The obligatory dish on the table on the eve of Christmas is a delicious and fragrant uzvar. In Ukrainian cuisine, it is the most common drink. In winter and springtime, when our body is in dire need of vitamins and trace elements, uzvar is especially useful.

For the preparation of the drink should observe the correct ratio of dried fruit, sugar and water. Thus, about 350 g of dried fruit, 0, 75 - 1 cup of sugar and 1 tbsp is taken for 6 glasses of water. a spoon of honey (and in old recipes honey completely replaces sugar). The classic blend of dried fruits for a pick-up consists of equal-sized dried apples, dried pears, and prunes with the addition of a small amount of raisins. Uzvar can be prepared from one (any) type of dried fruit and raisins. For flavor, add cinnamon (0, 5 teaspoons), lemon zest (1 teaspoon), cloves (3–4 buds), and 0, 5 teaspoons citric acid to the drink. Well-washed dried fruits are poured with warm water with sugar and honey dissolved in it and cooked for about 1-1,5 hours under the lid. Infused drink for 3-4 hours. A useful and tasty drink from dried fruits is also compote. Its main component - a mixture of dry fruits and berries - can be bought in the store, and you can cook yourself from several types of dried fruits. For 1 liter of compote, you need to take 100 g of dried fruit and 10 teaspoons of sugar. Dried fruits should be carefully picked, rinsed in warm water, divided into types, large fruits cut. The cooking process is individual for each type of dried fruit. So, apples and pears are first loaded into water with sugar and boiled for 20-30 minutes. Following prunes and dried apricots are added. 5 minutes before the end of cooking, add dried apricots and raisins. For more flavor at the end of cooking, you can add lemon zest (orange) or a little bit of any fruit juice. The finished drink is cooled and infused for several hours. At observance of such technology the maximum preservation of vitamins and microelements is provided. Compote from dried fruits will be useful even for small children. It can be given starting from 6 months, but up to 3 years is recommended to be used in diluted form.
