In Poland, various pickles are often served at the table, and many of their recipes are to our compatriots. Often for the winter they close the cucumbers in Polish. A feature of their preparation is the use of large quantities of garlic, sugar and vinegar. Fruit leaves and dill may be included in the composition; carrots and onions are often included in the recipe. There are several options for this savory snack, each of which is good in its own way.

Cooking Features

Cucumbers in Polish are made for the winter using different technologies, as they can be preserved whole or sliced, but there are some general principles for making this snack. Knowing them, even an inexperienced cook will cope with the task.

  • Only small cucumbers 8-10 cm long are suitable for pickling in Polish entirely. Larger fruits are recommended to be closed with cut ones. Medium-sized vegetables are cut into 4-8 parts, large - 8-12. The result is small bars.
  • To keep the cucumbers crispy and better washed, they are soaked for 2 hours in cold water. Exceed this time is not desirable that the vegetables did not begin to sour.
  • Garlic for cooking cucumbers in Polish is taken mature. It must be crushed with the flat side of the knife and finely chopped. Some recipes include grinding it with a special press or cutting into large plates.

Polish Cucumbers with Garlic and Carrots

Composition (2 liters):

  • cucumbers - 1, 2 kg;
  • carrots - 100 g;
  • garlic - 6 cloves;
  • dill - 2 umbrellas;
  • hot peppers - 2 cm;
  • black pepper peas - 8 pcs .;
  • allspice peas - 8 pcs .;
  • mustard seeds - 30 pcs .;
  • horseradish root - 4 g;
  • water - 0, 8 l;
  • salt - 40 g;
  • sugar - 60 g;
  • Table vinegar (9 percent) - 70 ml.

Method of preparation:

  • Wash cucumbers well, cut off their tips. Soak the fruit in cold water for 2 hours. Rinse again, pat dry.
  • Peel and chop the carrot. Cut it into circles about 5 mm thick.
  • Crush the garlic cloves with a knife, chop finely.
  • Finely chop the horseradish root with a knife.
  • Cut the hot pepper into thin ringlets.
  • Wash, dry the spices.
  • Sterilize the jars and lids to them.
  • At the bottom of dry cans, put dill, mustard, all kinds of pepper, pieces of horseradish and garlic, carrot mugs.
  • Fill the jars with prepared cucumbers, stacking them as tightly as possible.
  • Boil water, dissolve salt and sugar in it, boil for 5 minutes.
  • Pour in vinegar, stir, remove from heat.
  • Fill the cucumbers with hot marinade.
  • Cover the jars with lids.
  • At the bottom of the pan, lay a cloth, put cans of snacks on it.
  • Pour water into the pan so that its level reaches the hangers of the cans.
  • Put the pan on a slow fire. Bring water to a boil. Sterilize jars for 20 minutes if they are liter. If the jars are of a different size, adjust the sterilization time to suit this.
  • Carefully remove the cucumber jars from the pan. Twist them, turn. Cover with a blanket. An hour later, remove the blanket, but leave the banks upside down.

After the banks have cooled completely, you can return them to their normal position and put them in the closet. The cucumbers closed according to this recipe stand well at room temperature.

Polish cucumbers with onions and carrots

Composition (2 liters):

  • cucumbers - 1, 2 kg;
  • carrots - 50 g;
  • onions - 50 g;
  • garlic - 6 cloves;
  • black pepper peas - 10 pcs .;
  • allspice peas - 8 pcs .;
  • scape of horseradish - 10 cm;
  • water - 1 l;
  • sugar - 80 g;
  • salt - 30 g;
  • table vinegar (9 percent) - 80 ml.

Method of preparation:

  • Soak cucumbers for 2 hours soak in cold water. Rinse, let them dry.
  • Garlic, carrots and onions, peeled, cut into circles, spread on sterilized jars.
  • Wash, dry the spices, place them in cans.
  • Fill the jars with cucumbers.
  • Add a portion of salt and sugar in each jar, pour in the right amount of vinegar.
  • Boil water, pour it over the banks.
  • After covering the jars with lids, put them in a saucepan with warm water, having previously put a towel on the bottom.
  • Sterilize 15-30 minutes depending on the volume of cans.
  • After removing the jars from the pan, roll them up and leave to cool upside down.

Cucumbers in Polish have a slightly softer taste compared to the closed ones according to the previous recipe. They are stored as well.

Sliced ​​cucumbers in Polish

Composition (2 liters):

  • cucumbers - 2 kg;
  • garlic - 50 g;
  • sugar - 100 g;
  • refined vegetable oil - 100 ml;
  • salt - 40 g;
  • Table vinegar (9 percent) - 100 ml.

Method of preparation:

  • Cucumbers, soaked in cold water, rinse and dry, cut into small pieces, fold into a saucepan.
  • Crush garlic cloves with a press, add to cucumbers, mix. You can add a little grated carrot.
  • Pour sugar and salt, pour in oil, mix again. Put for 3-4 hours in a cool place.
  • Add vinegar, mix.
  • Spread cucumbers over prepared cans, tamping them with a spoon.
  • Pour the cucumbers with marinade at the bottom of the pan.
  • After covering the jars with lids, sterilize in a water bath for 20-40 minutes. Rolled, turn and leave to cool.

Despite the fact that the recipe for this salad of sliced ​​cucumbers is extremely simple, the appetizer is tasty and fragrant. Store it preferably in a cool place.

Cucumbers in Polish are prepared with a large amount of sugar and vinegar, because of which they acquire a pronounced sour-sweet taste. The presence of garlic and spices in the recipe makes the vegetables fragrant. Many culinary experts insist that cucumbers marinated in Polish are ideal for preparing Russian salad.
