Pastila is a traditional delicacy. Initially, apples were used for its preparation, and later they learned how to cook it from other berries and fruits, which contain a fairly large amount of pectin. The strawberry marshmallow has a unique taste, but is rarely sold. If you want to try this delicacy, you have to do it yourself. In a tightly closed jar, the dessert can be stored all winter.
Cooking Features
The preparation of strawberry pastila is a long but uncomplicated process. The novice cook will successfully cope with the task if he knows a few moments.
- An unopened berry is not suitable for making pastila. Going over strawberries, leave only ripe or even overripe, but not in time to spoil.
- It is not recommended to pick strawberries in rainy weather - it will be watery and not tasty enough.
- To prevent excess moisture from getting inside the berries, they can remove their sepals only after the berries have been washed and dried.
- Strawberries dry faster if they are scattered on a fabric that absorbs moisture well.
- If you intend to keep strawberry pasta for a long time, fold it over sterilized jars and close tightly. Candy jars with a clean place in a cool and dark place.
- The technology of making strawberry lozenges involves chopping the berries and drying the berry mixture. You can grind strawberries with a blender or meat grinder with a nozzle that has small holes. Also, strawberries will be easy to grind through a sieve, as this berry is soft.
- You can use an oven or an electric dryer to dry the berry puree. Duration depends on the thickness of the berry layer or temperature.
- When cooking pastila in the oven, activate the convection function. If your cooker does not have such an option, leave the oven door ajar, not forgetting to install a shield to prevent the plastic from which the taps are made from melting.
- To prevent the pastille from sticking to the baking sheet, it is covered with parchment paper, after having been lubricated with vegetable oil. A good choice would be a silicone mat, from which the marshall is easily removed, even if it is not oiled.
In general, the technology of making strawberry pastila is simple, but its types may differ slightly depending on the method and the selected recipe. To avoid mistakes will allow a careful study of the recommendations accompanying a specific recipe.

Composition (for 0, 45 kg):
- strawberries - 1, 5 kg;
- sugar - 150 g;
- vegetable oil (refined) - 80 ml.
Method of preparation:
- Reassemble the strawberries, immerse them in a bowl of clean water, wash them. Transfer to a colander, rinse with running water. Scatter on the towel.
- When the berry becomes dry, unscrew the sepals from it. Grind the berries to a state of mashed potatoes using a blender or other convenient way.
- Mix with sugar, leave for half an hour to dissolve. Stir once more.
- The drier tray intended for the preparation of pastes, grease abundantly with oil, using approximately half of the amount indicated in the recipe.
- Pour about half the apple sauce into the tray, level with a spoon. Keep the mash out of the center hole: this can damage the machine.
- If your appliance has several pallets that can be stacked on top of each other, take a second pallet, grease it and put the remaining puree on it. If the tray is one, the pastille will have to be prepared in several passes.
- Turn on the unit by selecting the mode intended for drying liquid products. Set the temperature to 50 degrees.
- At the specified temperature, the marshmallow will have to be dried for 24 hours, but its readiness is recommended to be periodically checked, as it can be dried before. A sign of readiness pastila - it does not stick to the hands and is easily separated from the pallet when prying with a spatula.
- Remove the pastille. Each layer is cut into 4-6 sectors, roll them into tubes. The tubes will have a shape slightly like a cone.
- Sterilize the jar, fill it with pastille, close tightly.
It is possible to store pastila not more than a year at a temperature not exceeding 20 degrees. Humidity in the room where there is a bank with it, should not be high.
Strawberry strawberries in the oven
The composition (0, 4 kg):
- strawberries - 1 kg;
- sugar - 0, 2 kg;
- lemon - 0, 5 pcs .;
- vegetable oil - 60 ml.
Method of preparation:
- Strawberries, sorting, washing and drying on a towel, grind to a state of mashed potatoes.
- In a strawberry puree, squeeze the juice from half a lemon, add sugar, mix well.
- Divide the strawberry puree into 2 pieces.
- Lay parchment on a baking sheet, brush with oil.
- Lay out one slice of strawberry puree, smooth it.
- Put in the oven. Dry at a temperature of 80-120 degrees for 6-8 hours. 3-4 hours after the start of preparation, begin to check the readiness of pastes.
- Cool the finished pastille. Using scissors or a pizza cutter, cut it into 5 cm wide strips along with the paper.
- Roll the pastille plates with rolls. Put in prepared jar.
It can be stored in the refrigerator or just in a cool place. Before serving, rolls must be rolled out, parchment removed, rolled back. You can cut into thin slices and eat like candy.
Strawberry strawberry in the refrigerator
Composition (for 0, 6 kg):
- strawberries - 100 g;
- water - 0, 2 l;
- chicken egg - 3 pcs. (only proteins);
- icing sugar - as needed;
- honey - 50 ml;
- lemon juice - 40 ml;
- sugar - 0, 2 kg;
- gelatin - 10 g.
Method of preparation:
- Gelatin Pour 100 ml of cool water, leave to swell.
- Heat slightly in a water bath to dissolve the gelatin.
- Chop strawberries to puree.
- Melt the honey to a liquid state.
- Strawberry puree mixed with sugar.
- Dissolve honey in the remaining water.
- Whip proteins with powdered sugar, taking 20 g of sweet product.
- Combine strawberry mass with protein. Stir.
- Add honey syrup, stir.
- Enter the gelatin.
- Fill in the resulting silicone mold.
- Refrigerate for at least 12 hours.
- Remove the pastille, cut into cubes. Dip in icing sugar.
Pastille according to this recipe is gentle and airy, but this product is not subject to long-term storage.
Pasta from strawberries can be cooked in the oven or electric drier. Such a delicacy can be made for the winter. Gentle turns out strawberry candy, cooked with egg whites and gelatin, but it can be stored for no more than three days and only in the refrigerator.
