon on a hot frying pan with vegetable oil, make cutlets and fry them on medium heat for 2, 5 minutes on each side.

A side dish for liver patties cooked according to the above recipe is not required. Samih products get a lot. Sour cream or sauce made on its basis can be served with them.

Beef liver cutlets with oatmeal and garlic

Composition:

  • beef liver - 0, 4 kg;
  • fatty pork - 100 g;
  • instant oatmeal - 50 g;
  • milk - 50 ml;
  • soda - 2 g;
  • garlic - 1 clove;
  • sour cream - 150 ml;
  • water - 100 ml;
  • vegetable oil - how much will leave;
  • onions - 150 g;
  • salt - to taste.

Method of preparation:

  • Oatmeal pour a little warm milk, leave for a quarter of an hour, so they swelled.
  • Peel the liver of films and veins, cut into pieces and chop, turning through a meat grinder.
  • Do the same with pork.
  • Stir in minced pork with liver, add to them garlic passed through a press and swollen oatmeal, mix.
  • Add soda, salt and spices, stir again.
  • Free onion from the husk, cut into thin half-rings.
  • Heat oil in a pan. Fry the patties in it, forming them with a spoon. It is not necessary to fry for a long time, it is enough to brown them on both sides.
  • When the stuffing is over, wash and dry the pan. Fry onion in the oil until golden.
  • Put chops on the onion.
  • Fill with a mixture of water and sour cream.
  • Extinguish over low heat under the lid for 5-10 minutes.

According to this recipe, beef liver cutlets are lush, tender and very tasty. You can serve them with or without a side dish. When serving, it is advisable to pour the sour cream sauce in which the meatballs were stewed.
