Irga, a berry that resembles black currant in appearance and blueberry in color, is becoming more and more popular among gardeners due to its beneficial properties that are not inferior to the healing qualities of currant, chokeberry and other berries. It contains a lot of vitamins A, B2, C (ascorbic acid in the irg even more than in apples), there are trace elements such as cobalt and copper. Growing irgu on their plots, gardeners do not miss the opportunity to prepare this berry for future use, and one of the most popular types of harvesting is compote from irgi for the winter. However, this berry has its own characteristics that should be considered when preparing a drink from it.
Cooking Features
The intricacies of the technology of making compote from shadberry are related to its composition.
- Irga has tannins and organic acids, but compared to other berries there are few of them. Therefore, it tastes sweet, without pronounced sourness, because of which it seems fresh. This can be fixed only in one way - by adding acids from other products. It may be some other berries, citrus, citric acid and even vinegar.
- You can make compote irgi with sterilization or without it. It will be possible to do without sterilization if you make the compote concentrated, that is, use less water, more berries and sugar. Before use, such a compote will have to be diluted. Sterilization allows you to make compote with less cost, it can also be diluted, but there is no great need for this.
- The safety of compote irgi completely depends on compliance with the technology, the recipe, as well as the careful selection of berries, their washing, sterilization of cans and lids. These points must be taken seriously.

Compote from shadberry without sterilization
Composition:
- shadberry - 1 kg;
- water - 3 l;
- sugar - 0, 4 kg;
- citric acid - 4 g.
Method of preparation:
- Pour the washed and sorted berries into a sterilized jar (3-liter), it can also be divided into 2-3 jars of smaller capacity.
- Boil the water and fill it with irgu. Leave the water in the jar for 5-7 minutes, then pour it into the pan, do not forget to measure its volume.
- Measure out the right amount of sugar and citric acid (this just depends on the volume of fluid drained from the can). Pour these ingredients in a pan with the extract of shadberry and boil for 5 minutes. Sugar during this time should dissolve completely.
- Pour boiling irgu into boiling syrup. Roll banks with a special key.
- Cover the jars with the compote with a blanket, leave to cool. After store for storage. The drink will not deteriorate at room temperature.
Compote for this recipe is obtained concentrated, before use, it must be diluted. It will be ready for use only after 3 months - only by this time it will be sufficiently infused, will acquire a beautiful dark color, characteristic of compote from irgi, rich taste.
Compote from rygi with orange and lemon: a recipe without sterilization
Composition:
- shave - 0, 75 kg;
- lemon - 100 g;
- orange - 100 g;
- sugar - 0, 35;
- water - 3 l.
Method of preparation:
- Wash, sort out irgu. Pour it into the bottom of a sterilized jar.
- Wash citrus fruits, cut them into thin semicircular slices, removing the bones.
- Place the orange and lemon slices on top of the berries.
- Boil the water and pour it into the jar.
- After 10 minutes, return the water to the pan, measure its quantity, add sugar.
- Boil water with sugar, boil for a few minutes, until sugar dissolves.
- Pour the syrup into the jar, close the jar with a sterilized lid (roll up).
Such compote will also be stored for a long time even at room temperature. Its highlight will be subtle citrus notes. It will pick up full taste in 2-3 months.
Compote from irgi instant cooking without sterilization
Composition:
- shadberry - 1 kg;
- sugar - 1, 5 st .;
- water - 2 l;
- citric acid - 6 g.
Method of preparation:
- After sorting and washing the irgu in running water, put it in a saucepan, add sugar, add citric acid, cover with water.
- On low heat, bring to a boil and cook for 30 minutes.
- Sterilize the jars and lids with which you will close them (only metal ones are suitable).
- Spill the compote over the cans, roll them up.
You can try this compote in a week. You can store it in the pantry.
Compote from shadberry for the winter with sterilization
Composition:
- shave - 0, 5 kg;
- water - 2, 5 l;
- sugar - up to 1 tbsp .;
- citric acid - 8 g.
Method of preparation:
- Spread clean berries in sterilized jars.
- Cook the syrup from 2, 5 l of water and 0, 6 kg of sugar. When the sugar is completely dissolved, add citric acid, stir and remove the saucepan from the heat.
- Fill the berries with syrup.
- Cover with a lid and place in a large-capacity pot, at the bottom of which you need to lay a piece of cloth.
- Pour water into the pan so that it does not reach the neck of cans 3-5 cm.
- Put it on a low fire and boil time after boiling water in the saucepan. Small half-liter jars sterilize enough 3 minutes, liter need 5 minutes already; if the jars are larger, sterilize them for 7-10 minutes.
- Take out the cans and roll up.
It is better to try the compote of shadberry, prepared for the winter without sterilization, after 2 months. It’s not worth worrying that it will disappear: if everything is done correctly, it will not deteriorate even at room temperature.
Compote from shadberry with currants
Composition:
- shave - 0, 7 kg;
- black currant - 0, 3 kg;
- water - 3 l;
- sugar - 1, 5 st .;
- citric acid - 3 g.
Method of preparation:
- Rinse and grab the berries, prepare the jars.
- Put black currants on the bottom of the cans, top with irgu.
- Pour in clean cool water, pour it into the pan, measuring the volume.
- Bring the water to a boil, add the right amount of sugar and citric acid, boil for a couple of minutes.
- Fill the berries with syrup, then sterilize the cans with compote. Need to focus on the time specified in the previous recipe.
- Remove the jars, close them with lids.
This is one of the most popular recipes, as the compote is obtained through it sweet and sour, not cloying, it is enjoyed by both adults and children.
The compote of shadberry can also be made with red currants, but in this case you need to take a little more sugar (50 g). Irrig is delicious, when it is poured not just with syrup, but with currant juice, in which sugar is diluted (400 g per liter), in this case citric acid is not needed.
