Blackberries are very popular, they are wiped with sugar - it is harvested for the winter in this way most often because in this case it does not require heat treatment and, therefore, retains all its benefits.

For the preparation of blackberries, rubbed with sugar, as well as other blanks from it, you must follow some rules.
- A blackberry, unlike a number of other berries and fruits, does not ripen at home if it is picked up early. For this reason, it is necessary to collect blackberries when it is fully ripe.
- Care must be taken when collecting blackberries, being careful not to squeeze the berry, tearing it from the branch. The fact is that her skin is very thin and fragile, much softer than that of a raspberry, and it is easy to damage.
- If a large number of insects are found on a bush with blackberry, in particular, the so-called “stink bugs”, it is better to skip this bush.
- Before washing a blackberry, it should be sorted out, removing forest litter, sticky leaves, insects and spoiled berries.
- It is best to wash the blackberry under the shower, as a jet of water from the tap can damage the fragile berry.
- A mandatory step in preparing blackberries for conservation is the removal of stalks. “Tails” need to pull out, twisting them from the berries. At the same time, the berry itself should not be strongly squeezed.
- Prepared and washed berries should be dried before making “cold jam”.
- It is possible to lay out the ready blackberry wiped with sugar only in sterilized jars, the lids for which should also be sterilized.
The method of storage of the finished blackberry, mashed with sugar, depends on the selected recipe.
Classic recipe for blackberry mashed with sugar
Composition (for 2, 5 l):
- Blackberry (peeled) - 1 kg;
- sugar - 1, 75 kg.
Method of preparation:
- The prepared, i.e. enumerated, cleaned of “tails” and washed blackberries, dried, put in an enamel bowl. The bowl may be of another material, other than aluminum, which, upon oxidation, releases toxic substances.
- Pour the berry 1, 5 kg of sugar.
- Place the container with the berry in a cool place for 2 hours.
- After a specified time, mix the berry with sugar and leave for another hour.
- After this time, wipe the blackberry and sugar through a sieve, armed with a wooden pestle. You can just carefully knead them berry.
- Mix the resulting delicacy, spread on sterilized jars, pouring a large spoonful of sugar to the bottom of each jar.
- From above, pour another spoonful of granulated sugar into each jar.
- Close the cans with any lids (even plastic ones will do), pre-boiling and drying them. Store in a cool place.
Ideally, a blackberry wiped with sugar, if prepared according to a classic recipe, should be in the fridge in the winter. It will not spoil in the cellar, where the low temperature is kept. At room temperature “cold jam” made without sterilization cannot be stored.
Blackberries, rubbed with sugar - a recipe with sterilization
Composition (3 liters):
- Blackberry (peeled) - 2 kg;
- sugar - 1 kg.
Method of preparation:
- Pick the berry, rinse, peel off the “tails” and measure the desired amount.
- Wipe the blackberry through a sieve using “tolkushki” or a stainless steel spoon.
- Pour the berry puree in sugar and put it in a “water bath” to better separate the juice and dissolve the sugar.
- Stir and disperse in sterilized jars, cover with clean lids.
- Lay a kitchen towel on the bottom of a large pot. Put on it banks with blackberries. Pour water into the pan so that it reaches about the middle of the cans.
- Place the pot on a low heat and wait until it starts to boil in the pot. After this time, sterilize half-liter jars for 20 minutes. If the banks are 0, 25 liters, it is enough to sterilize them for 10 minutes, and for a liter time you need more - half an hour.
- Carefully remove the jars from the pan and roll up tightly. When they cool down, clean the winter in the pantry.
The advantages of blackberries wiped with sugar in this recipe include cost effectiveness (less sugar is needed) and the possibility of further storage at normal temperature. The disadvantage is the preservation of not all vitamins, since vitamin C, for example, is destroyed when heated.
