Our compatriots love fried vegetables: eggplants, zucchini, potatoes, and many others. However, they are not accustomed to frying cucumbers. Those who are not familiar with the traditions of oriental cuisine, it may seem that in this type of cucumbers are not tasty. But Asians prefer to eat them just like that. Having tried such a snack, most Europeans celebrate its pleasant savory taste, something resembling zucchini. Fried cucumbers for the winter can be cooked from both small and overgrown cucumbers. Recipes such canned food deserve the attention of housewives, even those of them who have never tried to cook cucumbers in this way.

Cooking Features

Cooking fried cucumbers for the winter is much easier than it may seem to an inexperienced chef. Fruits are washed, cut into strips or circles, degummed, sometimes pickled. Then it is fried in boiling oil from two sides, placed in jars, filled with hot oil and marinade, closed and sent to storage. For best results, consider a few points.

  • Snacks will look beautiful if you use vegetables of about the same size and cut them in the same way.
  • You can use not only young but overgrown cucumbers for cooking, but they should not be spoiled.
  • To prevent cucumbers from sticking to the pan during roasting, they are allowed to be breaded in flour.
  • Banks for fried cucumbers harvested for the winter must be sterilized. The lids are also sterilized by boiling. Plastic covers to close the workpiece is allowed only if it is stored in the refrigerator. For storage indoors, even cool, the banks must be rolled up with metal lids, ensuring tightness.

Storage conditions for roasted zucchini depend on the recipe used. They usually stand well even at room temperature. The shelf life of snacks can be up to 12 months.

Fried cucumbers with garlic for the winter

Composition (1 l):

  • cucumbers - 1-1, 2 kg;
  • table vinegar (9 percent) - 50 ml;
  • vegetable oil - 100-120 ml;
  • garlic - 3-4 cloves;
  • salt, fresh dill, parsley - to taste.

Method of preparation:

  • Wash cucumbers, cut them into circles about 1 cm thick. If you use heavily overgrown cucumbers, prefer a different form of cutting: cut the fruits along into 4 pieces with a knife, cut off the areas with large seeds, cut the remaining flesh into blocks. Pre-cucumbers with coarse rind can be peeled.
  • Pickle cucumbers, mix, leave for 5-10 minutes.
  • Heat the pan, pour the oil on it, put slices of cucumbers in one layer.
  • Fry over medium heat until golden brown on both sides.
  • Put fried cucumbers in pre-sterilized jars, tamp them down with a spoon.
  • Finely chop the greens and garlic with a knife, put into the butter left over after frying the cucumbers, fry for a couple of minutes, put them on the cucumbers, pour them with hot oil.
  • Cover the jars with the prepared lids.
  • At the bottom of the pan lay a towel, put a jar of cucumbers on it. Pour water into the pan so that its level reaches the shoulders of the cans and vinegar in the cans.
  • Put the pan on a slow fire. Sterilize the jars 10-20 minutes after the water boils. The time of sterilization depends on the size of the cans: half a liter will be enough for 10 minutes, a liter will take 20 minutes.
  • Take the jars out of the pan, roll them up, put them upside down. Cover with a blanket to create the effect of a steam bath - while cooling down in such conditions, the appetizer is subject to additional preservation.

After cooling, cans with snacks can be stored in a pantry or other place where you usually store supplies for the winter. If you plan to keep fried cucumbers in the refrigerator, you can refuse to sterilize snacks in cans.

Fried cucumbers with onions for the winter

The composition (1, 5 l):

  • cucumbers - 1, 2 kg;
  • onions - 0, 4 kg;
  • garlic - 3 cloves;
  • salt - 40 g;
  • sugar - 20 g;
  • table vinegar (9 percent) - 40 ml;
  • water - 1 l;
  • vegetable oil - 120 ml.

Method of preparation:

  • Cut cucumbers into halves or quarter-rings of rings that are not too thin (approximately 1 cm thick). Salted, using one tablespoon of salt.
  • Peel the onion, cut it into half rings or quarter rings.
  • Cut the garlic cloves in half.
  • At the bottom of a cauldron or other container in which you plan to prepare a snack, pour in the oil, heat it.
  • Throw in the garlic butter, fry it for 3-4 minutes. Remove the garlic.
  • Drain out the cucumber juice. Mix cucumbers with onions, shift to the cauldron.
  • Fry them on high heat, stirring so that the pieces of vegetables turn brown, but remain firm.
  • Transfer the roasted vegetables to prepared jars, fill with the remaining oil.
  • Boil water, dissolve the remaining salt and sugar in it, boil for 2-3 minutes.
  • Pour in vinegar, stir, remove from heat.
  • Fill the vegetables with hot marinade.
  • Roll up the jars, turn them over, wrap them up and leave to cool in a steam bath.

If you plan to keep a snack for more than 6 months, you need to sterilize it before spinning for 10-20 minutes. The canned food made according to this recipe can be stored in any cool room.

Fried cucumbers with tomatoes for the winter

The composition (1, 5 l):

  • cucumbers - 1 kg;
  • tomatoes - 0, 3 kg;
  • onions - 0, 2 kg;
  • garlic - 6-9 cloves;
  • chili pepper (optional) - to taste;
  • apple cider vinegar (6%) - 60 ml;
  • vegetable oil - 100 ml;
  • salt - to taste.

Method of preparation:

  • Cut cucumbers into circles or semicircles about 5 mm thick.
  • Onion cut halves of rings.
  • Cut the tomatoes into medium-sized slices.
  • At the bottom of the pan with non-stick coating, heat the oil, put cucumbers in it and fry them on medium heat for 20 minutes.
  • Add the onion; after 5 minutes, add the tomatoes. At this stage, you can add chopped pepper, salt. Reduce heat and sweat vegetables 10 minutes under the lid.
  • Pour in vinegar, stir, remove the pan from the heat.
  • Spread snacks in cans, roll them up. Leave to cool under the blanket upside down.

The savory snack made with this recipe is well worth it at room temperature.
