In many people, hawthorn is associated with a drug for heart disease. It actually normalizes the heart rhythm, but this does not exhaust its useful properties. Its fruits contribute to the normalization of blood circulation and blood sugar levels, have a diuretic effect, strengthen the nerves, soothe and increase immunity. Hawthorn compote for the winter is made precisely because it is healthy, although its taste and aroma also deserve attention. If you make a drink correctly, it will stay for a long time.
Features of cooking and drinking
In order for hawthorn compote to be pleasant to the taste and color, and also not to cause harm, it is necessary to make and use it correctly.
- It is not necessary to take wrinkled and dried fruits on compote - they will spoil the taste and appearance of the compote.
- Compote will have a richer taste and aroma if it is made concentrated using 0, 3 kg of fruit per 1 liter of water, but usually the concentration is made lower, since hawthorn in large quantities can cause harm to the body.
- The use of lemon juice or at least citric acid in compote will allow saving hawthorn's benefit. Citric acid per three-liter jar take 5-6 grams of lemon juice - a tablespoon, not more. These components can be added to the compote prepared according to any recipe.
- Hawthorn is contraindicated in pregnant and lactating women, children. For other people, hawthorn compote can be drunk only in moderate amounts - no more than a glass a day. For this reason, for its preparation, preference should be given to banks of small volume.
- Banks for compote need not only to be well washed, but also to be sterilized. Covers can also be used only sterilized.
- The hawthorn compote should be stored in a dark place, protected from the sun. In this case, the temperature in the room where there are cans of drink should be low - up to 18 degrees.
Much tastier hawthorn compote is obtained if you make it using other fruits. It is not forbidden to add various spices, but in moderation.
Simple hawthorn compote recipe
Composition (3 liters):
- hawthorn - 0, 2 kg;
- sugar - 0, 35 kg;
- water - 3 l.
Method of preparation:
- Pick, wash and dry the fruit, put them in sterilized jars.
- Cook the syrup. After boiling it should boil for 5-10 minutes.
- Fill the hawthorn with boiling syrup.
- Roll cans with sterilized lids.
- Put the jars with the lids down, wrap them with a blanket or even two.
- Store cooled jars in a cool place, you can even put them in the fridge.
Saturated color and aroma will not acquire such compote immediately, but only in a month. After 30 days, you can already open the jar and taste the drink.
Pitted hawthorn compote
Composition (3 liters):
- hawthorn - 1 kg;
- water - 2 l;
- sugar - 1 tbsp. (180-200g).
Method of preparation:
- Wash the selected hawthorn, cut the fruit and remove the bones from it.
- Place the hawthorn pulp in a colander and rinse again under running water, wait until it drains.
- Cook the thick sugar syrup by boiling water from the sugars for 5-10 minutes.
- Cool the syrup to about 80 degrees, immerse the hawthorn pulp in it and leave for 10-12 hours.
- Remove the berries from the syrup and spread them over the sterilized jars.
- Strain the syrup and put on the fire, bring to a boil.
- Fill the fruit with boiling syrup and cover the jars with lids.
- Put a towel on the bottom of a large saucepan, put a can of compote on it. Pour water into the pan so that its level can be “on the hangers”.
- Place the pan on low heat and sterilize the cans with the fruit juice for 15-30 minutes, depending on their size. So, for half-liter jars, 15 minutes is enough, for one-liter jars - 20, but three-liter sterilization needs at least 30 minutes.
- Spin the jars. Turning over, wrap them in a blanket and wait for them to cool.
- Store cooled jars in a refrigerator or basement. This compote can be stored at room temperature, but it is better to put it in a cool place.
Compote from hawthorn pulp (seedless) is obtained concentrated, so it should be diluted before serving. You can put a sprig of mint in a glass or decorate with a slice of lemon or orange.
Hawthorn compote with apples
Composition (3 liters):
- hawthorn - 150 g;
- apples - 0.5 kg;
- water - 2, 2 l;
- sugar - 0, 3 kg.
Method of preparation:
- Wash hawthorn.
- Wash the apples, remove the cores from them, cut the apples into slices.
- Spread the apples and hawthorn in sterilized jars.
- Cook the sugar syrup by boiling water and gradually adding sugar to it.
- Fill the jars with boiling syrup.
- Hermetically close the jars with sterilized caps and place them upside down.
- Bundle banks in warm clothes and leave for a day.
- Store for the winter in a cool place.
Hawthorn compote for the winter turns out to be tender and fragrant, with pleasant sourness, it can be drunk both cold and warm, for example, using tea.
