Cooking Features

Even an inexperienced housewife can make the dough out of cottage cheese for pies that will be roasted in a frying pan. This process has its own specifics:

  • How tasty the curd dough will turn out depends on the quality of the ingredients. In the shops next to the natural cottage cheese can be found curd product with a significant content of vegetable proteins and fats. It is better to refuse such a product, otherwise the result may be unpredictable.
  • Cottage cheese is better to use fresh, otherwise the dough will turn sour.
  • Flour quality also matters. From the second-grade products turn grayish, have a specific smell. The difference in price between high-grade flour and second-rate flour is not so great that it makes sense to save on this product.
  • Flour must be sieved before use. The purpose of this manipulation is not only to rid the product of small litter and insect larvae, the main task is to saturate the flour with oxygen. After sifting, it becomes easy, it is easier to combine it with other ingredients, preventing the formation of lumps. Products from such flour turn out more gentle and air.
  • You should not add a lot of sugar to the dough, otherwise the cakes may fry too much. If you want sweet pies, sugar is better to put in the filling.
  • When working with dough, it is desirable to grease the hands with vegetable oil: the dough from the curd is soft and sticky, it will be difficult to work with dry hands.
  • Rolling cottage cheese dough is not an easy task, as it turns out not to be too elastic. But roll it and do not need. It is better to form a sausage out of it, cut off pieces from it and crush it with your hands. After that, it remains to put a filling on such a cake and form a pie.
  • Fry patties of cottage cheese dough in a hot frying pan in a sufficient amount of vegetable oil. They are put in the frying pan with seams down so that they better maintain integrity.
