Fajitos

There is no single recipe for fajitos, but the more important it is to know the basic principles of its preparation.

  • Meat for fajitas is cut into thin, oblong pieces and fried on a grill. In extreme cases, it can be fried in a frying pan. Boiled meat or mince for cooking fajitos is not suitable. Vegetables are also often fried.

  • It is not enough one sauce for fajitos. After all, the ability to combine components, creating a fajitos to your liking, is a distinctive feature of this dish. It is desirable that on the table stood a tomato sauce, such as salsa, white sauce based on sour cream, guacamole sauce, which has a sweet-sour taste. White sauce can be made by blending sour cream with chopped greens and a clove of garlic in a blender. To make a classic salsa, fry a pair of garlic cloves, cut into pieces the flesh of two ripe tomatoes, a chopped chilli pepper and a small bunch of chopped cilantro in olive oil, then mix all this mass in a blender. Wheat tortilla recipe for fajitos

Composition:

  • wheat flour - 0.5 kg;
  • baking powder for dough - 5 g;
  • salt - 20 g;
  • butter - 100 g;
  • water - 0, 3 liters.

Method of preparation:

  • Sift flour. Pour salt and baking powder into it, mix well.
  • Rub the butter on a coarse grater directly into a container of flour. Grind by hand until the contents of the bowl resemble crumbs.
  • Heat the water - you need not boiling, but hot enough.
  • Pour water into the dough in small portions and knead it with your hands until it is quite firm and elastic.
  • Divide the dough into pieces the size of a little more than an egg and roll it into balls. Put on a floured board, cover with a napkin. Leave for half an hour.
  • After the indicated time, roll each ball into a round cake with a diameter of about 18-20 cm.
  • Heat the pan on the stove. Its diameter should not be less than the diameter of the cakes. Lubricate the pan is not necessary.

  • Put the finished tortillas on a towel and wrap them, as they are best served warm.

According to this recipe, you can make lean tortillas by replacing butter with the same amount of vegetable oil.

Classic fajitos recipe (with meat)

Composition:

  • beef or other meat - 0, 3 kg;
  • onions - 100 g;
  • Bulgarian pepper (better than a different color) - 0.5 kg;
  • hot chilli pepper - 1 pc .;
  • tomatoes - 0, 3 kg;
  • greens - to taste;
  • cheese - 100 g;
  • vegetable oil - 100 ml;
  • lime (can be replaced with lemon) - 1 pc .;
  • garlic - 1 clove;
  • tequila (optional) - 20 ml;
  • salt - to taste;
  • grape wine (dry) - 100 ml.

Method of preparation:

  • Wash the meat, cut it into thin strips, cover it with wine and place in a cool place for at least 2 hours (you can marinate the meat overnight).
  • Take the meat out of the fire. Squeeze.
  • Pour a small amount of oil into the pan, heat it up. Fry meat in it to make it brown on all sides.
  • Peel the onion and cut it into thin half-rings. If the bulbs are very large, you can cut into quarters and rings.
  • Wash and clean hot pepper from seeds. Chop it up with a knife as much as possible. If you wish, you can use a blender.
  • Sweet pepper wash. Cut the peppers off the peppers. Remove the seeds, and cut the flesh into thin strips.
  • Chop greens with a knife.
  • Coarsely grated cheese.
  • Cut the tomatoes into not too thin slices.
  • Heat the remaining butter in a clean frying pan and fry the onion in it until it is golden brown.
  • Add sweet and hot peppers. Fry everything together, stirring for 5 minutes.
  • Add tomatoes and greens. Fry still 5 minutes.
  • Add meat. Stir. Remove from heat.
  • Crush the garlic. Squeeze juice from lime. Mix the juice with garlic and pour this fajitos mixture.

Serve grated cheese separately. Additionally, you need to submit sour cream, chili sauce or salsa, other sauces, if they are available. Do not forget to put a plate with Mexican tortillas. Before serving fajitos tequila pour and set on fire. Serve fajitos, cooked according to the classic recipe, best in the pan - this is consistent with tradition.

Veggie fajitos (with mushrooms)

Composition:

  • white mushrooms - 0, 5 kg;
  • salt - 5 g;
  • garlic - 2 cloves;
  • vegetable oil - 20 ml;
  • onions - 100 g;
  • red bell pepper - 0, 2 kg;
  • hot chilli pepper - 1 pc .;
  • celery greens - 10 g;
  • lime - 1 pc .;
  • salsa and guacamole sauces, tortillas - how many will leave (8-12 pieces).

Method of preparation:

  • Wash, dry and cut mushrooms into thin strips.
  • Cut the garlic into small pieces.
  • Wash and clean hot pepper seeds. Cut it as small as possible with a knife.
  • Finely chop the celery greens with a knife.
  • Remove the small bulbs from the husk and cut each into 4-6 pieces.
  • Wash the sweet pepper, cut it into several pieces to remove the seeds. Remove them, remove the stalk. Cut the flesh of the pepper into thin strips.
  • Heat the grill pan, sprinkle with salt. Put the mushrooms on it and fry them, stirring, for 5 minutes. Add the garlic, continue frying the mushrooms with it for 2-3 minutes more. Put the mushrooms in a plate.
  • Pour oil into the pan, spread it over the surface. Put the pieces of onion. Fry them from several sides.
  • Add sweet pepper to onion, fry for 5 minutes with onion.
  • Place hot pepper, celery, and fried mushrooms in the onion with pepper. After a minute, remove from the heat and pour the lime juice.

Serve with warm tortillas and several types of sauce. Fahitos can also be cooked with champignons, but with white mushrooms it turns out to be much tastier and more aromatic.

Chicken Breast Fajitos

Composition:

  • chicken breast - 0, 5 kg;
  • lime - 1 pc .;
  • onions - 0, 5 kg;
  • Bulgarian pepper - 1 kg;
  • vegetable oil - 0.5 l;
  • salt, spicy seasoning - to taste.

Method of preparation:

  • Wash the breast. Remove the skin, separate the meat from the bones and cartilage. Chicken fillet cut into small pieces.
  • Squeeze juice from lime, pickle chicken meat in it, leaving it in a cool place for about an hour.
  • Wash the peppers. Cut off the stalks of them, remove the seeds from them. Cut the peppers into thin strips or quarter rings.
  • Peel the bulbs. Cut them into half rings, not too thin.
  • Heat vegetable oil in a pan. When it boils, dip the meat in turn, first the meat, after 5 minutes the onion, after another 5 minutes - the pepper. After 5 minutes, remove from heat. Remove meat and vegetables from the butter with a skimmer and place them on a napkin. When they drain the excess oil, salt, season and serve to the table, laying out on a dish.

Chicken sour cream with garlic and sweet and sour tomato-based avocado sauce is best suited to chicken fajitos.
