Fluffy pancakes are familiar to everyone since childhood. But many perceive this dish, exclusively as sweet pastries. And here in vain. After all, pancakes can be vegetable (for example, zucchini, potato) as well as meat (from the liver, from minced meat). Today, we want to offer you to make savory liver pancakes. You can prepare them very diverse.
We give a basic recipe, and you can add to it at your discretion.
How can I supplement liver fritters? For example, add roasted mushrooms to them, and not necessarily forest mushrooms — mushrooms or oyster mushrooms, give armature and taste, not worse than forest mushrooms. You can also add boiled buckwheat or rice. Fritters are more dense and nourishing. All sorts of vegetables - zucchini, onions, peppers, sweet, carrots - also perfectly combined with the liver.
Liver - 500 g;
Milk - 70 ml;
Egg - 1 piece;
Flour - 2-3 tablespoons;
Vegetable oil - 40 ml;
Salt and pepper to taste.
First of all, let's do the cookies. It is necessary to rinse and remove all the films, cut the veins. You can also soak the liver in milk for 2 hours. This procedure will remove all the bitterness. But you need to do so only with pork and beef liver. The remaining types of this by-product are not bitter.
Grind prepared liver or in a meat grinder, or a blender. Add to the liver the egg and milk.
Add flour. Some flour can be replaced by semolina, then the calorie content of the dish decreases. Salt and pepper a lot. Mix well.
Heat up some of the vegetable oil in a pan and spread the liver mass with a spoon to form a neat pancake. Fry fritters from both sides for 4 minutes. So fry the whole mass, not forgetting to add oil as needed.
Ready-made liver fritters will be great served with mashed potatoes or boiled rice. Different sauces - ketchup and mayonnaise, will not spoil the taste at all. After being stored in the refrigerator, the finished pancakes lose their special flavor. Therefore, cook so much to eat in one sitting.
